1 lb cinnamon raisin bread, cubed
3/4 c dried cranberries
1 pt egg substitute
4 c skim milk
2 tsp vanilla extract
1 tsp ground cinnamon
1 pkg al fresco country style chicken breakfast sausage, sliced into rounds
confectioners' sugar

Steps:

  • 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.
  • 2. Beat the egg substitute, skim milk and vanilla extract and cinnamon in a medium bowl with a whisk.
  • 3. Pour the egg mixture over the bread cubes.
  • 4. Stir and press the bread cubes into the egg mixture to coat.
  • 5. Refrigerate for 1 hour or overnight.
  • 6. Bake at 350°F. for 45 minutes or until a knife inserted in the center comes out clean.
  • 7. Sprinkle with the confectioners' sugar. Serve with butter and syrup if desired.

1 large egg
1 tablespoon water
3/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 envelope onion soup mix
1 tablespoon butter, melted
1 package (4.7 ounces) broccoli cheddar rice and sauce mix

Steps:

  • Flatten chicken to 1/2-in. thickness. In a shallow bowl, beat egg and water. In another shallow bowl, combine the bread crumbs, Parmesan cheese and soup mix. Dip chicken in egg mixture, then coat with crumb mixture. Place in a greased 15x10x1-in. baking pan; drizzle with butter. , Bake, uncovered, at 350° for 20-25 minutes or until meat is no longer pink. Meanwhile, prepare rice according to package directions. Serve with chicken.

1/4 cup olive oil
2 1/2 lbs chicken, cut into small serving pieces
1 lb Italian sausage, cut in 1-inch pieces (sweet or hot or both)
1 small red bell pepper, julienned
2 garlic cloves, minced and crushed
6 hot cherry peppers, sliced (bottled in vinegar)
1 onion, sliced
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 teaspoon dried rosemary leaves, crushed
1 cup chicken broth (canned or fresh)
1/2 cup dry white wine (such as Pinot Grigio)
2 tablespoons all-purpose flour
1 -2 teaspoon fresh lemon juice
2 potatoes, peeled and diced small
3/4 lb fresh mushrooms, sliced

Steps:

  • In a skillet, heat oil. Add chicken and sausage in batches; brown on all sides. removing pieces to a plate as they brown.
  • Discard all but 2 tablespoons drippings from pan. To hot drippings, add the mushrooms, red bell peppers, sliced cherry peppers, onion, potatoes, and garlic; saute until tender.
  • Return chicken and sausage to skillet. Add salt, black pepper, the rosemary , the broth, the wine, and lemon juice. Bring to a boil; lower heat and simmer, covered, until chicken is tender, about 25 minutes.
  • Remove chicken and sausage from skillet; arrange on warm serving platter.
  • Skim fat from mixture in skillet.
  • In a small glass measure, mix flour with 1/4 cup water until blended. Stir into liquid in skillet. bring to boiling, stirring constantly; boil for 1 minute, stirring, until mixture thickens.
  • Spoon sauce over chicken and sausage.

Lots of chicken fried steak recipes out there but it's the ranch dressing mix ingredient in this recipe that makes for a great tasting flavor in the breading. I also like this recipe because it calls for cube steak; a cut of meat that is inexpensive yet I have trouble finding recipes on s variety of ways to prepare it. Great for those busy weeknight dinners when you have to have dinner on the table in a flash. I bread my meat the night before and refrigerate, to save some time.

2 (1 ounce) packages dry ranch dressing mix
salt and pepper, to season
3 cups buttermilk
1 egg, beaten
1 lb cube steak, cut into 4 piece servings
vegetable oil
1 cup chicken broth
1 (2 2/3 ounce) envelope country gravy mix

Steps:

  • In a large Ziploc bag, combine the flour, 1 dressing packet mix, salt and pepper.
  • In a shallow baking dish, combine 2 cups of buttermilk, beaten egg and 1 dressing packet mix; soak cube steaks in mixture.
  • While steaks are soaking, make the gravy: in a small pot, combine 1 cup buttermilk, broth and dry graving mix; simmer over medium heat and stir well and keep warm.
  • One by one, add each steak into Ziploc bag and shake to coat; dip steak back again in buttermilk mixture and recoat and shake in Ziploc bag.
  • In a deep skillet, heat 1/2 inch of oil to 350 degrees; fry steaks for about 4 minutes on each side, or until golden brown.
  • Drain on paper towels; serve with gravy and side dishes.

2 -3 lbs chicken pieces
1/2 cup seasoned flour
1 tablespoon butter
1 onion
2 carrots
1 parsnip
7 ounces mushrooms, drained
4 slices bacon
2 (10 3/4 ounce) cans campbells condensed chicken vegetable soup

Steps:

  • Coat the chicken with seasoned flour. I use Kentucky Kernel flour. Melt the butter in large fry pan and brown the chicken pieces. Transfer to a 9x13 baking dish.
  • Peel and slice the onion, chop parsnip, and carrot.
  • Chop the bacon and add to pan that cooked the chicken. If too greasy drain off some grease. Cook bacon for a few minutes on its own.
  • Add above vegetables to bacon and cook 5 minutes, making sure bacon is cooked. Add mushrooms at end of 5 minutes. I find they spit if you add with rest of vegetables.
  • Add soup and bring to a boil. Add T parsley.
  • Remove from heat and pour over chicken.
  • Cover and bake in 350 degree oven for 1 hour.

  • Preheat oven to 375°F Wash hands. In large bowl, combine chicken, onion soup mix, breadcrumbs, , egg and salt & pepper; mix well. In 8-inch square baking pan, form mixture into 8 x 4-inch loaf. Wash hands. Bake 35 to 40 minutes or until done (internal temp 170°F).
  • Remove from pan. Let stand 5 minutes.
  • For Gravy.
  • melt 2 tablespoons butter, whisk in flour 1 minute, then whisk in a splash of orange juice, Worcestershire and 1 cup chicken stock. Thicken for a few minutes and season with salt and pepper to taste. Top meatloaf with gravy and try with mash potatoes.

2 chicken breasts, split (about 1.5 lbs)
1/4 c. dry white wine or apple juice
1/4 c. chopped green onion
1/4 c. chopped parsley

Steps:

  • Preheat oven to 375 degrees. In heavy 2-qt saucepan melt butter. Meanwhile, on piece of wax paper combine bread crumbs, Parmesan cheese, basil, oregano, garlic salt and salt. Dip chicken breasts in melted butter then roll in crumbs to coat. Place skin side up on ungreased 9" sq. baking dish. Bake near center of 375 degree oven for 50 to 60 min or until golden brown and chicken is tender. Meanwhile, add wine, green onion and parsley to remaining melted butter (about 1/2 c.). 3/4 c milk
2 c chicken stock
salt & pepper to taste
2 can(s) mushroom stems & pieces, drained
2 boneless, skinless chicken breasts, cut into bite-size pieces, or a rotisserie chicken, skin removed and pulled
1 Tbsp olive oil
1/4 c fresh, grated parmesan cheese
2 Tbsp fresh, chopped parsley

Steps:

  • 1. Cook noodles according to package directions.

2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary

Steps:

  • Heat oven to 400 degrees. Coat 2 large flameproof roasting pans with non-stick cooking spray.
  • In a small bowl, combine the chopped garlic, rosemary, parsley, salt, pepper and oil.
  • In a large bowl, toss mushrooms, potatoes, carrots and onion with 2 tablespoons herb mixture. Spoon into roasting pans, dividing equally between the two.
  • Brush remaining herb mixture over chicken pieces. Place chicken, skin side up in pans and arrange the vegetables around them.

1 teaspoon minced garlic
2 tablespoons lemon juice
1 cup green onion
1 cup mushroom

Steps:

  • Mix milk and egg in small bowl.
  • Combine flour, cornflakes, salt and pepper in separate bowl.
  • Dip chicken breast in egg mixture and dredge in cornflakes mix.
  • Sautee chicken in ¼ cup of butter until browned on both sides and cooked through.
  • Take chicken out of pan and set aside, keeping warm.
  • Slice green onions in 1 inch lengths.
  • Slice mushrooms.
  • Melt remainder of butter (2 tbsp.).
  • Add garlic, green onions, lemon juice and mushrooms and cook for 4 minutes.
  • Return chicken to pan and spoon sauce over warmed chicken.

I've made this several times and had people rave about the chicken, we love it and I have had the book it came from for many years. Elena's secrets of Mexican cooking by Elena Zelayeta get it if you can find it!

6-8 chicken thighs, chicken breasts, legs
oil about 1c in skillet
flour enough to dredge chicken in, seasoned with salt, pepper and paprika
4-6 slice bacon cur in small pieces
3-4 slice sliced carrots
1 can(s) peeled green chiles, cut in strips
1 small bay leaf
1 small sprig of thyme
2 lemons thinly sliced
2 1/2 c v8 juice

Steps:

  • 1. Dredge each piece of chicken thoroughly with seasoned flour, fry in hot oil until golden.
  • 2. Remove chicken to large casserole or baking dish. Add bacon, carrots, bay leaf, chiles, thyme and any left over seasoned flour.
  • 3. Place lemon slices on top of chicken and pour V8 over everything. Cover casserole and bake at 350 for 1 hour. Will freeze well. I serve with steamed rice.

A co worker of my sister gave me this recipe, and have been making it for ages. There's something very homey and conforting about this dish. We like it with a side of mashed potatoes, the butter sauce is divine over the chicken. I made it with sweet potatoes that night because I had them left over, and it's good with them too!

4 medium chicken breasts, boneless skinless
2/3 c melted butter
breading:
1/2 c italian bread crumbs
2 Tbsp parmesean cheese, grated
1 tsp sweet basil, dried
1 tsp oregano, dried
1/4 tsp salt
1/2 tsp garlic salt
butter sauce:
1/4 c white wine, i like chardonnay, don't use cooking wine, use whatever you would drink.
1/4 c scallions, chopped, green parts too
1/4 c fresh parsley, chopped

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Melt butter, set aside.
  • 3. Combine bread crumbs, cheese, basil, orggano, garlic salt and salt.
  • 4. Dip chicken in melted butter, then roll in seasoned crumbs to coat well. Reserve melted butter.
  • 5. Place chicken in pan sprayed with no non stick spray.
  • 6. Bake for 50 minutes, or until tests done.
  • 7. Meanwhile, add wine, green onions, and parsley to reserved butter (about 1/2 cup).
  • 8. When chicken is golden brown, pour sauce over, and continue to cook for 5 more minutes.

6 (6 ounce) boneless skinless chicken breast halves
1 egg
1 tablespoon water
3/4 cup dry breadcrumbs
1/4 cup grated parmesan cheese
1 (1 1/4 ounce) envelope onion soup mix
1 tablespoon butter, melted
1 (4 2/3 ounce) package broccoli and cheese flavored rice mix, and sauce

Steps:

  • Flatten chicken to 1/2-in. thickness. In a shallow bowl, beat egg and water. In another shallow bowl, combine the bread crumbs, Parmesan cheese and soup mix. Dip chicken in egg mixture, then coat with crumb mixture. Place in a greased 15-in. x 10-in. x 1-in. baking pan; drizzle with butter.
  • Bake, uncovered, at 350° for 20-25 minutes or until juices run clear. Meanwhile, prepare rice according to package directions. Serve with chicken.
