1 13.75 ounce package whole grain thin spaghetti noodles
3 tablespoons soy sauce
1/4 teaspoon sesame oil
2 tablespoons rice vinegar (white vinegar will work as well)
1 teaspoon ground ginger
3 cloves garlic (minced)
1 tablespoon roasted sesame seeds
1 carrot (grated)
3 green onions (diced)

Steps:

  • Cook noodles according to package directions. Drain and run under cool water. Let drain again.
  • While noodles are cooking whisk together soy sauce, sesame oil, vinegar, ginger, garlic and sesame seeds in a large bowl.
  • Place cooled noodles into bowl. Add in grated carrots and diced green onion. Toss to coat. Cover and refrigerate for at least 1 hour. Serve.

Honey Soy Dressing:
1/4 cup extra virgin olive oil or vegetable oil
3 Tbsp dark sesame oil
1/2 teaspoon crushed dried red pepper or chili powder (optional)
3 Tbsp honey
2 Tbsp soy sauce (less if using tamari which is more concentrated than soy sauce)
Salad:
12 ounces of vermicelli, thin spaghetti, or angel hair pasta
Salt
2/3 cup coarsely chopped cilantro
1/3 cup chopped roasted salted peanuts
1/3 cup thinly sliced green onions
1/2 cup diced red bell pepper
1 Tbsp toasted sesame seeds

Steps:

  • Prepare the dressing: Put the dressing ingredients into a small saucepan and bring to a boil. Remove from heat.
  • Cook the pasta: Put the pasta in a large pot in salted boiling water (1 Tbsp salt for every 2 quarts of water). Cook al dente, according to the directions on the pasta package. Drain.
  • Toss with dressing, chill: Stir together the cooked pasta and the dressing in a large bowl until the pasta is well coated. Cover and chill for several hours.

This amazing salad recipe was given to me by a friend who used to know someone at the now closed Larry's Markets in the Seattle area. I've added to the recipe a little -- so it's not exactly the same... but better! I take this to every picnic and everyone loves it! May also add diced chicken for a variation.

1 (16 ounce) package angel hair pasta
½ cup sesame oil
½ cup soy sauce
¼ cup balsamic vinegar
1 tablespoon hot chili oil
¼ cup white sugar
1 teaspoon sesame seeds, or more if desired
1 green onion, chopped
1 red bell pepper, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Whisk together the sesame oil, soy sauce, balsamic vinegar, chili oil, and sugar in a large bowl. Toss the pasta in the dressing, then sprinkle with sesame seeds, green onion, and bell pepper. Serve warm, or cover and refrigerate for a cold salad.

1 to 2 tablespoons rice vinegar

1/2 cup chopped fresh scallions
1/2 cup julienne red bell pepper
1/2 cup julienne carrots
3/4 cup sliced shiitake mushrooms (about 6 medium caps)
2 tablespoons black sesame seeds
1/4 cup water
2 tablespoons lemon juice
1 tablespoon fresh ginger juice
1 tablespoon sesame oil
1/4 teaspoon red chile flakes
1 tablespoon sugar
1 teaspoon salt
Pinch freshly ground black pepper
2 cups cooked udon noodles

Steps:

  • Combine the cucumber, scallions, and red bell pepper in a medium bowl and refrigerate.
  • In a medium non-stick saute pan, lightly cook carrots and mushrooms in a medium pan with the sesame seeds, adding 1 tablespoon of water at a time. Continue to cook until carrots and mushrooms are tender. Cool. Add to cucumber mixture and keep refrigerated.

16 ounces soba noodles (can substitute spaghetti)
1/4 cup dark sesame oil, plus
1 teaspoon dark sesame oil
1/2 cup soy sauce
1/4 cup sugar
1/4 cup tahini
2 tablespoons rice wine vinegar
cayenne pepper (to taste)
1 bunch green onion, sliced thin (greens & whites)
1/2 cup toasted sesame seeds

Steps:

  • In boiling salted water, cook noodles until tender, five to ten minutes. Rinse in cold water until cool. Drain and toss with 1 teaspoon sesame oil and set aside.
  • In a small saucepan over low heat, combine soy sauce and sugar. Simmer until syrupy, about ten minutes.
  • In a medium bowl, whisk together the tahini, 1/4 cup sesame oil, vinegar and water and soy/sugar mixture until smooth. Season to taste with cayenne.
  • To serve, toss noodles with dressing, green onions and sesame seeds, reserving some seeds for garnish.

Steps:

1 tablespoon sesame oil
1 teaspoon minced garlic
1 teaspoon grated ginger
2 1/2 tablespoons tahini paste
1 tablespoon soy sauce
2 green onions, finely chopped
1 tablespoon rice vinegar
1 teaspoon chili paste or sriracha
1 tablespoon sugar
1 tablespoon sesame seeds
1 green onion, chopped

Steps:

  • Prepare carrots and place in a large bowl. Heat a tablespoon of sesame oil in a small pan over medium heat. Gently cook the minced garlic and grated ginger until just fragrant, about 30 to 40 seconds, turn off the heat. Add the tahini, soy sauce, green onions, rice vinegar, chili paste, and sugar. Add 1-2 tablespoons of water and whisk until the mixture is smooth. Pour the sauce over the carrots and toss. Sprinkle the sesame seeds and more scallions on top. Chill in the fridge for 1 to 2 hours before serving.

1/4 cup water
1/4 cup lime juice
