GRILLED CHICKEN LEGS

Tender, juicy chicken legs in a delicious seasoning that are grilled for a quick and easy dinner!

2 lb chicken legs (about 8 chicken legs)
2 Tbsp olive oil
1 tsp sea salt
1/2 tsp ground black pepper
1 tsp garlic powder
1 1/2 tsp smoked paprika
1/4 tsp chili powder

Steps:

  • Preheat grill to 350 degrees F.
  • In a small bowl combine all the rub ingredients, set mixture aside.
  • Pat chicken dry with paper towel. Place chicken in a plastic resealable bag or bowl. Add olive oil and toss to coat.
  • Add spice mixture to bag or bowl and toss to coat chicken legs.
  • Place chicken legs on preheated grill over direct heat. Grill for 30 minutes, rotating every 10 minutes, or until they reach an internal temperature 165 degrees F. I actually prefer my chicken legs about 180-190 degrees so they fall off the bone and there's no bloody spots around the bone.

¼ cup olive oil
1 large lime, juiced, or more to taste
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon dried parsley flakes
½ teaspoon ground black pepper
10 skinless chicken drumsticks

Steps:

  • Combine olive oil, lime juice, garlic powder, onion powder, chili powder, oregano, parsley, and pepper in a gallon-size resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  • Let chicken marinate in the refrigerator, at least 2 hours and preferably overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Let chicken come to room temperature, about 25 minutes. Arrange on the baking sheet.
  • Roast in the preheated oven until browned, about 25 minutes. Flip chicken and baste with juices; continue cooking until browned on the second side, 10 to 15 minutes more.
  • Cover chicken with aluminum foil. Let stand before serving, about 5 minutes.

6 whole chicken legs, skinned
4 carrots, sliced thick
1 large onion, cut into 1/8-inch pieces
1 navel orange, cut into 1/8ths
1 tablespoon herbes de Provence
1 teaspoon seasoned salt or Cavender's Greek seasoning
2 tablespoons honey
1 tablespoon Dijon mustard
2 tablespoons olive oil, or to taste
Hot pepper sauce, to taste
2 zucchini, sliced

Steps:

  • Preheat oven to 350 degrees.
  • Arrange chicken in an oiled baking dish and surround with the carrots, onion and orange. Sprinkle the chicken and vegetables with the herbes de Provence and seasoned salt.
  • In a small bowl combine the honey and mustard and brush the mixture over the chicken. Drizzle the chicken and vegetables with the oil and sprinkle with hot pepper sauce. Bake, covered with foil, basting occasionally, for 45 minutes. Uncover, add zucchini, and bake for an additional 20 minutes or until juices from chicken run clear and vegetables are tender. If desired, run under a preheated broiler about 4 inches from the heat until golden.

CORIANDER AND LIME CHICKEN

The marinade contains lime juice, which tenderizes the chicken. after more than a few hours though, the meat fibres canbecome so soft that the chicken literally falls apart, which means that this dish is not suitable for overnight marinating.

6 cloves garlic
4 tablespoons fresh coriander leaves, plus
extra fresh coriander, to garnish
2 teaspoons black peppercorns, coarsely ground
2 teaspoons caster sugar
2 limes, juice of
2 teaspoons Thai fish sauce
1 tablespoon soy sauce
1 tablespoon sunflower oil
4 boneless skinless chicken breasts

Steps:

  • Finely chop the garlic and corriander then mix in the peppercorns, sugar, lime juice, fish sauce, soy sauce and sunflower oil until well blended.
  • Place the chicken breasts in the marinade and set aside for 1-2 hours, turning from time to time.
  • Preheat a heavy based non-stick and cook the chicken for 7-8 minutes on each side until the chicken is cooked through and golden brown.
  • Serve hot or cold with a pasta salad, garnished with corriander leaves.

LIME & CORIANDER CHICKEN

Everyone will think you've used chilli, but the fieriness of this dish is simply crushed black pepper

1 medium chicken (about 1.6kg/3lb 8oz)
3 garlic cloves
2 tbsp black peppercorn
juice 2 limes , plus 1 lime cut into wedges, to serve
bunch of coriander , few nice sprigs reserved, the rest finely chopped

Steps:

  • First, spatchcock the chicken so that it will sit flat on the barbecue. All this means is using a pair of kitchen scissors or a sharp kitchen knife to cut down either side of the parson's nose to completely remove the backbone. Then, place the chicken, breast side up, on a chopping board and push down hard to flatten with your hands. Use a sharp knife to make lots of deep slashes in the chicken, about three in each breast and two in each leg.
  • In a mortar and pestle, crush the garlic and peppercorns together to a grey, mushy paste. Stir the lime juice into the paste, then the chopped coriander. Put the chicken in a dish and massage the marinade into the chicken. Cover with cling film and refrigerate for at least 2 hours, but preferably overnight.
  • To cook the chicken, fire up the barbecue. When the flames die down and the coals are hot and glowing, lay the chicken on the barbecue, skin side up, and sprinkle with salt. You will be tempted to keep prodding it and lifting it up, but leave it alone. After 25 mins, the chicken will look like it's cooked through, but flip it over and give the skin side 10 mins to brown. Lift the chicken onto a chopping board and leave to rest for a few minutes.
  • You can now carve conventionally but I like to get a cleaver and chop it straight down into thick slices. Pile it up on a platter and serve scattered with fresh coriander and lime wedges.

2 tablespoons honey (clear)
2 tablespoons cilantro (coriander chopped)
1 lime (zest and juice of)
8 chicken drumsticks

Steps:

  • Mix the honey with the coriander (cilantro) and stir in the lime zest and juice.
  • Add the chicken drumsticks and mix well, cover and chill for at least 1 hour.
  • Heat the grill (broiler).
  • Grill (broil) the chicken drumsticks, turning and brushing frequently with the marinade for about 25 minutes or until cooked through (to check, pierce the drumsticks at its thickest part, next to the bone, the juices should run clear), timing could depend on size of drumsticks too.
