POLISH NOODLES (COTTAGE CHEESE AND NOODLES)



Polish Noodles (Cottage Cheese and Noodles) image

This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

3/4 cup low fat cottage cheese
4 ounces whole wheat penne
1/4 cup skim milk
1 tablespoon margarine, melted
2 tablespoons chives, chopped
1/2 teaspoon garlic, minced
1 1/2 tablespoons breadcrumbs
paprika, for topping

Steps:

  • Cook the noodles al dente and cool to room temperature.
  • Place the cooked noodles into a bowl and toss with 1/2 cup of cottage cheese, milk, melted butter, chives, and garlic. Season this mixture with salt & pepper to taste.
  • Spray an 8 x 8 inch baking dish with nonstick cooking spray lightly on the bottom and sides.
  • Place the noodle mixture into this dish and top with the remaining cottage cheese spreading this evenly from end to end.
  • Top this evenly with breadcrumbs and top this with paprika for color. Spray this lightly with some nonstick spray.
  • Place this into a 400°F oven for 20 to 30 minutes.

This is a Hungarian recipe that uses DRY cottage cheese. My mother would make this frequently as I grew up. Tastes great when eaten at a-little-warmer than room temperature.

12 ounces wide egg noodles, cooked
3 -4 slices bacon, diced
3/4 cup sour cream
12 ounces dry curd cottage cheese
1 1/2 teaspoons salt (to taste)
1/2 teaspoon pepper
dill (to garnish, fresh or dried)

Steps:

  • Using a large pan, cook the diced bacon until crisp; remove bacon from pan and keep warm.
  • On low heat, stir the sour cream into the bacon fat.
  • To the pan, add the noodles, bacon, dry cottage cheese, salt and pepper. Combine gently.
  • On low heat, gently fold the contents until heated through. Adjust seasonings.
  • With lid on pan, let set for half hour before serving. They taste best if not too hot.
  • Garnish with more sour cream and dill if desired.

1/4 lb Hungarian paprika (rind removed) or 1/4 lb garlic bacon, cut into small dice (rind removed)
salt
1 lb dried noodles (medium egg noodles, tagliatelle, or fettuccine)
1/2 lb cottage cheese
fresh ground black pepper

Steps:

  • In a skillet, fry the bacon over moderate heat till crisp, drain on paper towels, and keep the drippings hot.
  • Bring a large kettle of salted water to a rolling boil, add the noodles, return to the boil, and cook till tender, 10 to 12 minutes. Drain the noodles well, then add the bacon drippings, cottage cheese, and pepper and toss over very low heat to warm the cheese. Add the bacon, toss again, and serve immediately.

Hungarian Noodles with Cabbage and Cottage Cheese image

1 pound linguine, fettucine, or other long flat pasta
1 1/2 cups shredded cabbage
1 tablespoon olive oil
6 ounces cottage cheese
1/2 teaspoon cracked black pepper
salt to taste
1 tablespoon sweet Hungarian paprika

Steps:

  • 1. Fill a large pot with water, and bring to a boil over high heat. Drop in the pasta, and cook according to package directions. 2. Combine the cabbage and olive oil in a large skillet, and cook uncovered over medium heat for about 10 minutes, or until the cabbage is soft and just beginning to brown. Add the cottage cheese, pepper, and salt to taste, and stir to mix. 3. Drain the pasta and transfer to a pre-warmed serving bowl. Add the cabbage mixture, and toss gently to combine. Sprinkle generously with paprika and serve immediately.

10 slices side bacon
2 medium yellow cooking onions
2 c low fat cottage cheese
300 g medium wide egg noodles
sslt and pepper to taste

Steps:

  • 1. Cook pasta according to directions and perhaps you may want to lessen the amount of pasta.
  • 2. cut bacon in 1/4 inches more or less and fry til crispy leave a little grease in pan and fry the onions til golden....combine the bacon and onions together and leave in pan with heat OFF
  • 3. Drain the pasta..warm up the bacon and onion mix and add it to the pasta..add the cottage cheese and serve when ready as the cheese will cool down your meal when you add the cottage cheese.

this is a dish that my father always makes. It is NOT for someone on a diet but when you dont have to worry about your weight give it a try. I used to always eat it while pregnant. I havent posted a picture yet because I'm on a diet! lol plus its not the "perrrtiest" dish out there but tastes awesome!

1 16 oz container of cottage cheese
3/4 bag of egg noodles
1/2 stick butter
2 eggs
salt and pepper to taste

Steps:

  • 1. Boil egg noodles according to directions. Drain (obviously) ;)
  • 2. Melt butter in medium frying pan and add noodles on top. Do not stir.
  • 3. Mix cottage cheese, eggs, salt and pepper in bowl. Pour mixture directly on top of noodles.
  • 4. Cook on low, covered, for 20 minutes or until the bottom is crunchy.
  • 5. Super easy. Its not a fancy dish but one that is loved by my siblings and I. Enjoy!

Mom always made this when we had fish or just in place of potatoe's. It's quick and easy and so good. My kid's love it.

1 package(s) bag of wide noodle's
1 large onion chopped
1 large container cottage cheese
1 stick(s) margerine
- salt and pepper

Steps:

  • Cook noodles as directed on bag. rinse and drain.
  • In skillet melt margerine, add onions, and noodle's. medium- high heat. Fry until they get a little crispy, turning occasionally. You can add more margerine if you like after awhile of frying.
  • When noodle's are to the crispness you like, mix in the whole container cottage cheese. Fry a short time longer. salt and pepper to your taste.
