CAPPUCCINO MUFFINS
These are my favorite muffins to serve with a cup of coffee or a tall glass of cold milk. Not only are they great for breakfast, they make a tasty dessert or midnight snack. Yield about 14 muffins (3/4 cup spread).

Steps:
- In a food processor, combine the spread ingredients; cover and process until well blended. Transfer to a small bowl; cover and refrigerate until serving., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread.

Steps:
- Melt butter and allow to cool slightly.
- Mix flour, sugar, baking powder, coffee, salt and cinnamon in large bowl.
- Mix egg, milk, butter and vanilla in separate bowl.
- Make a well in centre of dry ingredients and add wet mixture.
- Stir to just combine and fold through the choc chips.
- Spoon into greased muffin tins.
- Bake at 190 degrees centigrade for 15-20 minutes.

- Preheat oven to 400°. In a large bowl, combine the first 4 ingredients. In a small bowl, beat egg, milk and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips. , Fill 12 greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 18-20 minutes. Cool for 5 minutes before removing to a wire rack.

- Heat oven to 350°F Line twelve muffin cups with paper muffin cup liners.
- Beat butter, sugar, brown sugar, coffee and vanilla in large bowl until creamy. Stir together flour, baking powder and salt. Beat together eggs and milk; add alternately with flour mixture to butter mixture, stirring just to combine. Stir in walnuts and chocolate chips. Fill muffin cups 1/2 full with batter.
- Bake 20 to 25 minutes. Cool 5 minutes; remove from pans to wire rack. Cool completely.

- Preheat oven to 350.
- Grease and flour 12 muffin pan cups.
- Cream the butter with the sugars, coffee and vanilla.
- Beat together the eggs and milk.
- Combine the flour, salt and baking powder.
- Alternately add the wet and dry ingredients to the butter mixture.
- Stir just to combine.
- Add the chips and nuts.
- Fill the tins full.
- Bake for 20-25 minutes.
- Cool 5 minutes, then remove and cool on racks.

- Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
- Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
- Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
