SWEET CORN SALAD

A delightfully fresh and crunchy summer salad, featuring the season's best vegetables, and a light and creamy herb dressing.

1 shallot, (finely chopped, divided usage)
3 ears of fresh, raw corn, (kernels removed)
2 pickling cucumbers, (diced)
1 small red bell pepper, (diced)
1 handful fresh dill (about 4 smallish sprigs), ( minced)
1/4 cup fresh flat-leaf parsley leaves, (minced)
crumbled Feta cheese, (for garnish)
1/3 cup buttermilk ((low fat is fine))
2/3 cups greek yogurt
1 tablespoon white balsamic vinegar
1 tablespoons chopped shallots
1 small clove garlic, (minced and mashed with a pinch of salt)
2 teaspoons minced fresh dill
2 teaspoons minced fresh cilantro
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt

Steps:

  • In a large bowl toss the corn kernels lightly to separate them, add the shallot and the remaining salad ingredients, tossing again to combine.
  • Add the dressing ingredients to a blender, and blend until smooth. Refrigerate until ready to use.
  • Just before serving, toss the salad with dressing, adding a little bit at a time, until all ingredients are lightly coated with dressing. Garnish with feta cheese. Serve the remaining dressing on the side.

This truly is the most delicious stuff! A bit like a cross between corn souffle and a slightly sweet corn pudding! Try it, I know you will love the ease of preparation and especially the taste. Everyone always wants the recipe! Note: The ingredients can be doubled and baked in a 9x13 inch baking dish in almost the same amount of cooking time.

½ cup butter, melted
2 eggs, beaten
1 (8.5 ounce) package dry corn bread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
  • In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
  • Bake for 45 minutes in the preheated oven, or until the top is golden brown.

This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

2 (10 ounce) packages frozen corn kernels, thawed
1 cup heavy cream
1 teaspoon salt
2 tablespoons granulated sugar
¼ teaspoon freshly ground black pepper
2 tablespoons butter
1 cup whole milk
2 tablespoons all-purpose flour
¼ cup freshly grated Parmesan cheese

Steps:

  • In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

This is a take-off of the original Russian dish which was made with sour cream and topped with lots of cheese. This is the lowfat version, please be aware that lowfat yogurt can separate while cooking, so it is important not to skip the step to drain the corn well and to stir the mixture well. It has a superb taste.

1/2 cup plain nonfat yogurt
1 1/2 teaspoons cornstarch
1 teaspoon dill weed
1/8 teaspoon salt
pepper
1 (12 ounce) can corn (or one 10 ounce package frozen corn thawed and drained well)
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Spread the corn on a towel to drain.
  • Preheat oven to 375 degrees.
  • Lightly oil a 1 quart baking dish or spray with a nonstick cooking spray.
  • In a small bowl, combine yogurt, cornstarch, dill weed, salt and pepper. Mix well. Stir in corn. Place mixture in prepared pan.
  • Bake uncovered, 20 minutes or until hot and bubbly. Remove from oven and mix well, stirring until yogurt is smooth. Spread cheede evenly over corn.
  • Return to oven and bake 5 minutes more or until cheese is melted.
