Enjoy this fish supper while it's still warm outside. If you can't find salmon with the skin on, skinless will work, too.

2 ears corn, husks and silks removed
2 vine-ripened tomatoes, cored and cut into 3/4-inch pieces
2 avocados, halved, pitted, and diced
1/2 small red onion, finely chopped
2 tablespoons finely chopped fresh parsley
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Coarse salt and ground pepper
Vegetable oil, for grates
4 skin-on salmon fillets (6 ounces each)
1/2 teaspoon Creole seasoning

Steps:

  • In a large pot of boiling water, cook corn until tender, about 4 minutes. Cut off tip of each cob. Stand corn in a wide shallow bowl; using a sharp knife, slice downward to release kernels. To bowl, add tomatoes, avocados, onion, parsley, 2 tablespoons oil, lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper; toss to combine.
  • Heat grill to medium-high. Clean and oil hot grates. Rub fish with 1 tablespoon oil; sprinkle with Creole seasoning and season with salt and pepper. Grill fish, skin side down, until skin is crisp, 4 to 5 minutes (if fish does not release easily, cook a bit longer). Using a thin spatula, flip fish and cook until slightly pink in center, about 4 minutes more, depending on thickness of fillet. Serve salmon with corn relish.

BLACK BEAN, CORN, AND TOMATO RELISH



Black Bean, Corn, and Tomato Relish image

This relish (otherwise known as a salsa) has its roots all over Latin America and the Caribbean. Use freshly roasted sweet corn for best results, but canned or frozen corn can be used during those times when fresh corn is unavailable.

3 ears fresh sweet corn (or 1 cup frozen corn)
2 Tbsp butter
1 15-oz can(s) black beans, drained
2 tomatoes, seeded and chopped
2 scallions, finely chopped
3 Tbsp olive oil
1 Tbsp red wine vinegar
salt and freshly ground pepper, to taste

Steps:

  • 1. Carefully peel back the corn husks and remove the "silk" from inside. Soak the corn in a large bowl of cold water for 30 minutes. Drain the corn and pat dry.
  • 2. Rub the butter over the corn kernels and fold the corn husks back into place around the cob.
  • 3. Grill over hot coals or under a preheated broiler for 15 to 20 minutes, turning about every 5 minutes.
  • 4. Allow to cool, peel the husks and cut the corn off the cobs. Combine with the remaining ingredients in a mixing bowl and toss to combine.
  • 5. Chill for at least 1 hour before serving.

ROSEMARY MARLIN WITH ROASTED CORN AND TOMATO RELISH

This is a great dish for any firm fish, including tuna and halibut. Since the dish relies heavily on the quality of tomatoes, it is best made in August or September when red, ripe tomatoes are available.

½ cup extra virgin olive oil
1 sprig fresh rosemary, leaves stripped and finely chopped
2 pounds marlin steaks
¼ cup extra virgin olive oil
1 large onion, minced
2 cups cherry tomatoes, halved
2 ears corn, kernels cut from cob
2 cloves garlic, minced
1 sprig fresh rosemary, leaves stripped and finely chopped
2 teaspoons kosher salt, or to taste
salt and black pepper to taste

Steps:

  • To make the marinade, place 1/2 cup olive oil and 1 sprig of rosemary into a resealable plastic bag. Add the marlin steaks, seal the bag, and turn gently to evenly coat the fish. Refrigerate for 1 hour.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Pour 1/4 cup olive oil into an oven-safe 10 inch skillet. Stir in the onion, cherry tomatoes, corn kernels, garlic, 1 sprig of rosemary, and kosher salt.
  • Place skillet in preheated oven, and cook until vegetables are soft, 20 to 30 minutes.
  • Preheat an outdoor grill for high heat. Lightly oil grate, and set 4 inches from the heat.
  • Place the fish on the preheated grill, and season with salt and pepper to taste. Cook, turning once, until fish is opaque and flakes easily with a fork, about 5 minutes each side depending on thickness. Place the fish on a serving platter, and top with corn and tomato relish

1 cup frozen corn, thawed
2 large vine ripe tomatoes (about 2 C diced)
2 large avocados, diced
6 tablespoons diced red onions
2 tablespoons chopped fresh parsley
2 tablespoons olive oil
1 tablespoon fresh lemon juice
2 teaspoons salt
1/2 teaspoon fresh ground pepper
4 salmon fillets, with skin
1 tablespoon olive oil
1/2 teaspoon Emeril's Original Essence

Steps:

  • In a medium bowl, add corn, tomatoes, avocados, onions, parsley, olive oil, lemon juice, 1 tsp salt, and 1/4 tsp pepper. Toss to combine and set aside.
  • Preheat grill to medium high.
  • Lightly brush the fillets with olive oil and season flesh side with 1/8 tsp of the Essence, 1/4 tsp salt and a pinch of the remaining pepper. Add to grill, skin side down, and cook until skin is crisp about 4-5 minutes. Turn and cook until the salmon is opaque and medium rare about 4 minutes, or how ever you like your fish cooked.
  • Serve with relish on top with the grilled asparagus.

This light version of classic crab bisque gets its creaminess from a combination of low-fat milk plus pureed vegetables and potatoes. The tangy, chunky relish provides a textural and flavor contrast to the smoky, rich-tasting bisque. Serve with crusty whole-grain rolls and some extra wedges of lime for squeezing.

For Relish:
1 small avocado, finely diced
1 cup fresh corn kernels (about 1 large ear; see Tips) or frozen, thawed
1 medium tomato, seeded and finely diced
1 tablespoon lime juice
1/4 teaspoon salt

For Bisque:
1 tablespoon extra-virgin olive oil
1 cup fresh corn kernels (about 1 large ear; see Tips) or frozen, thawed
1 cup chopped onion

  • To prepare relish: Combine avocado, corn, tomato, lime juice, salt and pepper in a small bowl; toss to coat. Let stand at room temperature while you prepare the bisque.
  • To prepare bisque: Heat oil in a large saucepan over medium heat. Add corn, onion and bell pepper and cook, stirring often, until the onion and pepper have softened, about 5 minutes. Add potato and paprika and cook, stirring often, for 2 minutes. Add sherry and cook, scraping up any browned bits, until the liquid has reduced slightly, about 5 minutes. Add stock (or broth) and bring to a boil. Reduce heat and simmer, stirring occasionally, until the potatoes are very tender, about 15 minutes.
  • Working in two batches, puree the vegetable mixture in a blender or food processor. (Use caution when pureeing hot liquids). Return the puree to the saucepan; stir in milk, crab and salt. Cook, stirring occasionally, until heated through, 3 to 5 minutes. Serve each portion of bisque with about 1/4 cup relish; sprinkle with additional paprika, if desired.

Cooked Corn Relish:
2 cups milk
8 ounces unsalted butter
2 tablespoons kosher salt
2 tablespoons sugar
3 whole corn on the cob
1/4 cup rice wine vinegar
1 ounce fresh cilantro, finely chopped
2 large shallots, finely chopped
1 clove garlic, minced
Kosher salt and freshly ground black pepper
Tomato and Pepper Coulis:
4 tablespoons olive oil
1 tablespoon rice wine vinegar
3 shallots, peeled
2 cloves garlic
2 whole red peppers, roasted
2 tomatoes, halved
1 small bunch fresh cilantro
Salt and ground white pepper
Crab Cakes:
1 cup panko breadcrumbs
1 cup mayonnaise
1 ounce fresh cilantro, chopped
1 egg
1 small red onion, cut into small dice
1 green pepper, cut into small dice
1 red pepper, cut into small dice
1 yellow pepper, cut into small dice
1 pound jumbo lump crab meat
Canola oil, for frying

Steps:

  • For the corn relish: Add the milk and 2 cups water to a 3- to 4-quart pot and bring to a simmer. When it's at a simmer, stir in the butter, salt and sugar; give it a few minutes until the butter has melted. Place the corn in the pot, cover and cook until tender, about 45 minutes. Remove the corn and cool down enough to handle, and then cut off the kernels with a knife. (Hint: it will be easier to remove the kernels off the cob if still warm.) Mix together the corn, vinegar, cilantro, shallots, garlic and salt and black pepper to taste in a large bowl.
  • For the coulis: Preheat the oven to 400 degrees F. As that is working, mix together the oil, vinegar, shallots, garlic, peppers, tomatoes, cilantro and some salt and white pepper in a large bowl. Make sure to coat the ingredients evenly with the oil. Place on a baking sheet and roast for about 20 minutes, and then transfer to a blender and mix until smooth. Strain through a fine mesh strainer. Set aside.
  • For the crab cakes: Turn the oven down to 350 degrees F. Mix together the breadcrumbs, mayonnaise, cilantro, egg, onions and peppers in a large bowl. Let sit for 5 minutes while you open and drain the crabmeat. Once the crab is drained of all excess liquid, fold it into the breadcrumb mixture. Form into 8 equal crab cakes. Heat oil to 350 degrees F in a saute pan, and then sear the crab cakes until golden brown on both sides. Transfer to the oven to for 10 minutes.
  • To plate this dish, we use an 8-inch round white plate. First, place a small amount of the corn relish in the center. Place the browned crab cakes directly onto the corn. Finally, spoon a few ounces of the coulis around the corn and serve.

I made a similar recipe from a Cooking Light magazine several years ago. Over time it has evolved into my own. It is really nice for a summertime barbecue or just an anytime side dish.

2 cups corn kernels, cleaned (about 4 ears)
1 cup tomatoes, chopped & seeded
1/3 cup red bell pepper, roasted, seeded, & chopped
1/3 cup red onion, finely diced
2 tablespoons balsamic vinegar
1 tablespoon olive oil, extra virgin
1 teaspoon kosher salt
1 teaspoon pepper
2 teaspoons thyme, fresh leaves

Steps:

  • Soak cleaned corn in a bowl of water for approximately 30 minutes.
  • Heat a grill and place corn straight on the cooking surface. Cook until beautiful black & caramelized grill marks appear, turning frequently. DO NOT BOIL OR MICROWAVE CORN (sorry, but this is a big obnoxious NO-NO with me) or you will lose all of the sweet natural flavor.
  • Once corn has cooled enough to handle, cut off all of kernels. Add all of the remaining ingredients and mix together. Serve at room temperature or cold.

  • For relish * Preheat oven to 375°F. Brush rimmed baking sheet with 1 teaspoon oil. Toss corn and 2 teaspoons oil on prepared sheet. Roast until corn begins to brown, stirring occasionally, about 18 minutes. Transfer to bowl. Mix in tomatoes, green onions, basil, and 2 tablespoons oil; season with salt and pepper. For chicken * Using mallet or heavy-bottomed saucepan, pound chicken between sheets of plastic wrap to about 1/2-inch thickness. Pat chicken dry. Sprinkle with salt and pepper, then dust with flour to coat. Melt butter with oil in heavy large skillet over medium-high heat. Add chicken to skillet and sauté until cooked through, about 5 minutes per side. Transfer to plates; top with relish and serve.

1 teaspoon cumin seeds
2 whole cloves
1 (7 oz) can chipotle chiles in adobo sauce
2 tablespoons fresh thyme leaves
2 teaspoons brown sugar

1 (1.25 lb) flank steak, trimmed
2 cups fresh corn kernels (about 4 ears)
1 cup chopped, seeded tomato
1/4 cup bottled roasted red bell pepper, chopped
2 tablespoon sherry vinegar
1 tablespoon olive oil
3/4 teaspoon salt

Steps:

  • 1. Cook the first 3 ingredients in a small nonstick skillet over medium heat for 45 seconds or until toasted. Please teh mixture in a spice or coffee grinder until finely ground. (I actually don't do this at all. I skip it and just use ground pepper, ground cumin, and ground cloves.) 2. Combine one chile, peppercorn mix, vinegar, thyme, brown sugar, salt, and garlic in a blender and process until smooth. Combine with steak in a plastic bag. Seal and marinate for 24 hours. 3. To prepare relish, heat a large nonstick skillet coated with cooking spray over medium-high heat. Add corn and saute until lightly browned. Remove from heat. Stir in tomato, roasted red pepper, olive oil, and salt. 4. Please steak on grill and cook. Cut diagonally into thin slices. 5. Serve steak with relish and enjoy!
