STRAWBERRY LIME MOUSSE PARFAITS
Steps:
- Combine butter, sugar, lime juice and lime zest in 2-quart saucepan. Cook over medium heat, stirring occasionally, 2-4 minutes or until mixture just comes to a boil and butter is melted.
- Beat eggs in bowl with whisk. Stir small amount of hot lime mixture into eggs. Whisk egg mixture into remaining hot lime mixture. Reduce heat to medium-low. Cook, stirring constantly, 4-6 minutes or until mixture reaches 160°F and is thick enough to coat back of metal spoon. Remove from heat. Stir in vanilla. Refrigerate about 2 hours or until completely cooled.
- Beat whipping cream in bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir into cooled lime mixture.
- Assemble parfaits by breaking cookies in half. Place 2 cookie halves each in bottom of 6 parfait or serving glasses. Top with about 3 heaping tablespoons lime mixture and about 2 heaping tablespoons strawberries. Repeat layers two more times. Garnish each with 1 cookie half, if desired.

- 1. Melt butter in heavy small skillet over medium heat. Mix in brown sugar and stir until bubbling, about 1 minute or less. Mix in crumbs; stir until color deepens, about 3 minutes. Turn out onto plate and cool.
- 2. To make the Key lime cream, stir condensed milk, lime juice and lime peel in large bowl to blend (mixture will thicken). Set aside while you make sweetened whipped cream.
- 3. For whipped cream topping, beat 2 cups whipping cream in bowl until stiff peaks start to form. Add 1/4 cup powdered sugar and 1 teaspoon vanilla. Make sure the bowl and the beaters are cold. It helps if you put the bowl in the freezer and the beaters 10 minutes before you make the whipped cream.
- 4. Using electric mixer, beat cream in medium bowl until firm peaks form; fold 1 cup of whipped cream into key lime cream mixture. Save the remaining whipped cream for topping the parfaits.
- 5. Place 1/4 cup lime mousse in each of six 8- to 10-ounce wine goblets. Top each with 1 tablespoon crumb mixture, then 1/4 cup mousse. Top parfaits with remaining crumb mixture. Refrigerate at least 1 hour and up to 4 hours. Just before serving, add a generous dollop of whipped cream.
TROPICAL LIME PARFAITS
Ree's parfaits consist of layers of crumb followed by a mix of fluffy whipped cream cheese and heavy cream. The addition of coconut chips and extract, plus lime, gives the parfaits a truly tropical flavor.

- For the crumb: Combine the graham cracker crumbs, sugar, butter, coconut chips and lime zest in a bowl. Mix to combine.
- For the filling: Using an electric mixer, beat the cream cheese, heavy cream, powdered sugar, coconut extract and lime zest and juice in a large bowl until light and fluffy.
- Begin by layering 1/4 cup of the crumb in the bottom of each of 4 parfait glasses. Top each with 1/3 cup of the filling. Repeat the layers once more, then garnish with extra toasted coconut and lime zest.

- In 1-quart stainless steel or nonstick saucepan (do not use aluminum because the filling mixture will discolor), stir together soymilk, 1/2 cup sugar, the cornstarch, Key lime juice and lime peel with wire whisk until cornstarch is dissolved. Heat to boiling, stirring constantly. Boil 1 minute, stirring constantly.
- Cover surface of pudding mixture with plastic wrap to prevent skin from forming. Refrigerate 30 minutes, stirring occasionally, or until cool.
- Meanwhile, in small bowl, mix crumb mixture; set aside.
- Gently fold 2 cups whipped topping into pudding mixture. Spoon 1/4 cup pudding mixture into each of 6 small parfait glasses or dessert bowls. Sprinkle each with 1/2 teaspoon crumb mixture. Arrange 2 tablespoons strawberries over crumb mixture. Repeat layers. Top each with dollop of additional whipped topping. Serve immediately.

KEY LIME PARFAIT
Such a great dessert recipe given to me by an online acquaintance, that I actually purchased parfait glasses for this, though totally unnecessary. When I brought them to the table my father-in-law said, "Wow! Did you 'make' those?" Made me smile. : ) They were a hit, but the kid's don't like the coconut (surprise, surprise). (Cook time is chill time)

- Mix gelatin with yogurt, then fold in dessert topping.
