Rainbow Jello is a local dessert that many of us grew up eating in Hawaii! Popular at family gatherings and potluck parties and sold at many markets and delis, Rainbow Jello is loved by all! It is fun to make (requires a bit of patience), and even more fun to eat ^_^

4 packages Jell-O (blue, green, yellow, and red)
6 envelopes Knox Unflavored Gelatin
1 cup sweetened condensed milk

Steps:

  • Prepare the mixture for the milk layers. Mix 1 cup sweetened condensed milk with 1 cup of hot water. Set aside.
  • In another bowl, mix 2 envelopes Knox Unflavored Gelatin with ½ cup cold water. Mix to dissolve. Add ½ cup hot water to the gelatin mixture and mix again.
  • Combine the gelatin mixture with the sweetened condensed milk mixture. Stir to mix evenly and set aside.
  • Now we make the layers. Grease a 9x13 pan (or can use two smaller pans) on the bottom and sides.
  • Layer 1: Combine the blue Jell-O and 1 envelope Knox Unflavored Gelatin in a bowl. Mix. Pour in 1 ½ cups hot water. Stir until evenly dissolved. Pour into the grease pan. Refrigerate for 30 minutes.
  • Layer 2: Pour 1 cup of the sweetened condensed milk mixture over the blue Jell-O layer. Refrigerate 20 minutes.
  • Layer 3: Combine the green Jell-O and 1 envelope Knox Unflavored Gelatin in a bowl. Mix. Pour in 1 ½ cups hot water. Stir until evenly dissolved. Pour the mixture over Layer 2. Refrigerate for 20 minutes.
  • Layer 4: Pour 1 cup of the sweetened condensed milk mixture over the green Jell-O layer. Refrigerate 20 minutes.
  • Layer 5: Combine the yellow Jell-O and 1 envelope Knox Unflavored Gelatin in a bowl. Mix. Pour in 1 ½ cups hot water. Stir until evenly dissolved. Pour the mixture over Layer 4. Refrigerate for 20 minutes.
  • Layer 6: Pour 1 cup of the sweetened condensed milk mixture over the yellow Jell-O layer. Refrigerate 20 minutes.
  • Layer 7: Combine the red Jell-O and 1 envelope Knox Unflavored Gelatin in a bowl. Mix. Pour in 1 ½ cups hot water. Stir until evenly dissolved. Pour the mixture over Layer 6. Refrigerate for 20 minutes.
  • Cut into squares. Eat and enjoy ^_^

Why make a plain ol' fruit pie when you could make this fun and refreshing Confetti Pie? Shredded paper not required; we used lemon gelatin cubes!

2 cups boiling water, divided
1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
1 cup cold water, divided
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
2 cups thawed COOL WHIP Whipped Topping
1 ready-to-use graham cracker crumb crust (6 oz.)

Steps:

  • Add 1 cup boiling water to lemon gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in 1/2 cup cold water. Pour into 8-inch square pan. Refrigerate 4 hours or until firm.
  • Stir remaining boiling water into orange gelatin mix in large bowl 2 min. until completely dissolved. Stir in remaining cold water. Refrigerate 20 min. or until slightly thickened.
  • Cut lemon gelatin into 1/2-inch cubes or decorative shapes. Add to orange gelatin along with the COOL WHIP; stir gently until blended. Refrigerate until thick enough to mound; pour into crust. Refrigerate 4 hours or until firm.

This is a very easy pie to make, and it is wonderful for hot summer days. Use pineapple tidbits or chunks.

1 (14 ounce) can sweetened condensed milk
½ cup lemon juice
1 (8 ounce) container frozen whipped topping, thawed
2 (11 ounce) cans mandarin oranges, drained
1 (8 ounce) can pineapple tidbits, drained
2 (9 inch) prepared graham cracker crusts

Steps:

  • In a large bowl, beat together condensed milk and lemon juice. Beat in whipped topping. Stir in well drained fruit. Beat, beat, beat until mixture looks like confetti.
  • Pour filling into graham cracker crusts, and chill for at least 4 hours.

JELL-O® POKE CAKE

An old Southern recipe passed down through my grandmother. You can vary the flavor of gelatin used in order to get a specific color for any holiday, e.g. lime for St. Patrick's day. You can top this cake with berries, sprinkles, or any topping of your choice.

1 (15.25 ounce) package yellow cake mix
1 cup water
3 eggs
⅓ cup vegetable oil
¼ cup cold water
1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
¼ cup boiling water
1 (8 ounce) container whipped topping (such as Cool Whip®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 24 to 29 minutes. Let cool completely, at least 30 minutes.
  • Pour cold water into a bowl. Sprinkle gelatin mix on top. Let stand until softened, about 1 minute. Add boiling water and stir constantly until granules are completely dissolved.
  • Poke holes all over the cake using a fork. Pour gelatin mix into the holes. Refrigerate cake until gelatin is set, up to 6 hours.
  • Spread whipped topping over cake.

2 round white cake layers with multicolored sprinkles (9 inch)
2 cups boiling water, divided
1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
1 pkg. (3 oz.) JELL-O Raspberry Flavor Gelatin
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
2 Tbsp. multi-colored sprinkles

Steps:

  • Place cakes, top sides up, in clean 9-inch round pans. Pierce with large fork at 1/2-inch intervals.
  • Add 1 cup boiling water to each flavor dry gelatin mix in separate small bowls; stir 2 min. until completely dissolved. Pour lemon gelatin slowly over half of each cake. Pour raspberry gelatin over remaining cake. Refrigerate 3 hours.
  • Dip bottoms of cake pans in warm water 10 sec.; unmold 1 cake layer on plate. Spread with 1 cup COOL WHIP. Unmold second cake layer; carefully place on first cake layer, making sure colors don't line up. Frost top and side of cake with remaining COOL WHIP. Refrigerate 1 hour. Top with sprinkles just before serving.
