COTTAGE CHEESE SURPRISE (SOUTH BEACH - PHASE 1)
This is a variation on "Lime Jello Marshmallow Cottage Cheese Surprise" but much more low-calorie and a good alternative to the ricotta salads offered in South Beach - Phase 1 - and it contains no fruit.

- Fold in the Cool Whip.
- Stir in the nuts.

Not bad for a diet cheesecake. Satisfies that sweet tooth. Phase 2 on The South Beach Diet. The 20 minutes prep times includes the 15 minutes cool-down phase before adding the sour cream topping.

- Beat ingredients for'cake' until smooth.
- Pour into a 9" greased square pan.
- Bake at 350 degrees for 35 minutes.
- Remove from oven for 15 minutes-- leave oven on.
- Meanwhile-- mix topping ingredients together and mix well.
- After the 15 minutes has elapsed, pour topping over the cheesecake and spread evenly, and bake for 10 minutes more.
- Chill.
SOUTH BEACH OATMEAL PANCAKE
This big pancake can be eaten during Phase II of the diet and is very filling. You can use a low sugar syrup if you would like; I prefer it with just a few spritzes of trans free margarine spray and a few sprinkles of Splenda. This recipe is courtesy of The South Beach Diet book.

- In a blender or a food processor, blend together all ingredients until smooth.
- Spray a medium sized skillet with cooking spray and set heat to medium.
- Add the pancake batter to skillet and cook until sides are lightly browned.
- Top with a low sugar syrup, trans free butter and/or a few sprinkles of a sugar substitute and serve with fresh fruit; blueberries or strawberries are allowed and would go nicely.

- Preheat oven to 375. Spray glass or non-stick metal casserole dish with nonstick spray or olive oil. Dice meat and grate cheese. Saute any veggies you're using in a small amount of olive oil for 3-5 minutes (depending on what type of vegetable.) Harder vegetables like broccoli should be briefly boiled and drained well. In bottom of casserole dish layer meat, veggies, green onions and cheese. Mix eggs with Spike Seasoning, salt, and pepper until whites and yolks are well combined. (Edit: eggs should be well combined, but not beaten together like for egg whites, just mixed with a fork. Add cottage cheese to egg mixture if using.) Pour eggs over meat/cheese mixture, then stir gently with a fork so that all the ingredients are evenly distributed in the eggs. Bake until eggs are firmly set and top is lightly browned: ~30-35 minutes for 9X13 size pan

- Warm sauce in a small saucepan.
- Mix together pignoli, Italian seasoning and parmesan on a plate. Coat both sides of cutlet with mixture, pressing to adhere.
- Turn oven to a low broil.
- Heat oil in a nonstick pan and cook until cutlets approximately 4 minutes per side.
- Place cutlets in pan and top with sauce and mozzarella. Broil until cheese just melts.

- Preheat oven to 375°F.
- Lightly coat 4 (4 ounce) ramekins with cooking spray.
- In a large bowl, whisk together ricotta, egg yolks, 1 TBSP of sugar substitute, lemon zest, lemon extract and vanilla extracts.
- In another small bowl with an electric mixer at high speed, beat egg whites until soft peaks form; approximately 2-3 minutes. Gradually add remaining 2 TBSP sugar substitute and continue to beat until stiff peaks form.
- Gently fold egg whites into ricotta mixture; just until combined.
- Spoon ricotta mixture into ramekins. Bake until souffles have risen, are set and lightly browned; approximately 15 minutes.
- Serve immediately.
