⅔ cup brown sugar
½ cup low-sodium soy sauce
⅓ cup white sugar
¼ cup water
2 tablespoons white wine vinegar
2 tablespoons rice vinegar
½ teaspoon ground ginger

Steps:

  • Stir brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger together in a saucepan; bring to a boil, reduce heat to medium-low, and cook until reduced in volume by half, about 30 minutes.
  • Let glaze cool to thicken, at least 1 hour.

Number Of Ingredients 16

For the Doughnuts:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup granulated sugar
2 tablespoons unsalted butter, room temperature
1 large egg, room temperature
1/3 cup buttermilk
2 tablespoons cold brew coffee concentrate
2 quarts canola oil (for frying)
For the Coffee Glaze:
1 cup powdered sugar
2 tablespoons cold brew coffee concentrate
Special equipment:
A 3" round cutter, 1" round cutter, deep-fry thermometer

Steps:

  • Make the doughnuts:
  • Combine flour, baking powder, baking soda, and salt in a large bowl.
  • Beat granulated sugar and butter in the bowl of a stand mixer fitted with the paddle attachment on medium speed until smooth, about 3 minutes.
  • Add egg and continue to beat, scraping down sides of bowl as needed, until incorporated. Reduce speed to low and gradually add buttermilk and coffee concentrate, beating just until combined. Gradually add dry ingredients and beat just until dough comes together.
  • Turn out dough onto a large piece of parchment paper and cover with a second sheet of parchment. Using a rolling pin, roll dough between parchment sheets to about 1/3" thick. Transfer dough in parchment to a rimmed baking sheet and freeze until firm, about 20 minutes.
  • Peel off top sheet of parchment. Working on bottom sheet, punch out as many rounds as you can with 3" cutter, then use 1" cutter to punch out center of each round. Gather doughnut holes and scraps and re-roll; repeat process 3-4 times until all dough has been used (you should have 12 doughnuts). Place doughnuts on a second parchment-lined baking sheet and freeze until slightly chilled, about 5 minutes.
  • Pour oil into a heavy-duty pot to a depth of 2" and fit pot with deep-fry thermometer. Heat oil to 375ºF. Working in batches, fry doughnuts until deep golden brown, about 1 minute per side. Transfer to a wire rack lined with paper towels and let cool 2-3 minutes.
  • Make the Coffee Glaze:
  • Whisk powdered sugar and coffee concentrate in a large bowl until smooth. Dip warm doughnuts in glaze. Place on a wire rack to let glaze set, about 3 minutes, then dip again.

Very simple to make it contains three traditional japanese flavours. It can be used to glaze kebabs for quick yakitori, brush over tuna to make seared tuna or try it with my Japanese five flavoured rice. Once made it can be stored for upto 4 days in a jar in the fridge

3 large sweet potatoes
2 tablespoons canola oil
1 teaspoon cinnamon
1/2 teaspoon sugar or 1/2 teaspoon sugar substitute
1/2 teaspoon cayenne powder
1 pinch granulated garlic
coarse salt & freshly ground black pepper, to taste
1 teaspoon fresh rosemary leaf (optional)
1/2 cup honey
3 tablespoons low sodium soy sauce
1 tablespoon lime juice
1 tablespoon water
1 teaspoon canola oil
1 pinch ground ginger

Steps:

  • For the Fries: Preheat the grill to 400 degrees.
  • Bake the whole potatoes on the top rack over indirect heat for 15-20 minutes. Cool to the touch.
  • Remove and reserve the potatoes. Turn the grill up to high.
  • Cut potatoes in half length-wise. Then, with the skin-side up, slice the potatoes length-wise into 1/2 inch planks, making fries.
  • Toss the potato fries with the oil and seasonings until coated liberally.
  • Lay the slices over the hottest part of the grill.
  • Grill each side for 2-3 Minutes, or until the char marks are well defined and the exterior of the fries is slightly crisp, basting intermittently with additional oil.
  • Remove from the grill. Plate, season to taste with salt and pepper, drizzle with honey soy glaze and serve warm.
  • For the Honey Soy Glaze: Whisk all ingredients in a small mixing bowl.
  • Bring the mixture to a simmer in a saucepan over medium heat.
  • Reduce until the sauce is syrup-like in consistency.
  • Remove from heat, allow to cool for 2 minutes and drizzle over sweet potato fries.

garlic powder

1/4 cup flour
oil
1 cup coffee
1/4 cup soy sauce
1 teaspoon sugar

Steps:

  • Sprinkle roast with salt, pepper and garlic powder.
  • Coat roast with flour and poke all over with fork.
  • Sear in skillet in hot oil until browned on all sides.
  • Transfer to roasting dish.
  • Mix the coffee, soy sauce and sugar together.
  • Pour over roast.
  • Cover and roast at 350º for 2-3 hours, or until tender.
  • About 45 minues before the roast is done, add potatoes, carrots and onions, if desired.
