1 1/2 lbs ham, center slices 1 ",thick
3 tablespoons maple syrup
1 tablespoon margarine
2 medium apples, peeled and chopped
1 tablespoon brown sugar

Steps:

  • Preheat broiler.
  • Score ham slices on both sides 1/8-inch thick to make a diamond pattern.
  • Brush ham with 1 tablespoon of the maple syrup.
  • Broil for 3 to 5 minutes per side or until lightly browned.
  • Meanwhile, in a large skillet, sauté the apples in the margarine for 10 minutes over medium heat.
  • Add the brown sugar and the remaining maple syrup.
  • Cook for 1 to 2 minutes.
  • Spoon over hot ham steaks.

1 lb ham steak
2 tablespoons butter
1 granny smith apple, peeled, cored, finely diced
1/4 teaspoon Dijon mustard
1/4 cup apple cider
1/4 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking.
  • Lightly saute, ham on both sides in butter for 3-4 minutes a side. Remove ham steak to a plate and keep warm.
  • Add diced apples and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated.
  • Slowly wisk in the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

2 teaspoons prepared mustard
1/2 teaspoon dry mustard
1/8 teaspoon ginger
1 (1-lb.) fully cooked center-cut ham steak (1/2 inch thick)

Steps:

  • Heat grill. In small saucepan, combine all ingredients except ham steak. Cook over low heat until jelly is melted, stirring occasionally.
  • When ready to grill, oil grill rack. Place ham steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush with jelly mixture. Cook 8 to 10 minutes or until thoroughly heated, turning and brushing once with jelly mixture. Serve with remaining jelly mixture.

This was the way my Grandma Ruth would make ham steaks for a nice lunch. They go well with potato salad and corn on the cob (I think they go well with any sides!).

2 large ham steaks (about 1/2 inch thick each)
1 cup apple jelly
2/3 cup prepared yellow mustard
1/4 teaspoon pepper

Steps:

  • Trim the fat around the edges of the ham steaks.
  • Melt the apple jelly in a large skillet over medium heat for about 1-2 minutes.
  • Add mustard and pepper; mix in well.
  • Place ham steaks into skillet and spoon sauce over them to cover.
  • Cook, uncovered, about 5 minutes per side, basting often.
  • Turn out ham to a serving platter.
  • Cut into serving size pieces as desired.
