This Simple Seven-Layer Potato Salad is great for the baked potato lover in all of us. - Cut potatoes into halves or quarters, depending on their size. Place in a large pot and cover with water. Bring to a boil, then cook on medium for 12 15 minutes test to see that they are cooked but not falling apart. Drain well and cool while preparing remaining ingredients.
- Make the dressing by combining mayonnaise, sour cream, celery salt and salt and pepper.
- In a large bowl, toss potatoes with about half of the dressing. Smooth the potatoes into an even layer and add remaining ingredients in layers: celery, eggs, green onion. Top with about half the bacon and half the parsley, then spread remaining dressing on top and sprinkle with reserved bacon and parsley to garnish.
- Cover with plastic wrap and chill for 1 hour or up to 1 day before serving.

- Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 30 minutes. Drain and cool slightly. Slice potatoes into a large bowl.
- Combine mayonnaise, sour cream, yogurt, onions, pickles, mustard, horseradish, celery seed, salt, pepper, garlic, onion salt, and garlic powder in a small bowl; mix until combined. Pour dressing over sliced potatoes and toss to coat. Gently stir in eggs.
- Cover and refrigerate for 2 to 3 hours.

- Place the potatoes in a saucepan and cover with water. Cover and bring to a boil; cook until tender, about 15-20 minutes. Drain and cool. , Transfer to a large bowl; add eggs. COLD POTATOES IN SOUR CREAM (LAYERED POTATO SALAD)
This was my mom's version of potato salad. She never mixed the ingredients together, she layered them. Serve this in a clear glass bowl. Use a casserole dish, if you want just one layer of salad. I'm so glad I found this recipe in my collection - it's been "lost" for 20yrs-- lol! . Feel free to adjust the amount of egg & green onion to your taste. NOTE: Prep time does not include chilling time.

- Peel and boil potatoes, whole, until cooked, but firm. Do NOT overcook, because once potatoes are cooled to room temperature, you will be slicing them across (like for scalloped potatoes). I find my mandolin makes short work of this.
- Mix the mayonaisse, sour cream, bacon and salt together. Set aside.
- Put a layer of potato slices in a bowl, spread with the sour cream mixture.
- Sprinkle with green onions and egg.
- Repeat layers until all ingredients are used.
- Refrigerate at least 2 hours.
- I usually sprinkle with paprika and garnish with fresh parsley before serving.
