Dough for single-crust pie
1-1/2 cups whole milk
1 cup sugar
3/4 cup sweetened shredded coconut
2 large eggs, lightly beaten
3 tablespoons all-purpose flour
1 tablespoon butter, melted
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. , In a large bowl, combine milk, sugar, coconut, eggs, flour, butter and vanilla. Pour into crust. , Bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool to room temperature on a wire rack. Refrigerate leftovers.

1 cup sugar
1/4 cup all-purpose flour
Dash salt
3 large egg yolks
2 cups whole milk
1-1/2 teaspoons vanilla extract
1-1/4 cups sweetened shredded coconut, divided
1 pie shell (9 inches), baked
MERINGUE:
3 large egg whites
6 tablespoons sugar

Steps:

  • In a large saucepan, combine the sugar, flour and salt. Combine egg yolks and milk; stir into dry ingredients until smooth. Cook and stir over medium heat until mixture is thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; stir in vanilla and 1 cup coconut. Pour hot filling into pie shell. , For meringue, beat egg whites in a bowl until soft peaks form. Gradually beat in sugar until mixture forms stiff glossy peaks and sugar is dissolved. Spread meringue over hot filling. Sprinkle with remaining coconut. , Bake at 350° for 12-15 minutes or until golden. Cool. Store in the refrigerator.

unbaked 9 inch pie shell
1/4 cup butter, softened to room temperature
1 cup sugar
1/3 cup buttermilk
2 large eggs
1/4 tsp. salt
1 tsp. vanilla
1/2 pkg. (3 1/2 to 4 oz) shredded sweetened coconut

Steps:

  • 1. Put oven rack in middle position. Preheat oven to 350.
  • 2. Cream butter and sugar in the bowl of a standing mixer fitted with paddle attachment. Add buttermilk.
  • 3. Add eggs, one at a time. Add salt and vanilla. Fold in coconut. Pour filling into pie shell. Bake about 40 minutes or til top is firm and crust is golden brown. Cool completely on rack. Store loosely wrapped in wax paper in the refrigerator. Makes 8 servings
