You can use leftover corned beef. We love this fried rice so much that I actually cook corned beef (by slow-cooking pre-marinated meat) just for this! Adjust the amount of each ingredient to your taste. I like the combination of the colors as well as the nutrition balance.

1 tablespoon vegetable oil
2 cups shredded and chopped cooked corned beef
4 ounces spinach, chopped
3 eggs, lightly whisked
5 cups cooked rice
1 teaspoon garlic powder, or to taste
salt to taste

Steps:

  • Heat vegetable oil in a wok or large skillet over medium heat. Add corned beef; cook and stir until heated through, about 3 minutes. Add spinach; cook and stir until wilted, about 2 minutes.
  • Push beef and spinach to the sides of the work; pour eggs into the center; cook, stirring frequently, until eggs are scrambled, about 3 minutes. Stir in rice; cook until heated through, about 5 minutes. Season with garlic powder and salt.

This is a special recipe from my papa! It's kind of an "east meets west" recipe, combining the eastern tastes of fried rice with western favourites like corned beef and bacon. Yum!

1 (12 ounce) can corned beef
3 garlic cloves, chopped fine
4 pieces streaky bacon
500 g shrimp
2 cups white rice
2 1/2 cups water
2 teaspoons dark soya sauce
1 tablespoon light soya sauce
300 g bean sprouts
4 eggs
2 teaspoons sambal chili paste (may be substituted with chilli sauce)
4 fresh chili peppers, chopped
salt

Steps:

  • 1. Cook the rice in the water in a rice cooker or on a stove until it is fluffy. Let the rice cool.
  • 2. Fry the corned beef in oil until it is no longer mushy. Remove from pan.
  • 3. Fry the bacon until it is crisp. Remove from pan and drain on paper towels. Cut into small pieces.
  • 4. Beat the eggs and in a separate pan, fry the scrambled eggs. Remove from pan.
  • 5. Stir fry the shrimp until cooked through. Remove from pan.
  • 6. In a large wok, fry the chopped garlic until it is light brown and there is an aroma.
  • 7. Add the cooked rice into the wok.
  • 8. Add the light and dark soya sauce and stir thoroughly.
  • 9. Add in the corned beef, bacon, eggs and shrimp, bean sprouts, chilli sauce and chillis. Mix thoroughly to ensure a consistent colour through the fried rice.
  • 10. Serve hot.

There's nothing quite as deeply and profoundly flavorful as caramelizing fermented foods, which is why you've got to try this kimchi fried rice and top it with 2 poached or fried eggs; the runny yolk will mix into and moisten the rice, taking this to a whole other level. The poached egg also paired quite nicely with my 'landweed' garnish, some fresh nasturtium from my garden, as it does with the much more traditional shredded seaweed.

1 ¼ cups kimchi, or to taste
2 tablespoons olive oil
1 ½ cups diced fully cooked corned beef
3 cups cold cooked rice
¼ cup water
2 tablespoons gochujang (Korean hot pepper paste)
½ cup sliced green onion
2 teaspoons toasted sesame seeds
2 teaspoons sesame oil, or to taste
¼ teaspoon soy sauce

Steps:

  • Drain kimchi over a pot, reserving the juice.
  • Meanwhile, coat a pan with olive oil and add corned beef.
  • Chop kimchi into small chunks; add to the pan. Place pan over medium-high heat. Cook and stir until mixture is browned to your liking, 4 to 7 minutes. Add rice, kimchi juice, water, and gochujang.
  • Mix rice mixture together and spread evenly over the pan; cook for 3 to 4 minutes. Mix and pat rice down again. Continue cooking, mixing and pressing rice every 3 to 4 minutes, until evenly browned and crusty, 12 to 15 minutes total.
  • Mix green onion, sesame seeds, and sesame oil into the fried rice. Taste and season with soy sauce. Stir again. Transfer fried rice to serving bowls.

1 tablespoon olive oil
2 cups cooked white rice
1 teaspoon chicken soup base (such as Better than Bouillon®)
6 ounces cooked corned beef, thinly sliced
1 egg, beaten
6 fresh spearmint leaves, cut into thin strips

Steps:

  • Heat olive oil in a wok over medium-high heat.
  • Cook and stir rice and chicken paste in hot oil until combined, about 2 minutes.
  • Stir corned beef into rice mixture until rice begins to brown, 2 to 4 minutes.
  • Remove the wok from heat and clear a hole in the center of the rice to cook egg.
  • Pour the beaten egg into center of the rice. Tilt the wok around to spread the egg into the rice, allowing the residual heat to completely cook the egg.
  • Portion the fried rice into 2 bowls and top with fresh mint.

3 garlic cloves, chopped
2 cups steamed rice
1 cup of chopped beef brisket
1 egg
1 cup of chopped cabbage

Steps:

  • Boil the rice in a pot using three cups of water until the rice is ready.
  • Add the garlic to a large skillet, cooking on medium heat.
  • Add the corned beef and cabbage when the garlic is turning a slight brown color (don't let the garlic cook too long or it will be bitter).
  • Use a separate skillet to cook the egg.
  • When the corned beef and cabbage start to heat, and the garlic turns golden brown, stir in the cooked egg, then the steamed rice.
  • Season with pepper and serve.
