COUNTRY STYLE NOODLES

2 tablespoons vegetable oil
1/2 clove fresh garlic
1 Thai chile, crushed
6 ounces chicken, shrimp or crab
1 clove pickled garlic plus 3 ounces pickled garlic juice
1 whole egg
1 handful rice noodles
1 tablespoon fish sauce
1 tablespoon palm sugar
2 ounces green onion, chopped
Lime wedge, for garnish

Steps:

  • Heat up vegetable oil in a wok until it is shimmering. Throw in fresh garlic and crushed Thai chile and cook until golden brown, about 30 seconds. Throw in the meat and cook, stirring continuously, until it is cooked medium-well, about 1 minute. Add the pickled garlic and then the egg; while the egg is still runny, add the noodles. Add the fish sauce followed by the palm sugar and cook, stirring, until the noodles are soft. Add the pickled garlic juice and cook, stirring, about 30 seconds maximum. Add green onion, allowing to cook for no more than 15 seconds. Remove from wok and place on a serving dish. Garnish with lime.

Sour Cream Noodle Bake image

1 1/4 pounds ground chuck
One 15-ounce can tomato sauce
1/2 teaspoon salt
Freshly ground black pepper
8 ounces egg noodles
1/2 cup sour cream
1 1/4 cups small curd cottage cheese
Pinch red pepper flakes
1/2 cup sliced green onions (less to taste)
1 cup grated sharp Cheddar
Crusty French bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
  • Cook the egg noodles until al dente. Drain and set aside.
  • In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
  • To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
  • Serve with crusty French bread.
  • To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
  • To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

KNODEL

This is an Austrian classic. 'Knodel' (you pronounce the "k") means 'dumpling' in German. My mother used to make this a lot when I was small because it's a good way to use up stale bread. It remains one of my fondest childhood taste memories. The quantities are approximate, because this is one of those recipes that isn't written down, so I had to follow her around the kitchen the last time she made it. Be sure the bread is stale. If it isn't, dry it in the oven after cutting it into cubes.

1 onion, chopped
2 tablespoons chopped fresh parsley
2 teaspoons butter
½ (1 pound) loaf white bread, toasted and cut into cubes
2 eggs, beaten
1 cup milk
salt and pepper to taste

Steps:

  • Butter one 9x11 inch baking dish.
  • In a skillet over medium heat, combine the onion, parsley and butter. Cook until onions begin to brown. Pour over bread cubes and toss well.
  • Whisk together the eggs, milk, salt and pepper. Pour over the bread and onion mixture; mix well and allow to stand for 1 hour.
  • Firmly press mixture into baking dish; tightly cover with aluminum foil.
  • Place baking dish on a rack in a larger pot with 3 inches of water. Cover pot and steam for 1 hour. Remove from pot and allow to cool for 10 minutes. Drizzle with melted butter before serving.

3/4 cup low fat cottage cheese
4 ounces whole wheat penne
1/4 cup skim milk
1 tablespoon margarine, melted
2 tablespoons chives, chopped
1/2 teaspoon garlic, minced
1 1/2 tablespoons breadcrumbs
paprika, for topping

Steps:

  • Cook the noodles al dente and cool to room temperature.
  • Place the cooked noodles into a bowl and toss with 1/2 cup of cottage cheese, milk, melted butter, chives, and garlic. Season this mixture with salt & pepper to taste.
  • Spray an 8 x 8 inch baking dish with nonstick cooking spray lightly on the bottom and sides.
  • Place the noodle mixture into this dish and top with the remaining cottage cheese spreading this evenly from end to end.
  • Top this evenly with breadcrumbs and top this with paprika for color. Spray this lightly with some nonstick spray.
  • Place this into a 400°F oven for 20 to 30 minutes.

1 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
2 quarts water
CHEESE SAUCE:
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1-1/2 cups whole milk
8 ounces Swiss cheese, diced
2 large eggs, well beaten

Steps:

  • In a small bowl, combine flour and salt. Make a well in center; add eggs. Stir together, forming a dough. , Turn dough onto a floured surface; knead 5-6 minutes. Divide dough in half. Roll each portion into a 12x9-in. rectangle. Dust both sides of dough with flour; roll up, jelly-roll style. Cut into 1/4-in. slices. Unroll noodles on paper towels; let dry for up to 2 hours., Preheat oven to 350°. In a Dutch oven, bring water to a rapid boil. Add noodles; cook 7-9 minutes or until tender., Meanwhile, in a small saucepan, melt butter. Stir in flour, salt and paprika until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Stir in eggs., Drain noodles; transfer to a greased 11x7-in. baking dish. Top with cheese sauce. Cover and bake 20 minutes. Uncover; bake 10-15 minutes longer or until bubbly., ,
