I found the Pesto Cottage Cheese dip on Facebook but didn't have every ingredient on hand so I decided to tweek the recipe and make it my own and this is the delicious result. My sons do not like cottage cheese at all but my oldest son tried it and actually enjoyed it. I love this dip with my pita chips. I don't have to throw away the cottage cheese either when I forget that it is in my fridge. I will be making this one many times over. enjoy!

1 - 24 0z. container cottage cheese,any brand
- 1/2 cup of prepared pesto sauce from a 8.1 0z jar
- dash of black pepper
1 tablespoon(s) fresh basil or ground basil(i used ground basil,its what i had on hand)
- 1/4th tsp. dill
1 tablespoon(s) salad pizazz-cucmber dill gusto cucumber dill seasoned pumpkin seeds,sunflower nuts and sliced almonds, this gives the dip a great crunch to it and a nice zip to it too. i had no pine nuts on hand so this is what i used.
- *tips-use fresh basil and pine nuts if you have them on hand. i used what i had and i think this dip is super delicious! use cut up vegetables,any flavor crackers or chips. i love this dip with pita chips!

Steps:

  • Place all your ingredients in a bowl, mix well. Serve right away or you can chill it for later use. I prefer to chill overnight and then enjoy it.
  • It is so delicious, enjoy!

Tangy, freshly made pesto with sorrel leaves and goat's cheese. A WONDERFUL recipe from River Cottage and Hugh Fearnley-Whittingstall, and one that I use regularly! This pesto is stunning when added to gnocchi and all types of pasta, as well as grilled chicken and fish. So simple and full of summer flavours! It also makes a great gift for a dinner party host/ess, or for a foodie friend; put the pesto in an attractive jar with a recipe suggestion label and a wooden spoon.

2 tablespoons pine nuts
1 small garlic clove, peeled and crushed
young sorrel (1-2 handfuls, about 45g in weight)
flat leaf parsley, stalks removed (1 small bunch)
sea salt
6 tablespoons extra virgin olive oil
30 g hard goat's cheese, grated

Steps:

  • In a small frying pan over a medium heat, lightly toast the pine nuts until they're just beginning to turn golden, then tip out into a food processor. Add the garlic, sorrel, parsley and a pinch of salt to the pine nuts, then pulse a few times until roughly chopped and combined. Slowly pour in the olive oil, pulsing as you go, until the pesto is the consistency you like.
  • Spoon the pesto mixture into a bowl and stir in the goat's cheese. The pesto will keep, sealed in a jar with a slick of olive oil over the top, for about a week.

I tried this recipe by Pepperidge Farms and Bethenny Frankel, Celebrity Natural Food Chef. Serve this dip with toasted wheat crisps, this savory dip combines cottage cheese and store bought pesto, accented with fresh basil and toasted pine nuts to make a scrumptious appetizer.

1/2 cup(s) prepared pesto sauce
- freshly ground pepper, to taste
1 tablespoon(s) chopped fresh basil leaves
1 tablespoon(s) pine nuts, toasted
96 - pepperidge farm baked naturals toasted wheat crisps

Steps:

  • Stir the cheese and pesto in a small bowl. Season with the black pepper. Top with the basil and pine nuts. Serve with the wheat crisps or crackers of your choice for dipping.

2 garlic cloves
1/2 cup fresh basil
1 cup nonfat cottage cheese
1 tablespoon nonfat yogurt
1 tablespoon extra virgin olive oil
1/4 cup parmesan cheese, freshly grated

Steps:

  • Put the garlic into a food processor and process until finely chopped. Scrape down sides of the bowl.
  • Add the basil. Process until finely chopped and scrape down sides of the bowl.
  • Add cottage cheese, yogurt, olive oil, and parmesan. Process until smooth and cream.
  • If using as a pasta sauce, dilute with a spoonful of the pasta cooking water.
