DILLY PESTO COTTAGE CHEESE DIP
I found the Pesto Cottage Cheese dip on Facebook but didn't have every ingredient on hand so I decided to tweek the recipe and make it my own and this is the delicious result. My sons do not like cottage cheese at all but my oldest son tried it and actually enjoyed it. I love this dip with my pita chips. I don't have to throw away the cottage cheese either when I forget that it is in my fridge. I will be making this one many times over. enjoy!

- Place all your ingredients in a bowl, mix well. Serve right away or you can chill it for later use. I prefer to chill overnight and then enjoy it.

This pesto is stunning when added to gnocchi and all types of pasta, as well as grilled chicken and fish. So simple and full of summer flavours! - In a small frying pan over a medium heat, lightly toast the pine nuts until they're just beginning to turn golden, then tip out into a food processor. Add the garlic, sorrel, parsley and a pinch of salt to the pine nuts, then pulse a few times until roughly chopped and combined. Slowly pour in the olive oil, pulsing as you go, until the pesto is the consistency you like.
- Spoon the pesto mixture into a bowl and stir in the goat's cheese. The pesto will keep, sealed in a jar with a slick of olive oil over the top, for about a week.

- Stir the cheese and pesto in a small bowl. Season with the black pepper. Top with the basil and pine nuts. Serve with the wheat crisps or crackers of your choice for dipping.

- Put the garlic into a food processor and process until finely chopped. Scrape down sides of the bowl.
- Add the basil. Process until finely chopped and scrape down sides of the bowl.
- Add cottage cheese, yogurt, olive oil, and parmesan. Process until smooth and cream.
- If using as a pasta sauce, dilute with a spoonful of the pasta cooking water.
