3 ounces bacon, chopped
1 cup chopped onion
½ cup sliced celery
½ cup chopped carrots
½ cup COLLEGE INN® Fat Free & Lower Sodium Beef Broth, or red or white wine
1 (28 ounce) can CONTADINA® Crushed Tomatoes
¾ cup whole milk
Cooked pasta

Steps:

  • Brown beef, bacon, onion, celery and carrots in a large saucepan over medium-high heat until browned and crisp, about 10 minutes.
  • Add broth; simmer until evaporated, scraping browned bits from bottom of pan.
  • Stir in tomatoes and milk. Simmer over medium-low heat until sauce is thickened, about 15 minutes. Serve over pasta.

An excellent chunky pasta sauce with beef, pork, lots of vegetables and tons of flavor. Freeze any unused portions for later use. If you have fresh herbs, you may substitute 2 teaspoons chopped fresh basil for the dried basil in this recipe.

2 tablespoons olive oil
4 slices bacon, cut into 1/2 inch pieces
1 large onion, minced
1 clove garlic, minced
1 pound lean ground beef
½ pound ground pork
½ pound fresh mushrooms, sliced
2 carrots, shredded
1 stalk celery, chopped
1 (28 ounce) can Italian plum tomatoes
6 ounces tomato sauce
½ cup dry white wine
½ cup chicken stock
½ teaspoon dried basil
½ teaspoon dried oregano
salt and pepper to taste
1 pound pasta

Steps:

  • In a large skillet, warm oil over medium heat and saute bacon, onion and garlic until bacon is browned and crisp; set aside.
  • In large saucepan, brown beef and pork. Drain off excess fat. Stir in bacon mixture, mushrooms, carrots, celery, tomatoes, tomato sauce, wine, stock, basil, oregano, salt and pepper to saucepan. Cover, reduce heat and simmer one hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Serve sauce over hot pasta.

Steps:

  • Combine sausage, onion and garlic in a large skillet. Cook over medium-high heat 4 to 5 minutes or until sausage is no longer pink inside, stirring to break up sausage.

  • Bring to a boil. Reduce heat to low; cook, uncovered, 30 minutes. Serve over hot cooked pasta.

1 (6 ounce) can CONTADINA® Tomato Paste, divided
1 egg
2 teaspoons dried basil, divided
2 teaspoons dried oregano, divided
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon pepper
1 ½ cups fresh bread crumbs*
½ cup grated Parmesan cheese
½ cup golden raisins, coarsely chopped
1 ¼ pounds lean ground beef or ground turkey, 93% lean (not turkey breast)
2 (14.5 ounce) cans CONTADINA® Diced Tomatoes, undrained
1 teaspoon sugar
½ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with foil; coat with cooking spray.
  • Combine 1/2 can tomato paste, egg, 1 tsp. each basil and oregano, onion powder, garlic powder and pepper in a large bowl. Stir in bread crumbs, Parmesan and raisins.
  • Mix in turkey with hands or a large spoon until mixture is combined well. Shape into 16 meatballs, about 1 1/2-inches in diameter. Bake 20 minutes or until browned and cooked through (165 degrees F internal temperature).
  • Meanwhile, stir together remaining tomato paste, diced tomatoes, 1 tsp. each oregano and basil, sugar and salt in a large saucepan. Bring to a boil; reduce heat and simmer, uncovered, 10 minutes. Add baked meatballs to sauce and simmer 5 minutes for flavors to blend. Serve meatballs and sauce over pasta with Parmesan cheese, if desired.
