- Combine beans and peas; place 3 cups in each of four large resealable plastic bags or glass jars. Set aside. , In each of four snack-size resealable plastic bags, place three bouillon cubes, 3 tablespoons chives, 1 teaspoon savory, 1/2 teaspoon cumin, 1/2 teaspoon pepper and one bay leaf. Seal bags. Yield: 4 batches., To prepare soup: Place contents of one bag of beans in a Dutch oven; add 7 cups water. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand for 1 hour. , Drain beans and discard liquid. Add remaining water and contents of one seasoning bag. Bring to a boil. Reduce heat; cover and simmer, stirring occasionally, until beans are tender, about 1 hour., Add tomatoes, salt and, if desired, pepper sauce. Simmer, uncovered, for 20 minutes. Discard bay leaf.

WILD MUSHROOM SOUP WITH VEGETABLE CONFETTI

Steps:
- Cut off dark green tops from leeks and reserve for soup. Cut white and pale green sections lengthwise in half. Rinse any dirt from leeks with cold water. Cut halves into 1-inch pieces. Place in 8- to 10-quart pot. Add chicken wings.
- Add water, carrots, onion, thyme, peppercorns and bay leaves to pot. Bring to boil. Reduce heat to medium. Simmer 2 hours 15 minutes, occasionally skimming foam from surface. Strain stock through fine sieve into large bowl.
- Chill stock until fat hardens on surface, about 2 hours. Spoon off fat and discard. Measure stock. If necessary, simmer in large saucepan until reduced to 8 cups. (Can be made ahead. Cover and refrigerate up to 2 days or freeze up to 2 weeks.)
- To make wild mushroom soup:
- Bring 1/2 cup stock to simmer in saucepan. Add saffron; set aside to steep.
- Heat oil in heavy large saucepan over medium-low heat. Add shallots and garlic; stir 1 minute. Add 1/3 of wild mushrooms and all of white mushrooms. Sauté until mushrooms release liquid, about 8 minutes. Add curry powder; sauté until mushrooms are tender, about 4 minutes. Add saffron mixture and 6 cups stock. Simmer until mushrooms are tender, about 15 minutes. Remove from heat.
- Puree cooked mushrooms and 1 cup mushroom broth in processor until almost smooth. Return mushroom puree to saucepan with broth. Simmer soup 15 minutes. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover soup loosely with foil and refrigerate.)
- Finely dice enough of green leek tops reserved from stock to measure 1/3 cup. Cook leek, carrot and turnip in saucepan of boiling salted water until tender, about 1 minute. Drain. Refresh under cold water; drain. (Vegetable confetti can be made up to 2 hours ahead. Pat dry; cover and let stand at room temperature.)
- Melt butter in large skillet over medium-high heat. Add remaining wild mushrooms; sauté until tender, about 8 minutes. Season with salt and pepper.
- Rewarm soup. Ladle into 4 shallow bowls. Top with sautéed mushrooms and vegetable confetti and serve.
CONFETTI LENTIL SOUP
Lentil soup is one of my favorites, but my husband has not been a fan in the past. This recipe added the ground beef, and beef flavoring and he thought that was a great improvement. This is great with a big skillet of buttermilk cornbread, and a side salad.

- 1. Use a 6 qt soup pot; melt the butter; add the onions, carrots, celery and garlic and cook for about 5 minutes, or til the onions are getting soft remove from the pot.
- 2. Add beef to the same pot, and brown well. Drain fat from the pot and add vegetables back to the pot.
- 3. Add the tomatoes, tomato sauce and the "beef flavor" package that comes in the lentils and the onion & herb and the Southwest Chipotle seasoning; stir in, and then simmer about 5 minutes.
- 4. Add the lentils, water and beef broth; bring to a rolling boil; cover and simmer for 30 minutes. Add Salt & pepper, if needed, to taste; add the cooked orzo, stir and serve.
POTATO SAUSAGE/CHRISTMAS/CONFETTI SOUP
My family's Christmas Eve food tradition is potato soup for supper. This is my very favorite. Made "Christmas Soup" by parsley and red pepper; made Confetti Soup by parsley and minced red, orange, yellow and green peppers; I'll try purple too the next time I make it.

- Simmer the potatoes, onion, salt and water for 20 to 30 minutes until the potatoes are very tender. Do not drain. Mash it all up in the pot.
- In the meantime, cook the sage sausage in a skillet, breaking up large pieces. Drain fat.
- Add the milk, cream, sage and the cooked sausage to the potato mixture. Combine, stirring well to incorporate the additions.
- Heat 5-10 minutes.
- For Christmas soup, very thinly slice red pepper. For Confetti soup, mince various colors of bell peppers.
- Add parsley and bell pepper to soup; cook until peppers are just tender.

- 1. Heat oil in a large pot over medium-high heat. Add onion, garlic, bell peppers, carrots and celery (add jalapeño if spicy soup is desired). Cook stirring occasionally, until softened, about 12 minutes. Add chili powder and cumin. Saute for another 3 minutes.
- 2. Stir in stock and beans, bring to a boil. Reduce heat to low and simmer for 25 minutes, stir occasionally. Remove two cups of soup and puree in a blender or food processor. Stir puree back into pot and cook for 5 more minutes. Season with salt and pepper.
- 3. Serve in bowls topped with a spoon of yogurt/sour cream and sprinkle of cilantro. *Don't like yogurt/sour cream? Add cheese instead.

- In a microwave-safe 3-qt. baking dish, combine carrots, rutabaga, celery, broccoli, cauliflower, onion, water and butter if desired.
