2 medium sweet orange peppers, chopped
2 medium ripe avocados, peeled and cubed
1 container (10-1/2 ounces) cherry tomatoes, halved
1 cup fresh or frozen corn, thawed
1/2 medium red onion, finely chopped
DRESSING:
1/4 cup seasoned rice vinegar
3 tablespoons lime juice
2 tablespoons olive oil
1/2 cup fresh cilantro leaves
2 garlic cloves, halved
2 teaspoons sugar
1/2 teaspoon kosher salt
1/4 teaspoon pepper

Steps:

  • Place the first 5 ingredients in a large bowl. Place dressing ingredients in a blender; cover and process until creamy and light in color. Pour over vegetable mixture; toss to coat. Refrigerate, covered, up to 3 hours.

Steps:

  • Combine all vegetables in large bowl. (Can be prepared 4 hours ahead. Cover and refrigerate.) Toss salad with enough Ranch Dressing to coat. Season to taste with salt and pepper and serve.

1 1/2 cups arborio rice, cooked
1/2 English cucumber, peeled & cut into 1/4-inch cubes
1 cup carrot sticks
1 cup frozen tiny peas
2 tablespoons yellow bell peppers, cut into 1/4-inch pieces
4 ounces pimiento, drained
1/2 cup prepared Italian dressing
2 tablespoons rice wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1 leaf lettuce, washed & drained
carrot curls (optional)

Steps:

  • Combine all ingredients except the lettuce. Allow to chill for at least 2 hours or longer.
  • To serve, fluff salad with salad tongs, and spoon onto salad plates lined with lettuce leaves. Garnish with carrot curls, if desired.

1 fresh Thai or Serrano chile, finely minced
1 lemon, juiced
2 limes, juiced
2 tablespoons fish sauce
1 tablespoon white sugar
½ cup roasted peanuts, chopped
¼ cup cilantro leaves, chopped

Steps:

  • Combine tomato, beans, cucumber, and papaya in a large bowl. Toss with garlic and chile pepper.
  • Stir together lemon juice, lime juice, fish sauce, and sugar in a small bowl. Pour over papaya mixture and toss. Sprinkle peanuts and cilantro on top and serve.

This cucumber salad is lower in fat than the one that I grew up with, but it's packed with flavor. Very good during the summer on a hot day on the side of pretty much anything you could possibly want to eat. A cook out must.

2 large cucumbers, peeled, seeded and diced
1 yellow bell pepper, chopped
1 medium red onion, diced
1/4 cup garlic, minced
2 teaspoons olive oil
3 tablespoons vinegar
3 teaspoons sugar
2 -3 tablespoons sweet chili sauce (or to taste)
1/2 cup peanuts, chopped (optional)

Steps:

  • Heat the oil in a pan and fry the garlic over medium heat until crispy, set aside to cool.
  • Mix the vinegar and sugar together.
  • In a bowl, toss together the chopped onion, bell pepper, and cucumbers.
  • Pour the vinegar/sugar mixture and the chili sauce over the salad and toss.
  • Add the cooled garlic and toss.
  • Upon serving, sprinkle the chopped peanuts over the salad
  • Enjoy!
