For vinaigrette
1 small garlic clove
1/4 cup fresh coriander
3 tablespoons fresh lemon juice
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup olive oil
For salad
a 14-ounce can hearts of palm, drained
4 California firm-ripe avocados
1 small red onion, sliced thin
Boston lettuce leaves (from about 2 heads)

Steps:

  • Make vinaigrette:
  • In a blender purée garlic and coriander with lemon juice, sugar, and salt. With motor running add oil in a stream, blending until dressing is emulsified.
  • Make salad:
  • Cut hearts of palm and avocado into 3/4-inch cubes and in a large bowl with a rubber spatula gently toss with onion and vinaigrette until combined well.
  • Line 8 salad plates with lettuce leaves and mound avocado mixture on top.

1/2 cup coriander seed (toasted and ground)
2 tablespoons cumin seeds (toasted and ground)
1 tablespoon kosher salt
Olive oil
Chickpea Salad, recipe follows
16 large sea scallops
Red Pepper Vinaigrette, recipe follows
Cilantro Oil, recipe follows
Cilantro sprigs
2 cups chickpeas, soaked and cooked, or if using canned, drained and rinsed
2 serrano peppers, grilled, peeled, seeded and julienned
1/2 cup red pepper, brunoise
1/2 cup yellow pepper, brunoise
1 teaspoon ground cumin
1/4 cup fresh lemon juice
1/2 cup extra virgin olive oil
1 teaspoon cayenne pepper
1/4 cup finely chopped flat leaf parsley
1/4 cup finely chopped chives
Salt and freshly ground pepper
8 red peppers, juiced and strained
1 tablespoon honey
Pinch of saffron
2 tablespoons chopped red onion
1/4 cup sherry vinegar
3/4 cup olive oil
Salt and freshly ground pepper
1 cup cilantro leaves
2 tablespoons chives
1/4 cup spinach leaves
1 cup canola oil

Steps:

  • Heat the grill to medium-high heat. Combine the ground coriander, cumin and salt in a medium bowl. Brush the scallops with olive oil and dredge on one side only. Grill scallops, spice side down for 2 minutes or until golden brown, turn over and continue grilling for 1 to 2 minutes until just cooked through. Place chickpea salad in the center of the plate, top with 4 scallops per person. Pour vinaigrette around the plate and drizzle with cilantro oil. Garnish with fresh cilantro.
  • Combine all ingredients in a medium bowl and season with salt and pepper to taste. Let sit at room temperature at least 30 minutes before serving.
  • Heat juice of peppers with honey, saffron, onion, and vinegar until reduced by half or to a thickened consistency. Place in a blender and slowly add the oil until emulsified. Season with salt and pepper to taste. Place in a squeeze bottle
  • Blend all ingredients in a blender for about 4 to 5 minutes or, until smooth. Place in a strainer lined with cheesecloth, set over a medium bowl and let the oil slowly drip, do not push through. Place oil in a squeeze bottle.

6 quarts water
2 cups clover honey
2 quarts carrots, sliced diagonally
2 teaspoons coriander seeds, whole
3/4 cup extra virgin olive oil
1/4 cup lemon juice
1 1/2 teaspoons dijon-style mustard
2 3/4 teaspoons salt, divided
1 1/4 teaspoons ground black pepper, divided
1/4 cup ground cumin

Steps:

  • In a large saucepan over high heat bring 6 quarts water and honey to a boil; Add carrots; simmer until tender, about 5 minutes. Drain, rinse under cold water; drain again.
  • Transfer to a bowl; set aside.
  • In a small dry skillet over medium heat place coriander seeds. Heat until fragrant, stirring frequently, about 2 minutes; cool slightly.
  • Grind coriander in a spice or coffee grinder into a fine powder.
  • Place in a bowl along with olive oil, lemon juice, mustard, 3/4 teaspoon of the salt and 1/4 teaspoon of the black pepper; whisk until combined; set aside.
  • Toss carrots with cumin, the remaining 2 teaspoons salt and 1 teaspoon black pepper and reserved olive oil mixture.
  • Serve over bib lettuce, if desired.

1 1/4 pounds small young beets (mix of red, golden, and Chioggia), trimmed
2 teaspoons finely grated orange zest, plus 1 tablespoon fresh orange juice
2 tablespoons sherry vinegar
1 teaspoon honey
1/4 cup extra-virgin olive oil
1 teaspoon coriander seeds, toasted and lightly crushed
Sea salt flakes, and freshly ground pepper

Steps:

  • Prepare an ice-water bath; set aside. Peel beets. Using a mandoline, thinly slice into rounds. Transfer to ice-water bath; refrigerate 30 minutes.
  • Meanwhile, whisk together orange juice, vinegar, and honey in a medium bowl. Add oil in a slow, steady stream, whisking until emulsified. Whisk in coriander and orange zest. Season with salt and pepper. Cover, and set aside.
  • Drain beets, and pat dry. Add beets to dressing; toss to combine. Let stand 5 minutes before serving.

2 teaspoons Dijon-style mustard
2 tablespoons freshly squeezed lemon juice
1/3 cup olive oil
1 tablespoon red-wine vinegar
Salt and freshly ground white pepper to taste
1 tablespoon minced fresh coriander
2 tablespoons orange zest, cut into 1-inch strips
1 head each of different lettuces, such as radicchio, bibb and arugula
1 head of bibb
1 head of arugula
2 heads Belgian endive
2 oranges, sectioned neatly and trimmed of the tough membranes
1 tablespoon vegetable oil
3/4 pound bay scallops or quartered sea scallops
3/4 pound skinless tuna fillets, cut into 1/2-inch cubes
2 tablespoons minced shallots
Salt and freshly ground white pepper to taste

Steps:

  • To make the vinaigrette, combine the mustard and half of the lemon juice in a small bowl. Beat briskly until the mixture begins to thicken. Gradually add the olive oil, the remaining lemon juice and the vinegar while continuing to beat. Add the remaining ingredients and mix well.
  • To make the salad, tear the lettuces and endive into bite-sized pieces and mix them with the orange sections in a large bowl. Pour two-thirds of the dressing over the salad and toss well. Divide the salad into four portions and arrange on serving plates.
  • Coat the bottom of a nonstick pan with the vegetable oil. Over high heat, saute the scallops for one minute while shaking the pan. Add the tuna and shallots. Salt and pepper well. Toss briskly and cover. Cook for another minute, shaking the pan occasionally. Remove the pan from the heat and let the seafood cool, uncovered, for two to three minutes. Drizzle the remaining vinaigrette over the tuna and scallops and distribute among the four plates.

Steps:

  • Preheat over to 350. Toast pistachios 6-8 minutes until golden brown, tossing occasionally. Let cool & coarsely chop. Toast coriander in dry skillet over medium heat until fragrant, about 1 minute. Cool & coarsely chop. Whisk garlic, lemon juice, red pepper, coriander in large bowl, then whisk in oil & season with salt. Add carrots, toss and let sit 30 minutes. Toss with cilantro and pistachios just before serving. 1/4 C olive oil
1/2 tsp salt

  • Make the dressing by toasting the coriander seeds in a pan over medium heat until golden, then finely grind them in a mortar and pestle. Add the coriander, lemon, sugar, salt, and pepper in a bowl and whisk to dissolve sugar. Slowly whisk in the oil, and add salt and pepper to taste.
