COUNTRY HAM BREAKFAST CASSEROLE

Butter, for buttering the baking dish
6 slices country white bread, torn into 2-inch pieces
1 1/2 cups heavy cream
1 1/2 cups shredded sharp white Cheddar
1 1/2 cups cubed country ham
1 cup milk
1/2 cup chopped scallions
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
12 large eggs
1 teaspoon paprika
1/4 cup chopped chives, for garnish

Steps:

  • Butter a large baking dish and evenly spread out the torn bread to cover the bottom of the dish.
  • In a large bowl, beat to combine the heavy cream, cheese, ham, milk, scallions, salt, pepper and eggs. Pour the egg mixture over the bread and top with the paprika. Cover and refrigerate for at least 1 hour and up to overnight.
  • Remove the dish from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F.
  • Uncover the dish and bake until puffed, golden and cooked through, about 45 minutes. Let cool 5 minutes, sprinkle with the chives and serve.

2 cups frozen hash browns
2 lbs cooked and drained sausage (I sometimes use a bit of both.) or 2 lbs bacon (I sometimes use a bit of both.)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
12 eggs
2 cups milk
2 teaspoons salt
1 teaspoon fresh ground pepper
1 teaspoon dry mustard
12 ounces grated cheddar cheese

Steps:

  • Line a prepared 9 x 13 baking dish with frozen hash browns. Top evenly with cooked sausage (or bacon), onion, and green bell pepper.
  • In a separate dish, mix together eggs, milk, salt, pepper, and dry mustard. Pour this over meat and hash browns.
  • Top everything evenly with the grated cheddar cheese.
  • Refrigerate overnight.
  • Bake in a preheated 350 degree F oven for about 45 to 60 minutes (or until done and slightly brown).

1 lb cinnamon raisin bread, cubed
3/4 c dried cranberries
1 pt egg substitute
4 c skim milk
2 tsp vanilla extract
1 tsp ground cinnamon
1 pkg al fresco country style chicken breakfast sausage, sliced into rounds
confectioners' sugar

Steps:

  • 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.
  • 2. Beat the egg substitute, skim milk and vanilla extract and cinnamon in a medium bowl with a whisk.
  • 3. Pour the egg mixture over the bread cubes.
  • 4. Stir and press the bread cubes into the egg mixture to coat.
  • 5. Refrigerate for 1 hour or overnight.
  • 6. Bake at 350°F. for 45 minutes or until a knife inserted in the center comes out clean.
  • 7. Sprinkle with the confectioners' sugar. Serve with butter and syrup if desired.

A meaty, stick to your bones, simple dish that will please the whole family. A real meat and potatoes basic dish, a definite comfort food. I developed this on my own after not being fully satisfied from frozen pre-made skillet/scrambles. For this dish I recommend you break out two large skillets. The meal, in my opinion, almost tastes better the second time around. A definite meal ideal for leftovers.

1 (16 ounce) O'Brien potatoes
1 (1 lb) breakfast sausage
1 (8 ounce) ham, diced (or julienne works just as well)
2 bell peppers, chopped (color of your choice, I mix it up depending on the season)
1 (8 ounce) button mushrooms, sliced
12 large eggs
8 green onions, chopped
3 teaspoons salt (or to taste)
4 teaspoons black pepper (or to taste)
4 teaspoons vegetable oil
2 cups cheddar cheese, shredded
1 cup milk

Steps:

  • Get 2 large skillets / sauce pans.
  • In the first pan put enough oil to lubricate and brown the potatoes O'Brien on med to high heat, stirring occasionally (per package directions, yours may vary).
  • In the second pan brown the breakfast sausage.
  • In a bowl beat the eggs along with the milk and set aside.
  • Just as the sausage finishes browning, toss in the ham with it to put a little color on it (it's diced and pre-cooked generally, so this should go quick).
  • Right after you add the ham to the sausage, add the green onions, bell peppers, and mushrooms to the potatoes O'Brien in the first pan, and sauté the potatoes and veggies together for about 5 minutes.
  • Once the ham has browned slightly, drain the fat, and add the sausage and ham to the first pan with the potatoes and veggies and stir the mixture together, then stir occasionally.
  • After dumping the sausage and ham, put the pan back on the heat and use it to scramble your eggs (the grease from the sausage will do a wonderful job lubricating the pan and imparting a little flavor to the eggs).
  • Once the eggs are scrambled fold them into the first pan, do not over mix, or you will turn the texture to mush.
  • Top the mixture with cheese, and gently stir to mix in the cheese,.
  • Serve and enjoy!

1 tablespoon canola oil, plus more for the dish
1/2 pound bulk pork or turkey country sausage
1 onion, preferably Vidalia, chopped
1 red bell pepper, cored, seeded and chopped
1 yellow bell pepper, cored, seeded and chopped
2 cloves garlic, very finely chopped
2 baguettes, cubed
1/2 cup grated Parmigiano-Reggiano cheese (about 1 1/2 ounces)
6 large eggs
2 1/2 cups whole milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh flat-leaf parsley
Coarse salt and freshly ground black pepper

Steps:

  • Brush a large gratin dish with some of the oil.
  • To cook the sausage, in a large skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the sausage and cook until it begins to brown, 3 to 5 minutes. Add the onion and red and yellow bell peppers and saute until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
  • To assemble the strata, place half of the bread cubes in the prepared gratin dish and top with half of the sausage mixture. Sprinkle 1/4 cup of the grated cheese over the sausage mixture and top with the remaining bread cubes and sausage.
  • Whisk together the eggs, milk, sage, and parsley in a medium bowl. Season with salt and pepper. Pour the custard over the strata. Cover with plastic wrap and refrigerate for at least 3 hours and up to 12 hours.
  • Preheat the oven to 350°F. Let the chilled strata stand at room temperature for 20 minutes.
  • Bake the strata for 30 minutes. Remove from the oven and sprinkle with the remaining 1/4 cup cheese; continue baking until the strata is puffed and golden brown, an additional 20 to 25 minutes. 1 large anaheim pepper, sliced small
1 medium onion, diced

dash(es) paprika to taste

  • 1. How to Make it: Brown sausage in a large skillet; drain most of fat. In this skillet you will scramble your eggs so just set it aside.
  • 2. In a pot Mix gravy cook till thick or as directions on gravy, add sausage to gravy and keep warm. Heat another skillet and put some oil in, when hot Combine potatoes with Anaheim pepper,onions and spread evenly across the bottom of the skillet and cook till nice and brown. Whisk together eggs, water, milk, and butter; add mixture to skillet from cooking the sausage till eggs are fluffy and sprinkle with paprika, salt and pepper to taste. 3 large eggs
3 tablespoons shredded Swiss cheese
3 tablespoons shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pizza crusts on a baking sheet.
  • Bake in the preheated oven until lightly browned, about 5 minutes. Remove from oven and leave oven on.
  • Heat a large skillet over medium-high heat. Cook and stir sausage until browned, 5 to 7 minutes. Remove sausage with a slotted spoon; drain on a paper towel-lined plate.

That stuff they serve at most restaurants these days is usually out of a gallon can, or started from a mix in a bag. You can easily identify it because it has a slightly-gray undertone, kind of like cream of mushroom soup's color and texture. Don't get me wrong - I love cream of mushroom soup. But I wouldn't put it on a biscuit. Give this creamy, rich GRAVY a try. You'll get the hang of it quickly, and pretty soon, as your fame spreads, people will be hounding you to make it for them.

3/4 cup sausage drippings (maybe more) or 3/4 cup bacon grease, MELTED (maybe more)
1 1/2 cups all-purpose flour (maybe more)
3 (12 ounce) cans Carnation Evaporated Milk (Cream)
1 cup water (or none, see below)
3 cups whole milk, divided (if using 2% milk omit the 1 cup water above)
1 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)

Steps:

  • Pour the Evaporated Milk, water and 2 cups of the whole milk into a large bowl; set aside.
  • Heat meat drippings/grease until hot, but not smoking. Slowly stir in the flour a small amount at at time until thoroughly incorporated and no lumps remain - (use a large, long-handled stainless steel cooking SPOON to stir the mixture with). Cook over medium-heat for a few minutes, stirring as needed to keep from burning on bottom. The texture should be a medium-thin paste in thickness; add a bit more flour, or melted grease, if needed, until proper thickness is attained. Cook and stir a few minutes until the rue begins to turn a LIGHT tan color.
  • Pour the cream mixture into the rue, and, using a large WHISK, quickly stir until all the ingredients are blended and no lumps remain. Stir in the salt and pepper.
  • Cook over medium-high heat, stirring often with the stainless steel SPOON, until desired thickness is reached. You may need to add the remaining 1 cup of whole milk it it gets too thick. (Rembember, the gravy will continue to thicken a slight bit as it cools.) Remove from heat; place a piece of plastic wrap directly on top of the gravy surface to keep a skin from forming if not serving immediately.
  • Note: You may stir in some breakfast sausage, (I use Jimmy Dean Original), that has been cooked and crumbled if desired. Just add this at the very end right before you remove the pan from the heat.

6 slices bacon
6 cups frozen cubed hash brown potatoes
3/4 cup chopped green pepper
3/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
6 eggs
1/2 cup shredded cheddar cheese

Steps:

  • Cook bacon in large skillet until crisp.
  • Remove bacon, crumble, and set aside.
  • Drain drippings, reserving 2 tablespoons in skillet.
  • Add potatoes, green peppers, onion, salt, and pepper to drippings.
  • Cook and stir for 2 minutes.
  • Cover and cook, stirring occasionally, until potatoes are brown and tender (about 15 minutes).
  • Make 6 wells in potatoes and break one egg into each well.
  • Cover and cook on low heat 8-10 minutes, or until eggs are completely set.
  • Sprinkle with cheese and bacon.

My father's aunt used to make this gravy for breakfast every time we came to visit. It has been a staple in our family for as long as I can remember. I have tweaked it a little to suit my husband's taste but for me it's still the brown breakfast gravy I grew up with. Serve over warm biscuits.

6 slices bacon
5 tablespoons all-purpose flour
1 (12 fluid ounce) can evaporated milk
½ cup milk
2 tablespoons salted butter
1 tablespoon white sugar
½ teaspoon ground black pepper
salt to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • Add flour to the bacon grease and stir until a paste forms. Cook and stir until lightly browned, about 2 minutes. Gradually add evaporated milk and milk, stirring frequently. Add butter, sugar, pepper, and salt; continue to cook until thickened, about 5 minutes. Stir in crumbled bacon and serve.

12 ounces reduced-fat sausage (1 roll)
6 slices whole wheat bread, crust removed
12 large eggs
1 1/2 cups milk
1 (2 2/3 ounce) package country gravy mix (McCormick Brand)
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 325°F.
  • In a skillet, cook crumbled sausage in large skillet over medium heat until brown, stirring occasionally. Remove sausage and drain on paper towel.
  • Cut bread into 1-inch cubes. Place in 9 x 13 casserole dish. Sprinkle cheese and then sausage evenly on top.
  • In a blender, mix eggs, milk and Gravy Mix. (You could also use the Sausage Country Gravy mix instead) Pour mixture over bread, cheese and sausage.
  • Bake covered lightly with foil for 40 minutes. Remove foil and bake another 5 or 10 minutes or until knife inserted in the center comes out clean.
  • To make the night befoe: You can cover the dish and refrigerate overnight. In the morning, bake 50 minutes then 10.
  • Remove from oven and let stand 10 minutes before serving.
