1 14 1/2-ounce can low-salt chicken broth
1 13 1/2- to 14-ounce can unsweetened coconut milk
1/2 tablespoon curry powder
1 jalapeño chili, seeded, minced
4 boneless skinless chicken breast halves, cut into 3/4-inch pieces
2 tablespoons fresh lime juice
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro
1 cup freshly cooked white rice
Lime wedges

Steps:

  • Bring chicken broth, coconut milk, curry powder and chili to simmer in heavy medium saucepan over medium heat. Add chicken and simmer until chicken is just cooked through, stirring occasionally, about 5 minutes. Mix in lime juice. Season with salt and pepper.
  • Transfer soup to bowl. Sprinkle green onion and cilantro over. Spoon rice into each bowl. Ladle soup over. Serve, passing lime wedges separately.

2 cans (4 ounces each) chopped green chiles
8 green onions, sliced
2 teaspoons grated lime zest
1/2 cup lime juice
1/4 cup sweet chili sauce
6 garlic cloves, minced
4 teaspoons curry powder
1/2 teaspoon salt
2 pounds boneless skinless chicken thighs, cut into 1/2-inch pieces
3 cups cooked basmati rice
Minced fresh cilantro

  • Place the first 9 ingredients in a 4- or 5-qt. slow cooker; stir in chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Skim fat; stir in cooked rice. Cook, covered, on low 15-30 minutes or until heated through. Sprinkle servings with cilantro.

2 small red Thai chiles, thinly sliced
8 sprigs cilantro
1 1/4 pounds bone-in chicken thighs, skin removed
1 can (14 ounces) unsweetened coconut milk
1 can (14.5 ounces) chicken broth
A 1 1/2-inch piece fresh ginger, peeled
1 fresh kaffir lime leaf
1/4 cup fresh lime juice (from about 5 limes), plus lime halves, for serving
3 tablespoons fish sauce, plus more for serving
Broad flat rice noodles, such as pad Thai noodles

Steps:

  • Combine all ingredients except noodles in a large pot. Bring to a simmer over medium-high heat and simmer until chicken is cooked through, about 12 minutes. Transfer chicken to a plate; when cool enough to handle, shred meat from bones and discard bones. Add meat to soup.
  • Cook noodles according to package directions, then add to soup. Add more fish sauce, if desired, and serve with lime halves for squeezing.

1 medium onion, sliced
1 Thai chile pepper, halved
1 3-inch piece lemongrass, smashed
2 tablespoons minced fresh ginger root

1 medium head bok choy, chopped
1 (14 ounce) can coconut milk
1 lime, cut into wedges, or as needed
1 teaspoon chopped fresh cilantro, or to taste

Steps:

  • Heat oil over medium heat in a large pot. Add onion, chile pepper, lemongrass, ginger, and salt. Cook, stirring occasionally, until onion is tender, about 8 minutes.
  • Add chicken broth and chicken breasts to the pot and bring to a boil. Reduce heat to low and simmer until chicken is no longer pink in the center and juices run clear, 6 to 8 minutes. Discard lemongrass.
  • Transfer chicken to a plate and let cool slightly. Shred using 2 forks.

3 1/2 cups low-sodium chicken broth
2-inch piece peeled fresh ginger, cut into 1/4-inch-thick rounds
1 (13.5 ounce) can unsweetened coconut milk
3/4 pound boneless, skinless chicken breast, thinly sliced
6 tablespoons lime juice (from 3 limes)
3 tablespoons fish sauce
2 teaspoons light-brown sugar

  • Soak rice noodles according to package instructions; drain.

THAI-STYLE CHICKEN COCONUT SOUP WITH LEMON & LIME



Thai-style Chicken Coconut Soup with Lemon & Lime image

This soup, reminiscent of Tom Kha Gai, is made with easily found ingredients. Like many a homemade soup, you can vary the soup according to what you have at hand and substitute as I did. You can even substitute turkey for chicken. "Tom-kha-gai" roughly translates to "soup-galangal-chicken." Galangal is a root similar to ginger. Other ingredients of a true Tom kha gai include Keffir lime leaves and lemon grass. There are many more-authentic recipes for Tom Kha Gai on the Web and it is from these I got my inspiration.

3 to 4 cup(s) chicken broth (preferably homemade to avoid a too-salty soup)
1 bunch(es) fine rice noodles, ramen noodles or vermicelli
1 can(s) straw mushrooms, drained and cut in half (other canned or thinly sliced raw mushrooms may be substituted)
1/2 cup(s) red bell pepper, julienned
1 medium lemon, juice only (optionally add the zest)
1 medium lime, juice only (optionally add the zest but this can be bitter)

1 tablespoon(s) thai fish sauce (nam pla, sometimes called thai seasoning sauce)
2 to 3 dash(es) tabasco (as a substitute for thai chiles)

Steps:

  • In a medium soup pot, bring chicken broth to a simmer and add the noodles. Let the noodles simmer slowly as you prepare and add the other ingredients. Note: if you are using fresh mushrooms, slice them thinly and give them a five-minute head start in the boiling broth before adding the noodles.
  • Add the rest of ingredients (but not the spinach, cilantro, or basil) to the broth. Simmer slowly.
  • After the mixture has simmered for about 5 minutes, taste and adjust the seasoning with Thai fish sauce (for saltiness), Tabasco and ginger (for heat) and brown sugar (for sweetness). If you wish to add a stronger taste of lemon or more bitterness from the lime, add in some zest of each.
  • As soon as the noodles are done, add the spinach, cilantro or basil. Simmer one more minute and serve hot.

3 cups chicken stock or 3 cups chicken broth
3 tablespoons fresh-squeezed lime juice
5 -6 slices fresh gingerroot
2 medium garlic cloves, sliced in half
1 1/2 tablespoons soy sauce
1 1/2 tablespoons brown sugar or 1 1/2 tablespoons Splenda sugar substitute
14 1/2 ounces light coconut milk
2 cups diced turkey or 2 cups chicken
1/2 teaspoon Tabasco jalapeno sauce or 1/2 teaspoon hot sauce
1 1/2 cups brown rice, cooked
1/2 cup chopped cilantro

Steps:

  • Slice 5 to 6 thin slices of ginger root. Peel 2 medium garlic cloves and slice in half.
  • Put chicken stock into a heavy soup pot and start to simmer, then add ginger root slices, garlic cloves, lime juice, soy sauce, and brown sugar or splenda. Let simmer on low for 20 minutes or until flavors are well blended.
  • While the soup base simmers, shred apart the leftover turkey or chicken into bit-sized pieces until you have 2 cups. After 20 minutes remove the garlic and ginger pieces and add diced chicken, light coconut milk, and green tabasco sauce or other hot sauce to the soup and let it continue to simmer on low about 6 minutes more. Be sure the heat is low enough the soup won't boil after the coconut milk has been added.
  • After 6 minutes add the cooked brown rice and let it simmer for a couple minutes while you wash and chop the cilantro. Add cilantro and simmer for 1 to 2 minutes more. Serve hot with sliced limes to squeeze into the soup if desired.

Steps:

  • 1. Remove and discard skin and bones from chicken. Shred chicken. In large saucepan combine shredded chicken with coconut milk, water, lime juice, sliced carrots, soy sauce, the 2 teaspoons Thai seasoning and salt. Bring to boiling; reduce heat and simmer, covered, 8 minutes or until carrots are crisp-tender. 2. To serve, sprinkle bowls of soup with additional Thai seasoning and cilantro. Pass lime wedges.
