1 loaf (1 pound) day-old pumpernickel bread, cubed
1 Slow-Cooked Corned Beef Brisket, cubed
1-3/4 cups sauerkraut, rinsed and well drained
8 large eggs, beaten
3 cups heavy whipping cream
1/2 cup Thousand Island salad dressing
1 cup shredded Swiss cheese

Steps:

  • In a large bowl, combine the bread, corned beef and sauerkraut. In another bowl, whisk the eggs, cream and salad dressing; pour over bread mixture and toss to coat. Transfer to a greased 13x9-in. baking dish. Let stand 5 minutes., Cover and bake at 375° for 40 minutes. Uncover; sprinkle with cheese and bake 5-10 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

10 slices rye bread, cubed (about 6 cups)
1-1/4 pounds thinly sliced deli corned beef, chopped
2 cups shredded Gruyere cheese or Swiss cheese
1 cup sauerkraut, rinsed, drained and patted dry
1/4 cup chopped dill pickles
6 large eggs
2 cups 2% milk
2/3 cup Thousand Island salad dressing
Dash garlic powder
1/4 cup shredded Parmesan cheese
Chopped fresh parsley

Steps:

  • Place bread cubes in a greased 13x9-in. baking dish. Top with corned beef, Gruyere, sauerkraut and pickles. In a large bowl, whisk eggs, milk, dressing and garlic powder. Pour over bread. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, 45 minutes. Sprinkle with Parmesan. Bake until a knife inserted in the center comes out clean, 5-10 minutes longer. Let stand 10-15 minutes before cutting. Sprinkle with parsley.

1 can (12 ounces) corned beef, crumbled or 1-1/2 cups diced cooked corned beef
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
8 ounces cheddar cheese, cubed
1 package (7 ounces) small shell pasta, cooked and drained
1 cup milk
1/2 cup chopped onion
2 bread slices, cubed
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Transfer to a greased 2-qt. baking dish. Toss bread cubes with butter; sprinkle over top., Bake, uncovered, at 350° for 30 minutes. Cover and bake 15 minutes longer or until golden brown. Let stand 10 minutes before serving.

6 slices rye bread, cubed
1 (16 ounce) can sauerkraut, drained and rinsed
1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
  • Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.
  • Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

1/2 cup finely chopped celery
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
2 tablespoons butter or 2 tablespoons margarine
8 slices white bread, crusts trimmed, cut in half diagonally
1 (12 ounce) can hormel corned beef, coarsely chopped
1 cup shredded cheddar cheese
1 1/2 cups milk
3 eggs, beaten

Steps:

  • Cook celery, green pepper and onion in butter until tender. Arrange half of the bread slices in bottom of 2-quart baking dish; top with half of the corned beef. Spoon vegetable mixture over corned beef. Cover with remaining corned beef; top with remaining bread. sprinkle top with cheese. Combine milk and eggs; mix well. Carefully pour mixture over bread. Bake in 350°F oven 40 minutes or until golden brown.
