Steaming helps preserve more of these nutrients and doesn't require any added fat or other ingredients. Plus, it's much faster than baking. Besides serving them with toppings, steamed sweet potatoes are a great staple to have on hand for adding to salads and soups or enjoying as a quick and simple side dish.

2 medium sweet potatoes (about 1/2 pound each), scrubbed (see Cook's Note)
Toppings, such as hot honey and chopped pecans; salted butter and chili powder; creme fraiche, chives, salt and pepper; herbed butter; salted butter and brown sugar; salsa and sharp Cheddar; toasted pepitas, cilantro, salt and pepper, optional

Steps:

  • Place a steamer basket or colander in a large pot. Add water until it reaches 1 inch below the bottom of the basket. Put the sweet potatoes in the steamer basket and bring the water to a boil. Once the water is boiling, cover the pot, reduce the heat to medium and allow the potatoes to steam until you can insert a paring knife without resistance, about 30 minutes. Using tongs, remove the potatoes from the steamer basket and let rest for 5 minutes. Split potatoes in half lengthwise, and serve as is or with preferred toppings if using.

2 pounds potatoes, cut into 1 1/2-inch chunks

Steps:

  • Prepare the potatoes for cooking: Chop the potatoes into 1 ½-inch pieces. Pour the water into the inner pot of the pressure cooker. Put the potatoes in the steamer basket, then lower it into the pot.
  • Pressure cook the potatoes: Secure the lid on the pressure cooker and make sure it's set to its "sealing" position. Select the "Pressure Cook" or "Manual" setting, and set the cooking time to 3 minutes at high pressure. If your pot features an automated pressure release, set it for a quick release. (The pot will take about 10 minutes to come up to pressure.)
  • "Quick release" the pressure: When the cooking program finishes, perform a quick pressure release by moving the pressure vent to its "venting" position or by pressing the pressure release button (depending on your Instant Pot model).
  • Remove the potatoes and check for doneness: When the pressure has fully released, open the pot. Use a pair of heat-safe mitts to remove the steamer basket of potatoes. The potatoes are done when they are fork-tender. If not using the potatoes right away, let them cool completely and then, refrigerate in a covered container. Potatoes will keep for about 1 week.

When it's too hot to boil or steam potatoes for potato salad or home fries, use the Instant Pot. It's faster and your kitchen will stay cool ! I use russet potatoes but you could use any potato you enjoy. For smaller potatoes you will want to decrease the cook time a bit.

Steps:

  • 1. Scrub the potatoes. Poke with the tip of a knife or a skewer then stand them up in your steamer basket. Put a cup of water in the Instant Pot, set the steamer basket in. Secure the lid onto the Instant Pot and set the vent to Sealing. Press steam .. set the time for 13 minutes and let it do it's magic.
  • 2. Let it do a natural release for about 10 minutes then do a quick release. Remove lid, remove steamer basket and let the spuds cool down.
  • 3. Use them for potato salad or even fried potatoes .. they will get a very nice crisp exterior and make your breakfast extra tasty !

1 1/4 pounds small red-skinned potatoes, halved or quartered
4 tablespoons unsalted butter
Kosher salt and freshly ground pepper
Four 5- to 6-ounce skin-on center-cut salmon fillets (3/4 to 1 inch thick)
1/4 teaspoon paprika
1/2 teaspoon grated lemon zest, plus lemon wedges for serving
4 cloves garlic, minced
4 cups packed mixed baby spinach and arugula (about 3 1/2 ounces)

Steps:

  • Put the potatoes in the bottom of an Instant Pot. Add 1 cup water, 2 tablespoons of the butter, 1/2 teaspoon salt and a few grinds of pepper. Place the pot's steam rack over the potatoes.
  • Rub the top and sides of the salmon fillets with the paprika and lemon zest and season generously with salt and pepper. Place skin-side down on the rack. Put on the lid, making sure the steam valve is in the sealing position, and set the cooker to high pressure for 3 minutes. When finished, carefully turn the steam valve to the venting position to release the pressure.
  • Remove the salmon and rack and set the cooker to saute at normal heat. When the potatoes start sizzling, add the garlic and cook, stirring, until softened, 1 to 2 minutes; stir in the remaining 2 tablespoons butter and season generously with salt and pepper. Smash the potatoes with a fork or wooden spoon until chunky.
  • Turn off the cooker. Add the mixed greens to the potatoes and stir until wilted, 1 to 2 minutes. Season with salt and pepper. Divide the salmon and potato mixture among plates. Serve with lemon wedges.

It's quick and easy to cook whole potatoes in the Instant Pot. Use the tender, steamed potatoes for mashed potatoes, potato salad, snacking, fries in the air fryer and any recipe that calls for pre-cooked potatoes.

5 pounds whole potatoes (washed)

Steps:

  • Wash and scrub potatoes well. Remove any sprouts or bad spots.
  • Place wire trivet or steamer basket in Instant Pot insert.
  • Add 1 cup of water to Instant Pot.
  • Place all potatoes on top of trivet/steamer basket, layering if necessary.
  • Cover with Instant Pot lid, turn vent to "Sealing". Then, press "Steam" button and decrease time based on how large your potatoes are. For medium gold potatoes (pictured), steam for 15 minutes.
  • Let pressure naturally release for 10 minutes. Then, open vent with a utensil (be careful of the hot steam!). Potatoes are ready! If you prepared these for later use, allow potatoes to cool, then refrigerate for up to 5 days.
