BROWNIE COFFEECAKE MUFFINS



Brownie Coffeecake Muffins image

I adapted this recipe from one I saw on a blog (I am sorry I cannot find that blog now to give credit where credit is due!) that stated the original recipe was printed in Woman's Day magazine. The blog and original recipe call for this Brownie Coffeecake to be baked in a 9-inch springform pan for 50-55 minutes and finished with a drizzle of melted chocolate, more chopped nuts and a sprinkling of powdered sugar. The cake batter filled 9 cups in my standard-size Calphalon muffin pan (yield may be different with another manufacturer's pan). These muffins have the rich, dark chocolate look of a brownie but the flavor and texture are definitely coffeecake-light with a perfect crumb topping. Enjoy!

Number Of Ingredients 14

1 1/4 cups all-purpose flour
2 tablespoons unsweetened cocoa powder, dutched process
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup unsalted butter
1 1/2 cups semi-sweet chocolate chips, miniature
1/2 cup light brown sugar, packed
2 eggs, large
1 teaspoon vanilla bean paste
3/4 cup light sour cream
1/2 cup all-purpose flour
1/2 cup light brown sugar, packed
1/2 cup walnuts, chopped
1/4 cup unsalted butter, cold

Steps:

  • Preheat oven to 350°. Coat pan(s) with non-stick baking spray.
  • Whisk Flour, Cocoa, Baking Powder and Baking Soda in medium bowl.
  • Melt Butter and 1 Cup of Chocolate Chips over double boiler and stir until smooth. Remove from heat to cool slightly.
  • Whisk Sugar into cooled Butter/Chocolate mixture, then whisk in Eggs and Vanilla until all are well-blended. Then stir in the Sour Cream.
  • Scrape the combined Wet Ingredients into the Flour mixture; stir until smooth. Then stir in remaining 1/2 Cup of Chocolate Chips.
  • Spread batter into muffin cups filling a little more than half full.
  • To make Streusel Topping, cut Butter into small cubes and mix with all other ingredients with a fork (or fingers) until course crumbs form.
  • Top each muffin with 2 heaping teaspoons of Streusel (I had some left over and next time will try to divide it among the filled muffin cups).
  • Bake for approximately 25 minutes until cake tester comes out clean.
  • Cool on rack -- enjoy!

These are healthi-ER muffins, yet very satisfying! The recipe is from my Betty Crocker cookbook, but I modified it slightly to improve the taste. Hope you enjoy! Note that cooking times may vary. I used my apartment gas oven, which bakes things very quick. The cooking time in this recipe is from the Betty Crocker cookbook. Alter as you see fit.

1 1/4 cups oat bran
1 cup white whole wheat flour
1/4 cup ground flax seeds
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup unsweetened applesauce
1/2 cup 1% low-fat milk
1/4 cup honey
1 tablespoon canola oil
1/2 cup dried blueberries
3 tablespoons white whole wheat flour
3 tablespoons brown sugar
1/4 teaspoon pumpkin pie spice
2 tablespoons Smart Balance light butter spread
3 tablespoons chopped walnuts

Steps:

  • Preheat oven to 400°F.
  • For topping, in a small bowl stir together the flour, brown sugar, spice, and butter. use pastry blender, your hands, or two knives to blend until crumbly. Add chopped nuts. Mix well.
  • Lightly coat bottoms of twelve 21/2 -inch muffin cups with cooking spray; set aside.
  • In a medium bowl combine all dry ingredient, use whisk to combine well. Make a well in the center and set aside.
  • In a small bowl, beat egg. Then combine all other ingredients EXCEPT dried fruit.
  • Add wet mixture to dry mixture. FOLD until damp, careful not to stir too many times.
  • Add fruit, fold in gently.
  • Divide evenly into muffin tin. Sprinkle on topping and press lightly down on muffin.

From Cook's Country Aug/Sept 2007 edition. This muffin tastes like a coffee cake, it is so good! There is cinnamon sugar streusel in the middle and top of the muffin. Very crunchy and sinful!

8 tablespoons granulated sugar
1/3 cup packed light brown sugar
1/3 cup all-purpose flour
1 tablespoon ground cinnamon
4 tablespoons unsalted butter, cut into 1/2 inch pieces and chilled
1/2 cup pecans
2 large eggs
1 cup sour cream
1 1/2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, cut into chunks and softened

Steps:

  • For the Streusel: Pulse 5 TBSP of granulated sugar, brown sugar, flour, cinnamon and butter in a food processor until just combined. Reserve 3/4 cup sugar mixture for cinnamon filling.
  • Add pecans and remaining granulated sugar to food processor with remaining sugar mixture and pulse until nuts are coarsely ground. Transfer to a bowl and set aside for streusel topping. Do not wash food processor yet.
  • For the muffins: Adjust oven rack to middle position and heat oven to 375°F Grease muffin tin with cooking spray and line with paper liners.
  • Whisk eggs, sour cream, and vanilla in bowl. Pulse flour, sugar baking powder, salt and butter in food processor until mixture resembles wet sand. Transfer to large bowl.
  • Using a rubber spatula, gradually fold in egg mixture until just combined. Place 1 TBSP of batter in each muffin cup and top with 1 TBSP of cinnamon filling. Using back of spoon, press cinnamon filling lightly into batter, then top with remaining batter. Sprinkle streusel topping evenly over batter.
  • Bake until muffins are light golden brown brown and tooth pick inserted into center comes out with a few dry crumbs (about 22-28 minutes) Cool muffins in tin for 30 minutes, then carefully transfer to rack to cool.

Raisin Spice Coffeecake Muffins image

The original recipe was from a 1942 Good Housekeeping Cookbook. I changed a few things, added a few things and made this Coffeecake into muffins. It's a delicious treat to go with your morning coffee, or great for just a snack.

3 c all purpose flour
4 1/2 tsp baking powder
1 1/2 tsp coarse sea salt
1 tsp cinnamon
1/4 tsp nutmeg
1 c packed brown sugar
1/2 c apple butter
1/2 c shortening, butter flavored
1/2 c raisins
1/2 c chopped walnuts
2 eggs
3/4 c milk
STREUSEL TOPPING
1/4 c butter, cold
1/2 c brown sugar, firmly packed
1/2 c panko bread crumbs
1/4 c chopped walnuts

Steps:

  • 1. STREUSEL TOPPING: mix brown sugar, panko crumbs and walnuts together in a bowl. Cut in butter to make a crumbly topping. Sit aside.
  • 2. MIX TOGETHER: flour, baking powder, salt, cinnamon, nutmeg, then add and mix in brown sugar.
  • 3. CUT IN: shortening and apple butter
  • 4. ADD: Raisins and 1/2 c chopped walnuts
  • 5. COMBINE: eggs and milk. Stir together JUST until mixed. Using an ice cream scoop, put heaping scoops into muffin tins sprayed with Baker's Joy.
  • 6. Sprinkle a small amount of crumb topping on top of muffins. Bake 350° for about 18-22 min. Time will var from oven to oven. A toothpick inserted in the middle should come out clean when muffins are done.
