This cake is topped with fresh sliced apple and has a delicious home made taste. If you feel like a delicious, not too sweet coffee cake, then this is the one. Recipe came from a free succesful baking card sent to me in the mail.

185 g unsalted butter
185 g caster sugar
2 large eggs
250 g self raising flour
150 ml milk
1 teaspoon vanilla essence
1 large granny smith apple
1/2 lemon, juice of
icing sugar, to sift

Steps:

  • Preheat oven to 180 degrees celcius.
  • Grease and line a 20cm spring-form tin and sprinkle with flour to coat.
  • In a mixing bowl cream the butter and sugar until creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Sift in the flour and fold in lightly using a large metal spoon.
  • Mix the milk with the vanilla and stir into the cake mixture.
  • Spoon the mixture into the tin and level the top.
  • Peel, core and slice the apple and brush with lemon juice.
  • Arrange slices on the surface pressing down gently.
  • Bake for 1 hour or until a skewer comes out clean when inserted into the centre of the cake.
  • Cool the cake in the tin for about 10 minutes, before turning onto a wire rack to cool completely.
  • Dust the cake with icing sugar and serve.

1 cup vegetable oil
3 eggs
1 ½ cups white sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup buttermilk
1 ¼ teaspoons vanilla extract
1 cup prunes, pitted and chopped
1 ½ cups chopped pecans
¾ cup butter
¾ cup buttermilk
1 ½ teaspoons dark corn syrup
1 ½ cups white sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt or tube pan.
  • In a medium bowl, mix together flour, soda, salt, allspice, cinnamon and nutmeg. Set aside.
  • In a large bowl, combine oil, eggs and 1 1/2 cup sugar. Beat 2 minutes at medium speed.
  • Add flour mixture, alternating with 1 cup buttermilk, starting and ending with dry ingredients. beat well after each addition. Stir in prunes, pecans and 1 1/4 teaspoon vanilla.
  • Pour into greased and floured bundt or tube pan and bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick comes out clean when inserted in the center.
  • Make large, deep holes in hot cake and pour topping in holes and on top of cake a little at a time, giving it time to soak in.
  • For the topping: In saucepan, over medium heat, cook butter, 3/4 cup buttermilk, corn syrup and 1 1/2 cup sugar until sugar and butter melt. Remove from heat and add 2 teaspoons vanilla and stir.

12 prunes
4 tablespoons butter
1/2 cup powdered milk
1 egg
3/4 cup apple juice
1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

Steps:

  • add juice and prunes boil.
  • Chop prunes up finely.
  • Cream powdered milk with butter.
  • Add egg.
  • Add flour, baking powder, baking soda, cinnamon, and salt.

4 c peeled and shredded apples (any kind sweet or tart depending on your taste) I leave the skin on my apples
2 c sugar
2 c all-purpose flour
1 1/2 tsp baking soda
3 tsp cinnamon
1 tsp salt
2 eggs
3/4 c oil
1c pecans chopped (optional)
(options) powder sugar to sprinkle on top, caramel to drizzle, ice cream, Cool Whip

Steps:

  • 1. Stir shredded apples and sugar in a large bowl.
  • 2. Add dry ingredients (flour, baking soda, cinnamon, and salt).
  • 3. Stir in the egg mixed with the oil into a measuring cup.
  • 4. Pour into the dry ingredients.
  • 5. Mix until thoroughly moist (do not overmix).
  • 6. Stir in nuts.
  • 7. Pour into a 9X13 pan sprayed with butter flavor no-stick spray.
  • 8. Bake at 350 for 50 minutes.
  • 9. It springs when pressed when done.

This cake is truly delicious and has been a firm favourite in our family for years. Great for special occasions when you have people over. It keeps well for at least a week in an airtight tin.

125 g butter
170 g sugar
2 eggs
100 g almonds, ground
80 g self-raising flour
125 ml whole milk
1 teaspoon vanilla essence
1/2 teaspoon baking powder
12 soft dessert prunes
100 g walnuts, chopped
5 tablespoons sugar
2 green apples, cored and peeled
25 g butter, cut into small cubes
1 teaspoon cinnamon

Steps:

  • Preheat oven to 375F / 190°C.
  • Cream together 125g butter and 170g sugar.
  • Add well beaten aggs, almonds, self-raising flour, milk, vanilla and baking powder.
  • Alternatively, place all these ingredients in a food processor for 10 seconds. Run a spatula around the bowl and process for a further 5 seconds.
  • Either way, place the batter into a well greased 23 cm torte tin.
  • Stone prunes and coarsely chop and place on batter.
  • Mix walnuts with 2T sugar and spoon over the batter.
  • Thinly slice apples and place over the top of the walnuts.
  • Bake the cake for 40 minutes.
  • Carefully remove the cake from the oven by pulling out the rack it is sitting on.
  • Quickly sprinkle over the apples 3T sugar, cubed butter and cinnamon.
  • Slide the cake back into the oven and bake for a further 15 to 20 minutes or until a skewer comes out clean from the centre of the cake.
  • Serve the cake with whipped cream.

2 ½ cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
2 cups granulated sugar
3 eggs
2 tablespoons butter
1 cup Sunsweet® Amaz!n™ Prune Juice
1 tablespoon baking soda
½ cup butter
1 cup granulated sugar
1 tablespoon white corn syrup or honey
½ cup whipping cream
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F. Line a 9x13-inch baking pan with parchment paper.
  • Add prunes to a saucepan; cover with water and bring to a boil. Remove from heat and let stand for 10 minutes. Strain any excess water. Mash prunes and set aside. In a bowl, stir flour with cinnamon, cloves and nutmeg; set aside. In a separate bowl, beat sugar with eggs and 2 tablespoons butter until blended. In a measuring cup, mix prune juice with 1 tablespoon baking soda. Stir into mixture alternating with flour mixture. Stir in mashed prunes. Transfer to prepared baking pan.

  • Sauce: Add 1/2 cup butter, sugar, syrup, cream and 1/2 teaspoon baking soda to a small saucepan set over medium heat; bring to a boil. Boil for 2 minutes. Cut cake and serve with warm sauce.
