HIDDEN VEGGIE MEATBALLS
Our 30-minute meatballs are packed with carrots and zucchinis. Serve over spaghetti with your favorite marinara sauce and watch your kids gobble them down.

Steps:
- Heat oven to 400°F. In large bowl, mix all ingredients. Shape mixture into 1-inch balls. Place in ungreased 15x10x1-inch pan.
- Bake about 20 minutes or until no longer pink in center and meat thermometer inserted in center of meatball reads 160°F.
- Serve meatballs over spaghetti with marinara sauce, sprinkled with chopped fresh basil, if desired.

Steps:
- Steam or roast carrots and peppers. Blend with a little water if necessary until a smooth puree forms. Set aside.
- In a large saucepan, saute the onions in the olive oil over medium heat until translucent.
- Add garlic and cook another 1-2 minutes until fragrant.
- Pour in cans of tomatoes and 2 cups of veggie puree.
- Simmer at least 20-30 minutes, longer is better.

- Place shredded carrot and zucchini on a clean towel and wring out as much liquid as possible.
- Place strained carrot and zucchini in a bowl and add ground beef, ground pork, parmesan, onion, parsley, salt, pepper, garlic powder, breadcrumbs, and eggs. Mix until just combined.
- Grab about a ¼ cup (85 grams) of the mixture and roll into a ball.
- Pan-fry the meatballs in a large pan over medium-high heat until all sides are golden brown, about 10 minutes, then add the marinara sauce and simmer for 10-15 minutes. Or, can bake the meatballs on a parchment-lined baking sheet at 350˚F (180˚C) for 30-35 minutes, flipping after the first 15 minutes. Warm up marinara sauce and serve on the side.
- Serve the meatballs with cooked spaghetti and Parmesan cheese.

- Heat the oil in a large non-stick saucepan and gently cook the onion, celery, carrots and leek until soft, about 20 mins. Add the peppers and cook for 10 mins more, then tip in the tomatoes, sugar and vinegar. Simmer for at least 20 mins - the longer the better.
- Cook the pasta following pack instructions. Meanwhile, blitz the sauce with a hand blender until smooth, season and return to the heat to keep warm while the pasta cooks. Drain the pasta and toss through the sauce. Serve in bowls topped with shaved Parmesan and rocket leaves, if you like.
