This glaze will dry to a hard shiny finish. Perfect as a base coat for cookies. Can be colored too; use as much food coloring as needed to create desired hue. Dries quickly.

2 tablespoons water
10 drops food coloring

Steps:

  • Stir confectioners' sugar, corn syrup, and water together. Stir in food coloring if desired. This glaze must be stirred each time you use it. If it is not stirred before each use it will dry with a mottled look instead of a solid color.

I needed an easy glaze the hardened quickly (instead of over night like so many) but one that still had good flavor. This dries hard enough to stack the cookies. Note: Make one batch at a time. It's unmanageable in anything larger. Children's water color brushes or those used for painting chocolate molds work well. 1 cup butter (no subs!)
1 large egg
2 1/2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 -5 ounces white chocolate, melted
finely chopped almonds (optional)

Steps:

  • In a large bowl using an electric mixer beat sugar and butter until light (about 5 minutes).
  • Beat in egg and vanilla.
  • In a small bowl mix together flour, baking powder and salt; add to the creamed mixture JUST to combine.
  • Divide the dough in half and gather each pieces into a ball, then flatten into a disc.
  • Wrap in plastic wrap and chill for a minimum of 2 hours or more, or freeze.
  • Set oven to 325°F (second-lowest rack).
  • Roll out one disc on a lightly floured surface to about 1/8-inch thickness.
  • Using assorted cookie cutter cut out cookies and transfer to a ungreased cookie sheet, leaving 1-inch between cookies.
  • Gather dough scraps and re-roll.
  • Repeat with remaining dough disc.
  • Bake cookies until pale golden (about 13 minutes).
  • Transfer to racks and cool.
  • Melt the white chocolate and spoon into a pastry bag (1/16-inch tip size) or just drizzle with a small spoon.

1 cup butter, softened
3 cups flour
1/2 teaspoon baking soda

1 to 2 tablespoons milk, plus 1 teaspoon milk

Steps:

  • Cookie: Combine the flour, soda and salt and toss together. Set aside. Cream the butter on high until pale yellow, scraping down the bowl frequently. Add the sugar and turn to medium speed. Beat for 2 minutes, until soft and almost white. Add the eggs and vanilla, beat about 30 seconds. Add the flour mixture and mix on low about 30 seconds. Form 2 separate pieces and wrap in waxed paper. Freeze for 20 to 30 minutes. When you're ready to roll the dough, sprinkle surface lightly with flour and sprinkle top of dough lightly as well. Roll out, add flour if you need it to keep it from sticking. Cut out shapes, place on parchment paper on cookie sheets. Bake at 375°F for 8 to 10 minutes or until barely brown on edges. Cool on rack.   • Crust:

  • *FROSTING:* Place half of the powdered sugar and the meringue powder in the bowl of an electric mixer. Whisk together well. Add flavorings and mix well. Change to paddle attachment (for stand mixer) or dough hook (for Bosch). If using a hand mixer, use the same beaters you were using before. Add remaining powdered sugar and shortening and whip for 2-3 minutes more. Note: Don't skimp on the whipping time after adding the shortening. You really need to whip it well to prevent separation later. *GLAZE:* Frosting Prep: Making Glaze Glazing is a technique that creates that super-smooth look you see on fancy cookies. Basically, "glaze" is just watered down frosting. Here is a basic how-to for making the glaze. 1. After you have colored all of your frosting, get a small container for each glaze color you will need (clean butter tubs and yogurt containers work great for this and you can throw them away when you are done!). 2. Put the desired colors of frosting in the containers by either mixing the color right in the container or squeezing it from a decorating bag. 3. Add water to the container(s) a few drops at a time, stirring after each addition. A basic rule of thumb for a good consistency is that a drop of the icing should disappear into the mass on the count of 6 or 7. This is the recipe I use to glaze cakes, cupcakes, breads, pound cakes, muffins, and even cookies, or just about any baked products you can think of. You put it on when your cake is still slightly warm and it just oozes sugary goodness. You can add the nutmeg or cinnamon or you don't have to. I've used cardamom powder before as well. Change it up if you'd like. Use vanilla or almond extract or change that up as well. Add citrus juice or zest to it if you feel the urge. It really is versatile. That is what I love about it!   • Sift powder sugar into milk mixture. Whisk slowly, until well combined, adding the nutmeg or cinnamon when the glaze is almost ready. **This is when you would add the zest if using**
  • Drizzle the glaze over the warm cake and allow to cool slightly before serving.
  • **If you're wanting to make a citrus flavored glaze, replace the milk with the juice of whatever fruit you are using as well as adding the zest of the same fruit.**
