1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup granulated sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1/3 cup neutral oil or melted butter
1 large egg
1 cup milk
1 cup shredded sharp cheddar cheese
1/2 cup chopped green onions (about 5)

Steps:

  • Grease a 9-inch square baking dish well, and set aside. Preheat the oven to 400 degrees F.
  • In a medium mixing bowl, add the flour, cornmeal, sugar, salt, and baking powder. Whisk to combine well.
  • Make a well in the center of your dry ingredients, and add your oil or butter, milk, and egg. Stir just until the mixture comes together and there are only a few lumps remaining.
  • Fold in the cheese and green onions.
  • Pour the batter into the prepared pan and bake for 20 to 25 minutes, until the top is a deep golden-brown and a toothpick inserted into the center comes out clean.
  • Serve hot.

1 cup corn, fresh (approximately 2 ears of corn)
1 (15 ounce) can cream-style corn
1 cup sour cream
1 (8 ounce) package corn muffin mix
6 tablespoons green onions, thinly sliced
1/4 teaspoon ground black pepper
1 pinch salt

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9-inch square baking pan.

1 medium onion
1/4 cup butter
1 Jiffy cornbread mix
1 (11 ounce) can creamed corn
1 cup sour cream
1 cup shredded colby or 1 cup cheddar cheese
1 tablespoon parmesan cheese

Steps:

  • Preheat oven to 425°.
  • Sauté onion in butter, set aside.
  • Mix Jiffy according to package directions. Stir in creamed corn. Pour into greased 11x13 casserole dish.
  • Combine sour cream and shredded cheese. Add sautéed onions and stir. Drop by spoonful across cornbread mixture. Sprinkle with Parmesan.
  • Bake for 25-30 minutes until light brown.

Nonstick vegetable oil spray
1/2 cup (1 stick) unsalted butter
1 cup sliced green onions
2 cups yellow cornmeal
1 cup unbleached all purpose flour
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups buttermilk
2 large eggs, beaten to blend

Steps:

  • Preheat oven to 400°F. Lightly spray 13x9x2-inch metal baking pan with nonstick spray. Melt butter in medium skillet over medium heat. Add 1 cup sliced green onions and sauté until beginning to soften, about 3 minutes. Cool.
  • Whisk 2 cups cornmeal, 1 cup flour, 1/2 cup sugar, 4 teaspoons baking powder and 1 teaspoon salt in medium bowl to blend. Add onion-butter mixture, buttermilk and eggs; stir until just combined. Transfer batter to prepared pan.
  • Bake corn bread until edges are lightly browned and tester inserted into center comes out clean, about 20 minutes. Cool completely. (Can be prepared 1 day ahead. Wrap tightly in foil and store at room temperature.)
