1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
BROWNIE LAYER:
1/2 cup butter, melted
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup baking cocoa
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
12 Oreo cookies, crushed
8 Oreo cookies, coarsely chopped

Steps:

  • In a small bowl, beat the cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine the butter, sugars and cocoa in a large bowl. Beat in eggs and vanilla. Combine flour and baking powder; gradually add to cocoa mixture. Stir in crushed cookie crumbs., Pour into a greased 11x7-in. baking pan. Spoon cream cheese mixture over batter. Sprinkle with coarsely chopped cookies. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool completely on a wire rack. Cut into bars. Store in the refrigerator.

1/2 cup butter, softened
1 cup sugar
4 eggs
1-1/2 cups chocolate syrup
1 cup all-purpose flour
6 mint creme Oreo cookies, chopped
MINT CREAM:
1/2 cup butter, softened
2 cups confectioners' sugar
1 tablespoon 2% milk
1/4 to 1/2 teaspoon mint extract
2 drops green food coloring
Additional mint creme Oreo cookies, crushed

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in chocolate syrup, then flour, just until blended. Fold in the chopped cookies.
  • Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean (do not overbake). Cool completely on a wire rack.
  • For mint cream, in a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the milk, extract and food coloring. Frost brownies; sprinkle with crushed cookies. Cut into squares.

" JOE'S" PEPPERMINT COOKIES N CREAM BROWNIES



Tired of eating Candy-Cane Joe-Joe cookies straight out of the box? Try them in this recipe! (note: this year I've also seen peppermint Oreos, so you could use those if you don't have a Trader Joes near you). These delicious, fudge-y brownies are made with the popular candy-cane chocolate wafer cookie available at Trader Joe's during the holidays. Make these early in the day as they slice best when cooled completely.

1 cup butter
6 ounces unsweetened chocolate, chopped
3 cups sugar
1/2 teaspoon salt
2 teaspoons vanilla extract
1/8-1/4 teaspoon peppermint extract
4 large eggs, room temperature
1 2/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
3 cups roughly chopped peppermint oreos (approx 18)
1 candy cane (optional)

Steps:

  • Preheat oven to 350°F.
  • Line a 9×13-inch baking pan with aluminum foil, and grease lightly.
  • In a medium-large saucepan over low heat, melt together butter and chocolate, stirring occasionally.
  • Stir in sugar, salt and vanilla & peppermint extracts; remove from heat.
  • Whisk in eggs one at a time, waiting until each is fully incorporated before adding the next.
  • Stir in flour and cocoa powder until mixture is uniform. Stir in crushed cookies.
  • Spread batter into prepared pan.
  • If desired, crush 3-4 additional cookies finely and scatter on top of batter. You can also crush 1 candy-cane and sprinkle it on top; it will melt slightly but still be pretty and festive.
  • Bake for about 35 minutes, until a toothpick inserted into the center comes out with moist crumbs, but not coated with batter.
  • Cool brownies in pan on wire rack for 20 minutes, then lift brownies in the foil out of the pan and place on a wire rack to cool completely (at least one more hour) before slicing.

When I was eight, chocolate brownies were my life. I scoured the local stores on my Raleigh bike, looking for gainful employment to support my chocolate brownie habit. The wife of the hardware dealer took pity on me and offered me a job paying $1 an hour to iron their smalls and sheets. After two hours I had enough cash to buy a couple of brownies, plus change for some sherbet lemons on the way home. It was worth every crease!

11 3/4 tbsp/5 1/2 oz/165g butter, plus extra for greasing
7 squares/7oz/200g dark chocolate, grated or finely chopped
3 eggs
2 egg yolks
Seeds of 1 vanilla bean or 2 tsp vanilla extract
Generous 3/4 cup/5 1/2 oz/165g soft light brown sugar, solidly packed
2 tbsp all-purpose flour
1 tbsp unsweetened cocoa
Pinch of salt
5oz/154g package of Oreo cookies (about 13 cookies), broken into quarters
Confectioners' sugar, for dusting
Special equipment: 8in (20cm) square baking pan

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C) with the middle shelf ready. Grease the baking pan, then line with parchment paper with the paper overlapping the sides a little.
  • Melt the butter in a pan over medium heat. When the butter has melted, remove the pan from the heat and add the grated chocolate. Let stand for a few minutes until the chocolate goes soft, then stir together. Alternatively, you can put the chocolate and butter in bowl and melt in the microwave in 25-second blasts, stirring well each time.
  • Whisk the eggs, egg yolks, and vanilla together in a large bowl until they begin to get light and fluffy. Add the sugar in two additions, whisking between each. Pour it around the side of the egg mix so as not to knock out the air that has been whisked in to it. Keep whisking until the mixture becomes stiffer. Once the egg mixture is ready, pour the chocolate into it, again around the sides so as not to knock the air out.
  • Sift the cocoa into a large bowl and add the flour, salt, and a third of the Oreos. Stir until fully combined, then pour the mixture into the prepared pan. Scatter the remaining Oreos over the top, pressing them in slightly. Bake in the oven for 25 to 30 minutes. The middle should be very so slightly gooey.
  • Let the brownies cool in the pan. The top will sink and crack a little. Pull the brownies out using the overlapping paper and cut the brownies into squares. Dust with confectioners' sugar.
  • Cook's Note: Substitute Oreos for toasted walnuts or pecans or sprinkle the brownies with honeycomb.

  • Melt the butter in a pan. When it has melted, remove from heat and add chocolate. Leave to melt, then stir together.

265g self-raising flour
245g soft brown sugar
50g cocoa powder
1 tsp vanilla extract
110ml vegetable oil
1 ½ tbsp white wine vinegar
85g dairy-free coconut yogurt
150g vegan cookies of your choice (we used Oreos), broken into chunks

Steps:

  • Heat oven to 170C/150C fan/gas 3 and line a 18 x 30cm brownie tin with baking parchment. In a bowl mix together the flour, sugar, cocoa and ½ tsp salt. In a jug mix together 125ml water with the vanilla, oil, vinegar and yogurt. Pour the wet ingredients into the dry and mix until smooth and combined.
  • Pour the mix into the tin and smooth the top. Push the chunks of vegan biscuits into the batter, leaving some poking out of the top. (We used Oreos, which are made with dairy-free ingredients, although be aware that allergy information indicates that these may contain traces of milk.) Bake for 30-35 mins, until set but still squidgy in the middle. Leave to cool in the tin, then cut into squares.

1 box duncan hines brownie mix for 9x13 pan
2 eggs
1/4 c water
2/3 c vegetable oil
1 c crushed oreos
FROSTING
1 pkg cream cheese, softened
1/4 c butter, softened
16 oz powdered sugar
1 tsp vanilla
1/2 c crushed oreos

Steps:

  • 1. Brownies make brownie mix according to package directions, using the first 4 ingredients. Mix in oreo crumbs and bake according to package. I did mine for 25 minutes at 350.
  • 2. let brownies cool while you are setting out cream cheese and butter to soften
  • 3. Frosting mix first 4 ingredients together in stand mixer until desired consistency. I recommend pouring a little sugar in at a time so it doesn't go all over.
  • 4. spread frosting evenly over cooled brownies, then sprinkle oreo crumbs evenly over top

  • Brownies: Preheat oven to 350. Melt butter and baking sqaures in a microwave safe bowl. In the mixing bowl, cream melted butter and chocolate mixture. Add in sugar and vanilla and beat until fluffy, about 2-3 minutes. Add in eggs, beating one at a time. Add flour and stir just until combined. Fold in cookie crumbles. Pour into greased 9 x 13 baking dish (I used a 8 x 8 square cake pan). Bake for 35-45 minutes, or until just barely done. Cool before frosting. Frosting: Mix butter and powdered sugar together, adding sugar gradually to the mix. Add vanilla. Mix in milk, adding more if needed. Continue to add milk and sugar until it reaches the desired consistency. Crush Oreos and fold them into the frosting.
