COLOSSAL BATCH OF OATMEAL COOKIES

With a cookie-loving husband and seven kids, one batch of cookies doesn't last long here! When I make this colossal recipe, I divide it into thirds and make three different types to please everyone. One with chocolate chips and nuts, another with raisins and one with butterscotch chips. Everyone is happy! -Lisa Cooper, Paris, Texas

Number Of Ingredients 13

2 cups butter, softened
3/4 cup butter-flavored shortening
3-1/4 cups packed brown sugar
1-1/4 cups sugar
5 eggs
2/3 cup buttermilk
4 teaspoons vanilla extract
6 cups quick-cooking oats
5-3/4 cups all-purpose flour
1 tablespoon baking soda
2-1/2 teaspoons salt
1 package (10 to 11 ounces) butterscotch chips
1 cup chopped pecans

Steps:

  • In a very large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in the eggs, buttermilk and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chips and pecans. , Drop by rounded tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks.

These are a flourless cookie. Lots of oatmeal, peanut butter and chocolate. 3 of my favorite ingredients! Makes a lot. The dough freezes well. I usually pre-portion the dough and pull out just what I need.

1/2 cup butter
1 1/2 cups sugar
1 1/2 cups brown sugar
4 eggs
1 1/2 teaspoons vanilla
2 cups peanut butter (crunchy or creamy)
2 1/2 teaspoons baking soda
6 cups quick oatmeal
2 cups chocolate chips

Steps:

  • Preheat oven to 350.
  • Cream together butter, sugar, brown sugar, eggs, vanilla and peanut butter.
  • Add baking soda; mix well.
  • Add Oatmeal.
  • Fold in chocolate chips.
  • Spoon dough onto greased cookie sheets.
  • Bake for 10-16 minutes depending on the size of your cookies.

Monster cookies! You may want to half these if you don't have a heavy duty mixer. Cooking time depends on the size of your oven and the number of cookie sheets you have. Cooking time is 8-10 minutes a cookie sheet!

2 cups butter, softened
2 cups sugar
2 cups brown sugar, firmly packed
4 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
5 cups regular oats, uncooked
3 cups semisweet chocolate morsels (18 oz)
7 ounces milk chocolate candy bars, coarsely chopped
2 cups pecans, chopped

Steps:

  • Beat butter at medium speed of a heavy-duty electric mixer until creamy; gradually add sugars, beating well. Add eggs and vanilla; beat well.
  • Combine flour and next 3 ingredients; gradually add to the butter mixture, beating well.
  • Position knife blade in the food processor bowl; add oats. Process until finely ground. Gradually add to the butter mixture, beating well. Stir in chocolate morsels, chopped chocolate, and pecans.
  • Shape cookie dough into 2 inch balls. Place 3 inches apart on ungreased cookie sheets. (I use parchment paper, just to be sure!) Flatten each ball to a 2 1/2 inch circle. Bake at 375 degrees for 8 to 10 minutes or until lightly browned.
  • Cool slightly on the cookie sheets; remove to wire racks, and let them cool completely.

½ cup margarine, softened
1 ½ cups white sugar
1 ½ cups packed brown sugar
4 eggs
1 teaspoon vanilla extract
1 (16 ounce) jar crunchy peanut butter
2 ½ teaspoons baking soda
6 cups quick cooking oats
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the margarine, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and peanut butter. Mix in the baking soda, oats, and chocolate chips until well blended. Drop 1/4 cupfuls of dough 4 inches apart onto ungreased cookie sheets. Flatten with a fork to 2 1/2 inches in diameter.
  • Bake for 10 to 12 minutes in preheated oven. Cool 1 minute on cookie sheet before transferring to wire racks to cool completely.

1 (12-ounce) package milk chocolate chips

Steps:

  • In large bowl, beat together butter and sugars. Blend in eggs and vanilla. Add peanut butter. Mix well. Stir in oats, soda, and chocolate chips. Drop by teaspoons onto greased (if uncoated) cookie sheets (or roll into balls). Flatten with fork. Bake at 350° for 10-12 minutes. Note: There is no flour in this recipe. It works better if you make the batter up and let it sit a while before you start to drop it onto the cookie sheets. The oats form a gluten that helps hold the cookie together better.
