Cornflake-Crusted Chicken with Red Cabbage Slaw and Rutabaga Potatoes image

Moist pieces of chicken derive their crunchy coating from cornflakes in this clever oven-fried variation on an all-American favorite. Rutabaga, a member of the cabbage family, adds to the flavor of mashed potatoes and complements the tangy red cabbage slaw.

Four 5-ounce boneless, skinless chicken breast halves, trimmed
1 tablespoon cornstarch
2 large egg whites, lightly beaten
2 cups unsweetened cornflakes, chopped (not ground) in food processor
2 tablespoons extra-virgin olive oil
1 large (about 8 ounces) Idaho potato, peeled and cut into 1-inch cubes
1/2 medium rutabaga, peeled and cut into 3/4-inch cubes
1 teaspoon coarse salt, plus more for cooking water
2 tablespoons milk, plus 1/2 cup low-fat (1 percent)
3/4 teaspoon freshly ground pepper
1 small red cabbage, cored and very thinly sliced
1 carrot, peeled and coarsely grated
2 tablespoons minced fresh chives
2 teaspoons distilled white vinegar
1/2 teaspoon sugar

Steps:

  • Place potato and rutabaga in a medium saucepan with salted water to cover by 1 inch. Bring to a boil; reduce heat, and simmer until vegetables are tender, about 25 minutes. Drain, and force through a food mill or potato ricer. Stir in 2 tablespoons milk and 1/4 teaspoon each salt and pepper. Set aside; keep warm, or reheat just before serving.
  • Meanwhile, combine cabbage, carrot, chives, vinegar, sugar, 1/4 teaspoon each salt and pepper, and remaining 1/2 cup milk. Toss well, and set aside.
  • Preheat oven to 450 degrees. Place chicken in a medium bowl; sprinkle with cornstarch and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Dip chicken in egg whites, and dredge in cornflakes, turning to completely coat. Heat a 12-inch cast-iron skillet over medium-high heat; add oil, swirling the pan to coat evenly. Add chicken, and cook until crisp and golden underneath, 1 to 2 minutes. Turn over; transfer pan to oven, and cook until chicken is firm to the touch, about 7 minutes. Transfer to cutting board; slice diagonally into thin strips, if desired.
  • Place a mound of slaw on each serving plate, and top with chicken. Serve rutabaga-potato mixture on the side.

6 medium potatoes, peeled
1/3 cup melted butter
1 teaspoon salt
1 cup crushed corn flakes or 1 cup Rice Krispies

Steps:

  • Pre heat oven to 400°F.
  • Cut potatoes into 4 wedges.
  • Dip them in the melted butter and sprinkle with salt.
  • Roll in crumbs and place on greased baking sheet.
  • Bake for 40 minutes.
  • Serve hot.

Simple and totally easy to prepare. Works well as a quick side for meatloaf, hamburgers, or Salisbury Steak, or just plain steak!

4 medium baking potatoes, pared (left whole)
2 tablespoons butter, melted (use vegetable margarine if vegan)
1/2 cup corn flake crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sour cream (or vegan sour cream)
1 pinch chives, chopped

Steps:

  • Heat oven to 375 degrees.
  • Mix together cornflake crumbs and seasonings in a medium bowl/ or medium Ziploc bag.
  • Brush whole potatoes with butter.
  • Coat potatoes with cornflake crumb mixture.
  • Arrange in an un-greased baking pan, 9X9X2 inches.
  • Bake uncovered for 1 to 1 1/4 hours or until potatoes are tender.
  • Serve with a dollop of sour cream and chives, if desired.

My Sister-in- Law gave me this recipe years ago and everyone in my family loves it. It is great for potlucks, large gatherings, or cut down for just a family. It is really easy to make and makes great leftovers. I use Colby-Jack cheese, finely shredded, but any cheese will do.

14 medium peeled and cubed potatoes
16 ounces sour cream
3 (10 1/2 ounce) cans cream of chicken soup
4 cups grated cheese
2 cups corn flakes
2 tablespoons butter (1 cube)

Steps:

  • Boil potatoes until soft.
  • Mix with all but cornflakes and butter.
  • Cook in a baking pan at 400 for 50 minutes.
  • Melt butter and mix with cornflakes.
  • Spread evenly over potatoes.
  • Cook for 15 minutes.Remove from oven.

1 pkg (32 oz)frozen southern-style hash browns (allow to thaw a bit)
1 pint sour cream
8 oz cheddar cheese, shredded
1 can cream of chicken soup (undiluted)
1/4-1/2 cup diced onion
4 cups of Corn Flakes, crushed
1 teaspoon garlic salt
1 teaspoon salt
1/2 teaspoon pepper (or less)

Steps:

  • Mix all of the ingredients above and spoon into greased 9x13" pan. Combine one stick of softened margarine and 4 cups of curshed corn flakes. Sprinkle cornflakes mixture on top of potatoes. Bake in a 350F oven for 1-1 1/4 hours. May be made ahead and/or frozen. Adjust baking time accordingly.
