SWEET ONION CORN CASSEROLE

This is a comforting, delicious, and flavorful casserole that is great for potlucks. My whole family gets excited when my Mom makes this-- a rare occasion! From Taste of Home 2004 (submitted by Jeanette Travis)

Number Of Ingredients 11

2 large vidalia onions or 2 large sweet onions, thinly sliced
1/2 cup butter or 1/2 cup margarine
1 cup sour cream
1/2 cup milk
1/2 teaspoon dill weed
1/4 teaspoon salt
2 cups shredded cheddar cheese, divided
1 egg, lightly beaten
1 (14 3/4 ounce) can cream-style corn
1 (8 1/2 ounce) package cornbread mix
4 drops hot pepper sauce (optional)

Steps:

  • In a large skillet, saute onions in butter until tender.
  • In a small bowl, combine sour cream, milk, dill, and salt until blended; stir in 1 cup cheese.
  • Stir into onion mixture; remove from heat and set aside.
  • In a bowl, combine egg, corn, corn bread mix and hot pepper sauce.
  • Pour into a greased 13-in. x 9-in. x 2-in. baking dish.
  • Spoon onion mixture over top.
  • Sprinkle with remaining cheese.
  • Bake, uncovered, at 350 for 45-50 minutes or until top is set and lightly browned.
  • Let stand for 10 minutes before cutting.

2 2 2 cups Fresh or Frozen Corn Kernels
1 1 (17 Oz.) Can 1 (17 Oz.) Can Cream-style Corn
1 1 Egg, 1 Egg, beaten
1 1 1 Tbsp Sugar
1/2 1/2 1/2 cup Melted Butter
1/2 1/2 1/2 cup Diced Onion
1/4 1/4 1/4 cup Real Bacon Bits, i use ones from a jar
1 1 1 cup Dried Sweetened Cranberries
1 1 (7 Oz) Pkg 1 (7 Oz) Pkg of Mexican Cornbread Mix
1 1 1 cup Shredded Monterey Jack Cheese
1 1 (4 Oz.) Can 1 (4 Oz.) Can Mild Green Chilies, drained
1/2 1/2 1/2 cup Diced Roasted Red Peppers, i use ones from a jar
1/2 1/2 1/2 cup Chopped Cilantro

Steps:

  • Preheat oven to 350 degrees. In large bowl combine corn (thawed, if frozen), creamed corn, egg, sugar, butter, onion, bacon bits & cranberries. Mix well. Add cornbread mix and cheese. Mix well. Fold in green chilies, red peppers and cilantro. Pour into a large, greased 11x14" baking dish and bake for 45 minutes or until golden brown.

This recipe is from a Country Inn and Bed & Breakfast cookbook I have. It is absolutely WONDERFUL, and is not your usual corn casserole. It is great served along with fried chicken, or...if you like it as much as I do...all by itself! I am asked for the recipe each time I make it, so I know it's not just me!

2 Tbsp butter or margarine
1 large onion, sliced
1 c sour cream
1/4 tsp salt
1 Tbsp finely chopped parsley
1/2 c cheddar cheese
1 box jiffy corn muffin mix
1 egg, well beaten
1/3 c milk
1 can(s) creamed corn (15-16 oz)
2 drops hot sauce
3/4 c cheddar cheese

Steps:

  • 1. Melt the butter or margarine in a skillet and saute' the onions until tender. In a bowl combine the sour cream, salt, parsley and 1/2 cup cheese. Add the sauteed onions to the sour cream mixture, stir, and set aside.
  • 2. Combine the muffin mix, egg, milk, corn, and hot sauce and mix well. Spread in a greased 9x9-inch pan. Cover with the sour cream mixture. Top with the remaining cheese. Bake in a 425 degree oven for 25 to 30 minutes.

Thanks to the Deen Brothers I have this very simple recipe. It is really good and so simple to make.Enjoy!!!!!!!!!!!!!!!!!!!!!!!!!!!!I also add a little fried bacon to the mixture.

8 oz cream cheese, room tempature
10 oz package frozen corn,thawed
1 c french fried onions.
1 pinch salt and pepper

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 7 inch square baking pan or casserole dish. Spread the cream cheese on the bottom of the pan. Top with corn, pressing the corn into the cheese. Season to taste with salt and pepper. Spread the onions evenly over the top. Bake for 30 minutes.

2 T (1/4 stick)butter
3 medium sweet onions, peeled and cut into l/4 inch slices
nonstick vegetable oil spray
2 c. shredded cheddar cheese
1 can creamed corn
1 can (5 ou) evaporated milk
1 T. soy sauce
6 slices French bread, cut l/2 inch thick
1/3 c. chopped parsley

Steps:

  • Place a large skillet over medium heat and melt butter. Add the onions and mushrooms and saute until tender. Place the mixture into a lightly oiled 2 qt. glass casserole. Sprinkle with 1 cup of cheese. In a mixing bowl, combine the creamed corn, evaporated milk and soy sauce and pour over the cheese. Top with french bread slices, then sprinkle evenly with remaining cup of cheese and chopped parsley. Cover and refrigerate. Next day, preheat oven to 375 -- let casserole stand at room temp for 30 min. Bake covered for 30 min.. Uncover and bake until thoroughly heated, 15 - 20 min. more. Let stand 5 min. before serving.

1 cup Kraft Sharp Cheddar Cheese, divided
1 sweet Spanish onion - use more or one huge onion
1/4 cup butter
1 1/2 cups corn muffin mix - one box
1 egg, beaten
1/3 cup milk
1 cup cream style corn or one 14.5 oz can
3 drops Tabasco sauce
1 cup sour cream
1/4 tsp dill weed - or a little more to suit taste
1/4 tsp salt

Steps:

  • Grate 1 cup of Kraft Sharp Cheddar Cheese and set aside. On stove top in large skillet, sauté onion in butter and set aside.
  • Combine the following and pour in buttered casserole dish: corn muffin mix, egg, milk, cream style corn, and Tabasco sauce.
  • To sautéed onions add: sour cream, dill weed, salt, and 1/2 of the grated cheese. Pour this mixture on top of corn mix in the buttered dish.
  • Bake uncovered at 425 degrees F for 25 to 30 minutes. Add remaining cheddar cheese to melt just before taking out of oven.
