1 1/2 cups boiling water
1 cup whole wheat couscous
2 tablespoons raisins
2 tablespoons craisins
1 (19 ounce) can chickpeas
3 green onions, chopped
1 medium red bell pepper, diced
1/4 cup parsley, finely chopped
1/3 cup dried apricot, finely diced
1/2 cup lemon juice
1/4 cup vegetable oil or 1/4 cup olive oil
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
2 teaspoons hot pepper sauce
salt and pepper

Steps:

  • Put the cous cous into a large bowl and pour boiling water over top. Cover loosely with lid and let sit 10 minutes. Fluff with a fork.
  • Meanwhile, chop all your veggies and then add everything to the cous cous and stir well. Serve immediately or let sit in the fridge for a few hours. It tastes better the next day!

1 cup instant couscous
1 cup orange juice
1/2 cup water
1/4 cup olive oil
2 T. champagne vinegar
1/3 cup dried apricots, chopped
1 T. dried currants
1 T. golden raisins
2 tsp. grated fresh ginger
1 tsp. salt
1/2 cup red onion, chopped
2 T. toasted pine nuts

Steps:

  • Place the instant couscous in a medium bowl. Bring water, olive oil, orange juice and champagne vinegar to a boil in a small saucepan. Turn heat off then stir in apricot, currants, raisins, ginger and salt. Let fruit plump in the liquid for a few minutes then pour the mixture over the couscous without stirring. Let sit for 20 minutes, then fluff with a fork. Meanwhile, blanch and drain the red onion. Brighten red onion with a few drops of champagne vinegar then stir into the couscous mixture. Toss with pine nuts, adjust the salt and serve. If prepared in advance and refrigerated, let come to room temperature before serving.

1 teaspoon olive oil, or as needed
5 green onions, white parts only, chopped, or more to taste
4 cloves garlic, crushed
2 ¼ cups water
6 dates, pitted and chopped
½ (6 ounce) package sweetened dried cranberries (such as Craisins®)
½ cup golden raisins
¼ cup shelled peanuts
1 ½ cups pearl (Israeli) couscous
1 teaspoon chopped fresh cilantro, or more to taste
1 mango, peeled and chopped

Steps:

  • Heat olive oil in a skillet over medium heat; saute onion and garlic until fragrant, 1 to 2 minutes. Add water to onion mixture and bring to a boil.
  • Stir dates, cranberries, raisins, and peanuts into onion mixture and bring to a boil again. Add couscous and cilantro to dried fruit-onion mixture; bring to a boil. Reduce heat to low, cover skillet, and simmer until water is mostly absorbed, 10 to 15 minutes.
  • Stir mango into couscous mixture, return cover, and simmer until all the water is absorbed and couscous is tender, about 5 more minutes.

1 tablespoon cider vinegar
1/4 teaspoon salt

1 cup mixed fresh berries, such as blueberries and raspberries
2 tablespoons toasted sliced almonds

Steps:

  • 1. Cook couscous as per package directions.

1/2 cup KRAFT Mango Chipotle Vinaigrette Dressing, divided
2/3 cup couscous, uncooked
1/2 lb. boneless skinless chicken breasts, cooked, cut into bite-size pieces
1 orange, sectioned
1 cup grapes
1 apple, finely chopped
1/2 cup KRAFT Real Mayo Mayonnaise
8 lettuce leaves

Steps:

  • Bring water and 1/4 cup dressing to boil in small saucepan. Stir in couscous; cover. Remove from heat. Let stand 5 min. Fluff with fork.
  • Place couscous in large bowl. Add chicken, oranges, grapes and apples; mix lightly. Mix mayo and remaining dressing until blended. Add to couscous mixture; toss to coat.
  • Serve on lettuce leaves.
