Coffee Cake Cinnamon Rolls, Orange Frosting vegan Recipe - (4.7/5) image

Number Of Ingredients 29

Dough:
3 1/2 - 4 cups white flour (or use your favorite flour)
1 Tbsp baking powder
3 tsp baking soda
1 tsp salt
1 stick vegan butter, melted (8 tablespoons)
1 cup soy or almond milk
1/3 cup fresh squeezed lemon or orange or tangerine juice
1 tsp vanilla extract
plenty of flour for kneading/surface
Filling:
1 cup brown sugar
3 Tbsp vegan butter, melted
1/2 tsp cinnamon
1/4 tsp nutmeg (optional)
1 1/2 cups raw walnuts, minced in a food processor/Vitamix
Topping:
2-3 Tbsp crushed walnuts
2-3 Tbsp vegan butter, melted
3 Tbsp brown sugar
1 tsp maple syrup drizzled
Orange Cream Frosting
8 ounce vegan cream cheese
1 cup powdered sugar
1/3 cup orange juice (fresh)
1/2 tsp orange zest
1 dash cayenne
1 Tbsp vegan butter, softened
Blend with hand mixer. Chill until ready to serve.

Steps:

  • 1. Preheat oven to 375 degrees. 2. Combine dry ingredients from dough. Add in wet liquid and work into a ball. Knead until a dough ball forms. Add a splash more soy milk or a few dashes more flour to even the consistency out if needed. Dough should be soft - not tough - yet thick enough to roll out into a one inch thick piece. 3. On a floured surface, roll out dough to a loose rectangle shape. About 3/4" - 1" thick. 4. Brush or drizzle the melted butter over top dough. 5. Over top the vegan butter layer, sprinkle the cinnamon - generously. Add nutmeg. 6. Evenly distribute walnuts and brown sugar over top that 7. Carefully roll your dough up from one end until a tight spiral inside a long tube is reached. 8. Slice your rolls. About 1 1/2" thick. 9. Tightly place the rounds in a vegan butter greased dish - I used a 9" round baking dish. 10. Add the topping layer over top the rolls. 11. Bake at 375 for 30 minutes. Cool a few minutes and serve warm with orange cream frosting over top

1 cup almond milk
1 tablespoon white vinegar
½ cup applesauce
6 Medjool dates, pitted and chopped
1 teaspoon vanilla extract
1 cup whole wheat flour
½ cup almond meal
1 tablespoon baking powder
2 teaspoons ground cinnamon
½ teaspoon salt
1 cup date syrup
1 cup chopped walnuts
1 cup almond meal
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch cake pan with cooking spray.
  • Combine almond milk and vinegar in a blender. Let stand until curdled, about 10 minutes. Add applesauce, dates, and vanilla extract; blend until smooth.
  • Mix whole wheat flour, 1/2 cup almond meal, baking powder, 2 teaspoons cinnamon, and salt together in a bowl. Pour in date mixture and stir until batter is combined.
  • Mix date syrup, walnuts, 1 cup almond meal, and 2 teaspoons cinnamon in a bowl to make topping.
  • Spread 1/2 of the batter in the prepared pan. Drop 1/2 of the topping evenly over the batter. Spread remaining batter on top. Swirl batter and topping together with a butter knife. Drop remaining topping on top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

This is a recipe I modified from Martha Stewart's website. It's very tasty. Can be made in a round cake or 9x9" brownie pan or I use a 9 serving mini loaf pan to make little individual cakes. On the sugar, make sure what you use is vegan. I use organic evaporated cane juice sugar. Regular sugar is often processed with animal derivatives.

2 cups flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine
2 tablespoons sugar
1 teaspoon cinnamon
1/4 cup soy yogurt
3/4 cup milk
2 tablespoons margarine

Steps:

  • Preheat oven to 350 degrees and lightly grease a round cake pan, 9x9" brownie pan or mini loaf pan.
  • Mix together the flour, 3/4 cup sugar, baking powder and salt.
  • Cut the margarine into small chunks and add to the mix. Mix for a couple of minutes if using a mixer. This is the "dry ingredient mix".
  • Remove 1/2 cup of the dry ingredient mix and put in a separate bowl. Add the cinnamon and 2 tablespoons of sugar and mix together well. This is the "topping".
  • To the remaining dry ingredient mix, add the soy yogurt and milk until the consistency is smooth. Put into a round cake pan, 9x9 brownie pan, or spread evenly in a mini loaf pan (I use an ice cream scoop for even serving sizes).
  • Spread the topping evenly onto the batter. Melt the 2 tablespoons of margarine and drizzle over the top.
  • Bake at 350 for 35 minutes, or until a toothpick entered into the center of the coffee cake comes out clean.

This is my favourite coffee cake recipe, which I've turned vegan with great success. Adapted from a sour cream coffee cake recipe that my mom used to make from The Joy of Cooking.

1 1/2 cups all-purpose flour (preferably unbleached)
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (or just a few dashes)
1 cup plain soy yogurt (I use So Nice brand)
3 teaspoons egg substitute (such as Ener-G)
4 tablespoons water
2 tablespoons flour (whole wheat is good)
1 tablespoon vegan margarine (or use veg. oil plus a dash of salt)
5 tablespoons brown sugar
1/2 teaspoon cinnamon
1/2 cup walnuts or 1/2 cup other nuts

Steps:

  • Make the streusel topping: mix together the 2 tbsp flour, brown sugar, cinnamon, margarine in a small bowl; add nuts and set aside.
  • Sift or stir together the flour, sugar, baking soda, baking powder, and salt in a medium bowl.
  • Stir the egg replacer into the water until mixed (in a large bowl), then add the soy yogurt (be sure to use a brand of soy yogurt that is very smooth and creamy tasting).
  • Add dry ingredients to the yogurt mixture and beat with a spoon just until smooth.
  • Scrape into an 8" or 9" pan, either nonstick or lightly oiled/sprayed.
  • Sprinkle the streusel topping evenly over the batter.
  • Bake in preheated 350 degrees F oven, for about 30-35 minutes or until done (depends on the size/shape of your pan- you may need to check after 25 min if the pan is quite shallow).

2 tablespoons cinnamon
5 tablespoons sugar
5 -6 cups peeled and sliced apples
2 cups sugar
1 cup applesauce
4 teaspoons vanilla
1/2 cup orange juice
1 pinch salt
4 egg substitute
3 cups flour
1 tablespoon baking powder
1 teaspoon nutmeg

Steps:

  • Combine sugar and cinnamon and toss all of the mixture except 1 Tbsp with the apples.
  • Set aside.
  • Whisk together sugar, applesauce, vanilla, OJ, salt, and egg replacers.
  • Fold in flour, baking powder, and nutmeg.
  • Spoon about half of the mixture into a greased bundt pan.
  • Cover with half of the apple mixture.
  • Repeat with remaining batter and apples.
  • Sprinkle with reserved cinnamon-sugar.
  • Bake at 350 for 60-70 minutes.
  • Let cool and invert onto a plate for serving.
