LIME JELLO SALAD WITH COTTAGE CHEESE



Lime Jello Salad with Cottage Cheese image

Tart and zesty with a sweet twist this easy Jello salad recipe is refreshing and delicious.

3 ounce package lime gelatin
1/4 cup granulated sugar (optional)
3/4 cup hot water
8 ounces crushed pineapple (= 1 small can, undrained)
1 cup whipped topping (defrosted)
1 cup cottage cheese

Steps:

  • Dissolve gelatin in sugar and hot water.
  • Stir in pineapple and chill until mixture begins to stiffen, but is not firm.
  • Whip lime mixture using an electric mixer. Add cottage cheese and beat all together.
  • Fold in whipped topping.
  • Pour in a flat pan, we use a square 8 x 8 or 9 x 9' pan. Chill.

1 package (3 ounces) gelatin flavor of your choice
1 can (11 ounces) mandarin oranges, drained
1 cup unsweetened crushed pineapple, drained
1/2 cup chopped pecans, optional
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, combine cottage cheese and gelatin powder. Stir in the oranges, pineapple and pecans if desired. Just before serving, fold in the whipped topping.

1/2 teaspoon(s) salt
1 1/2 cup(s) boiling water
1 cup(s) large curd cottage cheese
1 tablespoon(s) lemon juice
1 cup(s) coarsely grated carrots
1/2 cup(s) chopped pecans
1 package(s) jell-o orange or lime

Steps:

  • Dissolve jell-o gelatin and salt in boiling water.
  • Add cottage cheese and lemon juice chill until very thick.
  • Fold in grated carrots and pecans.
  • Pour into 1 quart mold chill until firm unmold.
  • Garnish with additional cottage cheese if desired.
  • Makes about 3 cups.

1-1/2 cups boiling water
1 pkg. (6 oz.) JELL-O Lime Flavor Gelatin
1 can (8 oz.) crushed pineapple in juice, undrained
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 cup thawed COOL WHIP Whipped Topping
1/2 cup chopped walnuts
1/4 cup chopped maraschino cherries

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 3 min. until completely dissolved. Stir in pineapple. Refrigerate 1-1/4 hours or until slightly thickened.
  • Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk. Gradually add to gelatin, mixing well after each addition. Stir in nuts and cherries. Pour into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold before serving.

Steps:

  • Pour milk into a small pot; bring to a boil. Add vinegar and remove from heat. Stir mixture slowly until curds form, 1 to 2 minutes.
  • Pour mixture into a colander lined with cheesecloth. Allow liquid whey to drain off as curds cool, about 15 minutes. Season curds with salt.
