Great for brunch and special occasions. This recipe can be made ahead and refrigerated up to 12 hours before baking. Try omitting the mushrooms and tomatoes and adding fresh spinach and canned artichokes and 1/2 cup Swiss cheese for a different flavor.

1 lb Jimmy Dean sausage (regular)
10 eggs, lightly beaten
3 cups milk
2 teaspoons dry mustard
1 teaspoon salt
6 cups bread cubes
2 cups sharp cheddar cheese, shredded
1/2 teaspoon black pepper
1/2 cup mushroom, sliced (optional)
1 medium tomatoes, seeded and chopped (optional)
1/2 cup green onion, thin-sliced (optional)

Steps:

  • Preheat oven to 325°F.
  • In a large skillet, cook sausage over medium-high heat, stirring frequently until throughly cooked and no longer pink.
  • In a large mixing bowl, combine eggs, milk, mustard and salt; stir well.
  • Distribute half of the bread evenly in a buttered 9 by 13x2-inch baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half of the optional ingredients.
  • Repeat layering using remaining bread, pepper, cheese, sausage and optional ingredients.
  • Pour egg mixture evenly over casserole; Bake uncovered for 55 to 60 minutes, or until eggs are set; tent with release foil if top begins to brown to quickly.

2 1/2 cups seasoned croutons
14 ounces Jimmy Dean sausage
8 ounces pre-shredded cheddar cheese
4 eggs
3/4 teaspoon dry mustard
2 1/2 cups milk
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk

Steps:

  • Place croutons in greased 9x13 pan.
  • Brown sausage and drain, place over croutons.
  • Add cheese on top of sausage.
  • Beat eggs with mustard and 2 1/2 cups milk and pour over. Refrigerate overnight.
  • Dilute soup with 1/2 cup milk and pour over before baking 350 degrees for 1 1/2 hours.
  • Let stand 5 to 10 minutes before cutting.

2 1/2 cups croutons (pick a flavor you like)
2 cups cheddar cheese
2 lbs Jimmy Dean sausage, browned and drained
8 eggs
3/4 teaspoon dried mustard
2 1/2 cups milk
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup sour cream

Steps:

  • Place croutons on bottom of greased 9 by 13 pan.
  • Top croutons with cheese and browned sausage.
  • mix together dry mustard, 2 1/2 cups milk, and eggs.
  • Refrigerate overnight.
  • In the morning, mix together- cream of mushroom soup, 1/2 cup milk and 1/2 cup sour cream. Pour over egg mixture.
  • Cover with Reynolds wrap and Bake at 350 degrees for 90 minutes.

Crescent rolls, Jimmy Dean hot breakfast sausage, onions, peppers, salsa and two types of cheese make this a favorite breakfast or brunch dish-- with a Southwest flair! Can be made ahead. Serve warm or at room temperature, accompanied with sour cream and salsa or picante sauce. Deelish!

1 (8 ounce) can crescent rolls
1 lb bulk pork sausage (Jimmy Dean Hot Breakfast Sausage)
1/2 cup white onion, chopped
2 (4 ounce) cans diced green chili peppers
1/4 cup salsa
1/4 teaspoon garlic powder
1 1/2 cups monterey jack pepper cheese, grated
1 1/2 cups sharp cheddar cheese, grated
1/4 cup green onion, chopped
3 tablespoons cilantro, snipped
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
6 -8 eggs
sour cream, to serve
salsa, to serve (or picante sauce)

Steps:

  • Butter a 13 by 9-inch glass baking dish.
  • Unroll the rolls and press into bottom of baking dish, sealing perforations and coming halfway up the sides to form a crust.
  • In a large skillet, cook the sausage over medium-high heat, stirring to break up the meat, until browned. Add the onions and green chile peppers, and cook, stirring, for 4 minutes. Add the salsa and garlic powder, and cook, stirring, for one minute. Remove from heat.
  • Pour sausage mixture over the rolls.
  • In a large bowl, stir together the two cheeses with the green onions and the cilantro; sprinkle evenly over the sausage.
  • At this point you may continue, or cover & refrigerate casserole overnight.
  • In a large bowl, whisk together the eggs with the salt and black pepper; and pour over the top of the casserole.
  • Preheat oven to 350 degrees F.
  • Cover casserole with foil and bake for 30 minutes; remove cover and bake for another 10 to 15 minutes until golden brown and bubbly.
  • Remove from oven and let rest 10 minutes before serving. Cut into squares and serve warm or at room temperature, accompanied with sour cream and salsa or picante sauce.
