My mother is an excellent cook who rarely follows a recipe exactly. My two sisters and I do the same thing, adding something here, omitting something there. With this soup, I sometimes leave out the bacon and butter, and have used canned corn and creamed corn with good results. - In a large saucepan, cook bacon until crisp. Remove bacon to paper towel to drain, reserving 1/4 cup drippings in pan. Saute the onion, celery and green pepper in drippings for 5 minutes. Add potatoes and broth. Reduce heat; cover and simmer for 10 minutes. , Place 1/2 cup milk and 2 cups corn in a blender; cover and process until pureed. Pour into saucepan. Add ham and remaining corn; simmer for 10 minutes or until vegetables are tender. Stir in the butter, parsley, salt, pepper, pepper sauce if desired and remaining milk; heat through. - Heat olive oil in a large pot over medium heat; cook and stir onion until translucent, 5 to 10 minutes. Add potatoes and ham to onion; cook and stir until ham is heated through, about 5 minutes.

- Stir chicken broth, carrots, chicken bouillon, bay leaves, sea salt, pepper, thyme, marjoram, and garlic powder together in a Dutch oven; bring to a boil, reduce heat to medium, and cook for 10 minutes. - Boil water; meanwhile peel and dice potatoes.
- Boil for about 10-15 minutes (soft but not too mushy).
- Meanwhile, dice up ham, onion, celery.

- Slice the corn kernels off the cob and reserve the cobs. Heat 4 tablespoons butter in a large pot over high heat. Add the thyme, onion, celery, garlic, 1 teaspoon salt and all but 1/2 cup each corn kernels and ham; cook 1 minute. Add the potatoes, corn cobs and 5 cups water. Cover and cook until the potatoes are very tender, 20 to 25 minutes.

Steps:
- On a firm non-breakable surface, take a clean hammer and crack the middle of the ham bone so that marrow can escape during cooking.
- Place ham bone flat in the bottom of a pot and add enough water to just cover.
- Simmer over medium heat for 30 minutes.
- Remove bone and cut off the remaining tender ham meat; set meat aside.
- Turn up the heat on the ham broth and reduce down until you have about a couple of cups of broth, or to desired strength.
- Skim the fat from the broth.
- Melt butter in a large pan; remove from heat and mix in flour until smooth.
- Slowly add 1 cup milk, stirring constantly.
- Return pan to stove and cook on low heat until milk thickens.
- Stir the corn, the ham pieces you set aside earlier, dried minced onion, and minced garlic into thickened milk; then slowly stir in the remaining milk and the ham broth.
- Cook on low for about 15 minutes, but do not boil.
- Add salt, pepper, and paprika to taste.
- *Note: how much meat you leave on the bone is up to you, but I like to have a couple of cups of ham bits mixed into this chowder.
- Optional: you can add a cup of cooked, chopped potato chunks to the soup near the end of the cooking, if you like.

- Spray a 3 or 4 quart slow cooker with non-stick cooking spray, and add all ingredients except cheeses and hot pepper sauce to the crock pot.
- Cover and cook on low setting for 3-4 hours.

HAM, POTATO, CORN AND SPINACH CHOWDER
So, I am home by myself and starving. I got to thinking about soup I had as a child with farmer's sausage and potato. While I am living in Canada again for the first time in years and actually have farmer's sausage in my freezer, I also had left over ham. So, here is my take on a hearty, yummy soup that most people can probably make with leftovers from a big ham dinner. Give it a whirl, I think you will be pleased. Note that I added a kind of weird ingredient of greek sour cream because I thought it would add a nice sourness to the soup (kind of like buttermilk) and I happened to have some in the house. I think regular sour cream (but probably not lowfat) would work too.

- melt about 1 tablespoon of butter in a pan (real butter is sooo much better than margarine, trust me on this).
- add in about a teaspoon of onion flakes to rehydrate and soften.
- when the butter gets a bit brown add 2 tablespoons of flour.
- whisk together until you have "cooked" the flour (about 30 seconds).
- add 2 cups of milk and whisk until smooth.
- add a cup of chicken broth. I actually used chicken bouillon because that is what I had.
- add one heaping tablespoon of greek sour cream (see notes about using regular sour cream instead).
- Add 2 nuggets of chopped frozen spinach.
- let simmer on low while you prepare the rest of the ingredients.
- add a couple shakes of garlic powder.
- I put in A LOT of black pepper but do it to your taste.
- Add dill to taste as well, I used dry because that is what I had, but fresh would be super good.
- Chop up about 2 cups of ham into bite sized pieces.
- open the corn and drain.
- peel one big left over baked potato and chop into bite sized pieces.
- Add all the ham, potato and corn.
- Taste and add extra dill, pepper if desired. I added another tablespoon of sour cream because I thought it would taste good.
- Let simmer until all the ingredients are hot and the spinach is dispersed throughout.
- and eat!

- 1. In small sauce pan add the 1 1/2 cups of water and wild rice. bring to a boil and reduce the heat and cook covered about 35=40 min. till done. Do not drain off liquid if there is any left. In large sauce pan or dutch oven saute the onion, and garlic in the butter till tender crisp. add flour and cook 1 min. stirring constantly. gradually add the 4cups of stock. Add potatoes, carrots, thyme, nutmeg, pepper and bay leaf. Bring to boil. Reduce heat and simmer for 20-30 minutes until slightly thickened. Add corn, cover and simmer another 15 min. or till all veggies are tender. Add ham and rice and half and half and heat till completely heated. Do not boil once you have added the cream. Remove bay leaf.At this point taste for seasoning (salt or pepper) The ham has usually got a lot of salt in it so it is not in the ingredients but if needed can be added now if desired. may add parsley for garnish if you like.

With fall fast approaching and longing for a steaming bowl of soup, I dug into the huge pile of my recipes that I have yet to put here, and came across this one! A hearty rich chowder that will keep you warm from the icy cold north winds!

- In large (3-quart or so) saucepan,combine broth, onion and carrots.
- Tie together bay leaf and fresh herbs to make a bouquet garni.
- Add to saucepan and bring to a boil, reduce heat and simmer 10 minutes.
- Remove herbs. Remove pan from heat.
- Dice canned potatoes *reserving 1 cup. Set 1 cup's worth aside.
- Put rest of potatoes and 1 can of corn in the blender. Blend til smooth, add to saucepan. (*You can also do this in the saucepan instead of the blender with a Magic Wand hand mixer.).
- Return pan to heat (about medium), and add the rest of the potatoes (the 1 cup you reserved), the second can of corn, the half and half and the diced ham.
- Bring just to a boil, reduce heat and simmer on low for 5 minutes.
- Stir in pimientos and parsley.
- Season with a little pepper or hot sauce if desired, to taste.
- Taste for saltiness, add salt only if needed. *Ham can be very salty so be careful adding only a little at a time.
- Ladle into bowls and garnish with additional parsley.
- Serve with warm crusty bread or fresh baked cornbread and butter!

CORN CHOWDER WITH SWEET POTATOES AND HAM

- Holding 1 of the ears of corn by its pointed end and steadying its stalk end on a cutting board, cut down along the ear with a sharp knife to strip off the kernels, turning the ear with each cut. Repeat with 2 of the ears of corn. Put the kernels in a bowl and set aside. Score the kernels on the remaining 2 ears of corn by running the tip of a sharp knife down the length of the ear. Place each ear in a bowl and, using the back of a knife, scrape down the length of the ear to squeeze out the pulp from the scored kernels. Set the pulp aside. In a soup pot over medium heat, melt the butter. Add the ham and cook, stirring once or twice, until lightly browned, about 10 minutes. Using a slotted spoon, transfer to a bowl. Add the onion and bell peppers to the pot, cover and cook, stirring once or twice, until tender, about 10 minutes. Add the broth, sweet potato and the 1 tsp. salt. Reduce the heat to low, partially cover and simmer for 10 minutes. Stir in the ham and corn kernels. Cover and cook until the potato is just tender, about 10 minutes. Stir in the corn pulp, cream and hot-pepper sauce. Cook just until heated through, 3 to 4 minutes. Taste and adjust the seasonings. Serve hot. Serves 8.
