End your favorite Mexican meal with an assortment of cooling fresh fruit and then savor this south-of-the-border-flavored coffee. Originally from a September 1989 Bon Appetit that featured a "Do It Yourself Tostada Party" in the Cooking for Friends section.

9 inches cinnamon sticks
1 vanilla bean, split lengthwise
3/4 cup ground dark roasted coffee or 3/4 cup espresso coffee
10 cups water
1/2 cup chilled whipping cream
1 tablespoon dark brown sugar
coffee liqueur (such as Kahlua)

Steps:

  • Place cinnamon in coffeepot.
  • Scrape in vanilla beans and add pod.
  • Brew coffee with 10 cups water.
  • Whip cream to soft peaks; add sugar and beat until stiff peaks form.
  • Pour coffee into 6-ounce cups, discarding cinnamon and vanilla pod.
  • Add coffee liqueur to taste. Top with whipped cream and serve.

'OLE FASHIONED ALMOND FILLED COFFEE CAKE

This is a very good,tried and true treat,tucked in with favorites of our home.If one enjoys the flavor and richness of almond flavor,then this will please you,as will the almond paste filling herein!It's so good and often a holiday joy,among other times too!Enjoy!

Number Of Ingredients 18

1 1/2 c sugar
3/4 c softened margarine or butter
1 1/2 tsp vanilla(sometimes i use half almond extract!)
3 eggs
3 c all purpose flour or whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt
1 1/2 c sour cream (lite is ok...but not fat free)
ALMOND FILLLING:
1 pkg 3 1/2 oz size...of almond paste,cut up
1/2 c powdered sugar
1/4 c margarine or butter
1/2 c sliced almonds
GLAZE:
1/2 c powdered sugar
1/4 tsp vanilla extract
1-2 tsp milk

Steps:

  • 1. Oven to 325.Grease a 10x4 inches,or 12-cup Bundt type pan. Prepare Almond Filling-(recipe below)-and set it aside.
  • 2. Coffee Cake: Beat sugar,margarine,vanilla and eggs on medium speed-2min's scraping sides of bowl. Mix dry ingredients-flour,bpowder,bsoda,and salt.
  • 3. Beat in flour/dry ingredients and sour cream,on low speed,alternating into egg mixture.
  • 4. Spread 1/3 of the batter(about 2 cups)in pan. Sprinkle with 1/3 of the almond filling (about 1/3 cup)that you initially prepared. Repeat this step 2 times.
  • 5. Bake about one hour,or until a toothpick inserted near the center comes out clean. **Cool 20min's.Carefully remove from pan.*
  • 6. Drizzle with glaze. GLAZE:Simply mix all 3 ingredients together until smooth.
  • 7. **Sometimes I wait a few min's longer,for the coffee cake to cool alittle more,before I remove it from the pan.Angel food/bundt type pans can be "fussy" at this point,as some might know and agree.But this is just my own comment here from experience.

This is the best coffee cake I have ever tasted. You can substitute chocolate chips for the nuts or try your own combinations.

FOR THE CAKE
3/4 cup(s) softened butter
2 large eggs
1 cup(s) sugar
2 teaspoon(s) vanilla
1 cup(s) sour cream
2 1/2 cup(s) flour
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
FOR THE STREUSEL
1/2 cup(s) brown sugar
3/4 cup(s) flour
2 1/2 teaspoon(s) cinnamon
1 cup(s) chopped walnuts
6 tablespoon(s) melted butter
FOR THE GLAZE
1 cup(s) powdered sugar
1 teaspoon(s) vanilla
2-3 tablespoon(s) heavy cream

Steps:

  • Preheat oven to 350.
  • In a mixing bowl cream, the sugar and butter together. Add the eggs and mix until combined. Add the sour cream and vanilla and mix well.
  • Mix all cake's dry ingredients together and add to previous mixture in the bowl. Mix only enough until it is combined. The batter will appear slightly thick.
  • Put all streusel ingredients in a bowl, and mix with a fork until combined. It will be sticky.
  • Grease a 9 X 13 pan. Spread 1/2 the cake batter evenly in the pan, sprinkle 1/2 the streusel over the top. Drop the remaining batter by using a spoon over the top. Spread as evenly as you can. Cover with the remaining streusel.
  • Bake for 25 minutes or until a toothpick inserted in the middle comes out clean. Take the cake out of the oven.
  • Drizzle the glaze over the top of the baked cake while it is still warm.

Sweetened Whipped Cream
1 1/3 cups strong freshly brewed coffee
2 ounces tequila añejo (aged) or reposado
2 ounces coffee-flavored liqueur, such as Kahlua
Ground cinnamon (Mexican canela or Ceylon variety preferred) (optional)

Steps:

  • Prepare the whipped cream. Then, pour the hot coffee into coffee mugs. Stir in the tequila and liqueur. Top with a dollop of whipped cream. Sprinkle lightly with cinnamon, if desired.
