A slightly sweet, melt-in-your-mouth meatloaf with a variety of always-on-hand ingredients. It's super easy to make and a real crowd-pleaser. This recipe is always requested at family functions and parties.

1 egg, lightly beaten
¼ cup ketchup
2 tablespoons barbeque sauce
2 tablespoons steak sauce
1 teaspoon Worcestershire sauce
¼ cup brown sugar
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried parsley
½ teaspoon seasoned salt
salt and pepper to taste
1 pound ground beef
⅔ cup dry bread crumbs
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, stir together the egg, ketchup, barbeque sauce, steak sauce, Worcestershire sauce, brown sugar, onion, and garlic, seasoned salt, and salt and pepper. Mix in ground beef, bread crumbs, and Cheddar cheese. Spread into the loaf pan.
  • Bake 55 minutes in the preheated oven, to a minimum internal temperature of 160 degrees F (70 degrees C).

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

After years of searching, I finally found the best meatloaf recipe, courtesy of Fine Cooking magazine. I actually typically make this without the ground veal and instead use 1 pound of ground beef and 1 pound of ground pork.

1 tablespoon oil
1/2 cup onion, finely chopped
1 1/2 teaspoons garlic, minced
3/4 lb 85% lean ground beef
3/4 lb ground veal
3/4 lb ground pork
1/2 cup tomato ketchup
1 tablespoon Dijon mustard
1 1/2 teaspoons Worcestershire sauce
3/4 cup breadcrumbs
1 egg
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
1/4 cup flat leaf parsley, finely chopped
8 slices bacon, raw

Steps:

  • Heat the oven to 350.
  • In a small skillet, heat the oil and saute onions for 4-5 minutes. Add garlic and saute another 1 or 2 minutes.
  • In a large mixing bowl, combine all the remaining ingredients except for the bacon and add the onion mixture. Mix until ingredients are just combined - do not overmix.
  • Turn out the meat mixture onto a baking sheet covered with parchment paper or foil and form into slightly oval loaf. OR, divide into 4 equal mini-loaves.
  • Wrap strips of bacon around the meatlaof, tucking the ends under the loaf.
  • Bake the meatloaf for about 50 to 60 minutes for a larger loaf or 25 to 35 for mini loaves. Before slicing, let the meatloaf rest for 10 minutes to let the juices redistribute.
