- Combine all ingredients in a 6- or 7-qt. slow cooker. Cover and cook on high until rice and vegetables are tender, 5-6 hours. Discard bay leaves and thyme sprigs before serving. If desired, remove leaves from remaining thyme sprigs and sprinkle over soup when serving.

- Spray 4 to 6-quart slow cooker with nonstick cooking spray. Rinse rice with cold water; place in sprayed slow cooker. Add onions, mushrooms, garlic, salt, broth and water.
- Cover; cook on high setting for 3 to 4 hours.
- Add cherries, thyme and nutmeg to rice; mix gently. Cook on low setting for an additional 30 to 60 minutes or until rice is opened and tender.

Amid the duck and turkey, the oysters and persimmon pudding was "that most domestic of all cereals," wild rice, in a hearty soup. Easy enough for a weeknight, this simple recipe doesn't have to be relegated to the annual feast. Pair it with roast chicken or broiled fish, or top it with cooked Italian sausage and mushrooms to make it a meal of its own.

- Rinse and drain the rice.
- Heat the butter in a saucepan and add the onion. Cook until the onion is wilted. Add the rice and stir. Add salt and pepper to taste. Add the water or chicken broth and bring to the boil.
- Cover closely and let simmer 30 to 45 minutes or until the rice ''blooms'' and is tender. Cooking time will vary due to grain size and moisture content.

Steps:
- Put the wild rice and water in a small sauce pan.
- Bring the water to a boil, then reduce the heat to a bare simmer, cover and cook until the rice is tender, 1 to 1 1/4 hours.
- While the rice is cooking, saute the bacon until golden brown and crisp, then drain on a paper towel.
- Cut the bacon crosswise into thin julienne strips and set aside.
- When the rice is done, gently stir in the butter with a fork until melted; season to taste with salt and pepper.
- Just before serving, toss the rice with the bacon strips.
