COMPANY'S COMING PASTA CASSEROLE FOR A CROWD
Steps:
- Cook macaroni as directed on package; drain well and set aside. Preheat oven to 350F degrees. In a large frying pan, in batches if necessary, brown ground beef, then transfer to a very large pot. Stir in raw onions, garlic powder, tomatoes, spaghetti sauce, mushrooms and their liquid. Bring to a boil, then simmer, stirring occasionally, for 20 minutes or until onions are tender. Remove from heat. In a large-sized roaster (the kind you'd do a turkey in), spread half the macaroni, then top with half the meat sauce. Top that with half the sour cream, then half the sliced cheddar. Now top that with the remaining macaroni, then the remaining meat sauce, then the remaining sour cream, then the remaining cheddar. Top with all the mozzarella. Cover roasting pan and bake in preheated oven for 75 minutes, or until hot and bubbling. Remove cover and, if cheese hasn't completely melted, let bake for a few more minutes until it has.
COMPANY'S COMING CASSEROLE
Steps:
- In a large skillet, brown beef with onion. Drain any grease. Season with garlic salt and pepper. Stir in tomato sauce, Italian seasoning, sugar and wine or water. Cook for a few minutes and remove from heat.
- Use a mixer to beat together the cream cheese, sour cream and cottage cheese.
- Spoon 1/2 of the noodles into a 9 x 13" casserole dish that has been sprayed with cooking spray. Cover noodles with the cheese mixture, then the rest of the noodles. Pour the meat-tomato mixture over the top. Sprinkle with parmesan cheese, croutons and then dot the top with butter.
- Bake in a preheated 350 degrees F oven for 35 to 45 minutes.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a greased roasting pan. Stir in the noodles, corn, peas and mushrooms., In a large saucepan, combine 2-1/2 cups cheese with the remaining ingredients. Cook and stir over low heat until cheese is melted. Pour over noodle mixture and mix well. Sprinkle with remaining cheese. , Bake, uncovered, at 350° for 30 minutes or until heated through.

COMPANY'S COMING LAYERED ZITI CASSEROLE
I like to make this for family get-togethers. It's nice because you can make it up ahead of time and keep it in the fridge until you're ready to cook. In fact, I think it tastes better if you do!

- Grease a large deep casserole dish or lasagna pan. Bring a large pot of water to a boil, adding 1 t kosher salt and 1 t olive oil. Add pasta and cook 8 minutes. Pasta should still be firm. Drain.
- Fry onion, garlic, ground beef and Italian sausage in remaining olive oil over medium high heat until browned. (Remove casings from sausage first.) Add spaghetti sauce and reduce heat to low. Add salt if needed.
- In prepared dish or pan, layer half the cooked pasta, all the provolone, all the sour cream, and all the ricotta. Sprinkle a tiny pinch of salt over the ricotta and some fresh ground pepper to taste. Next, Layer all the green onions, and half the meat sauce. Next layer the remaining pasta, all the mozzarella, the remaining meat sauce and top with the parmesan cheese.
- Bake at 350 degrees for 25 - 35 minutes, or until cheeses have melted. (If you have it layered in a smaller, deep casserole dish, it will take longer to cook than if you have it layered in a more shallow larger lasagna pan.).
