5 large potatoes, peeled and cut into eighths
1/2 cup sour cream
3 ounces cream cheese, softened
4 tablespoons butter, divided
1 teaspoon salt

Steps:

  • Cover potatoes with water in lg pot.
  • Cook until tender.
  • Drain and mash.
  • Add sour cream, cream cheese, and 3 T butter; mix well, add salt.
  • Spoon into 11x7 baking dish.
  • Melt 1 T butter; drizzle over potatoes.
  • Bake, covered, at 350* for 30 minutes.
  • Uncover and bake 10 minutes more.

10 large potatoes, peeled and quartered
1 cup sour cream
1 package (8 ounces) cream cheese, softened
6 tablespoons butter, divided
2 tablespoons dried minced onion
1/2 to 1 teaspoon salt

Steps:

  • Place potatoes in a Dutch oven or large kettle; cover with water and bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until potatoes are tender. , Drain potatoes and place in a bowl; mash. Add sour cream, cream cheese, 4 tablespoons butter, onion and salt; stir until smooth and the cream cheese and butter are melted. Spread in a greased 13x9-in. baking dish. , Melt the remaining butter; drizzle over the potatoes. Sprinkle with paprika. Refrigerate or bake immediately, covered, at 350° for 40 minutes; uncover and bake 20 minutes longer. If potatoes are made ahead and refrigerated, let stand at room temperature for 30 minutes before baking.

This is a great dish that easily doubles for big parties or potlucks. Also it is a great and different change to mashed potatoes.

1 (2 lb) bag hash browns (thawed)
1 pint sour cream
8 ounces shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup
1 cup margarine (softened) or 1 cup butter (softened)
1 cup of chopped onions or 1/2 cup dehydrated onion
1 cup corn flakes or 1 cup crushed cracker
1/4 cup of melted margarine or 1/4 cup butter
1 teaspoon garlic powder
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients except the cornflakes or crackers and the 1/2 stick of melted butter together in a bowl.
  • Grease 9x13 inch pan (you can use cooking spray) and add all ingredients from the bowl to the pan.
  • Just before baking, mix the cornflakes or crackers and the 1/2 stick of melted butter together and then sprinkle on the top.
  • Bake for 1 hour at 350 degrees.

This was a much requested recipe of my mother's. Now that mom is no longer with us, we have this often in her honor.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of potato soup
1 (10.75 ounce) can condensed cream of celery soup
1 (16 ounce) container sour cream
¼ cup milk
½ cup chopped onion
1 teaspoon salt
½ teaspoon pepper
⅛ teaspoon dried dill weed
1 ½ cups shredded Cheddar cheese
paprika to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
  • In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
  • Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

This is a great recipe to use at Thanksgiving or Christmas because it can be made ahead and heated through when needed. I usually make a half recipe because we are a family of 5. I got this recipe from Company's Coming.

5 lbs potatoes, peeled and quartered
8 ounces cream cheese, softened (reduced fat is fine)
1 cup sour cream (low fat is fine)
1/4 cup butter (I prefer butter) or 1/4 cup margarine (I prefer butter)
1 teaspoon onion powder
2 teaspoons salt
1/4 teaspoon pepper (or to taste)
2 tablespoons butter
paprika (garnish)

Steps:

  • Cook potatoes as usual in salted water until tender. Drain. Push through potato ricer.
  • Add cream cheese in pieces. Add next 5 ingredients. Beat until smooth and fluffy. Scrape into a 2 qt casserole.
  • Place dabs of butter here and there over the top of the potatoes. Sprinkle with paprika. Cover and heat in 350 F oven until heated through (about 30-45 minutes, depending whether you've made it ahead and have taken it from the fridge).
