This is a recipe for exceptionally fluffy, coconut rice! No gluggy coconut milk scum left on the surface, each grain is clean and fluffy. Make it Asian-restaurant style by adding pandan leaves OR kaffir lime leaves. Or finish with a sprinkle of toasted coconuts. Serve with: tropical, Caribbean, Indian and Asian foods. 2 cups (360g) jasmin or long grain white rice ((Note 1))
400 ml / 14 oz coconut milk (, full fat or light (Note 2))
1/2 cup (125ml) water
1 tbsp white sugar ((Note 3))
1/2 tsp salt
3 pandan leaves (, knotted)
3 kaffir lime leaves (, crushed in hand)
1 tbsp desiccated coconut (, toasted, to garnish)

Steps:

  • Rinse rice in water until the water runs pretty clear. (Note 1)
  • Drain rice then soak in water for 15 minutes. Then drain.
  • Add rice, coconut milk, water, sugar and salt into a small pot or large saucepan over medium high heat. Add pandan or kaffir lime leaf if making Asian restaurant style option.
  • Bring it to a simmer so the entire surface of the liquid is rippling (not just the edges), give it ONE stir (not more!), place lid on and immediately turn heat down to LOW.
  • Leave for 14 minutes.
  • Remove from heat, and rest, undisturbed, for 10 minutes.
  • Fluff with rubber spatula. Garnish with toasted coconut, if using, then serve.

2 cups Basmati rice
1 1/2 cups coconut milk
1 cup chicken broth
1 teaspoon kosher salt, more to taste
3 scallions, thinly sliced
2 tablespoons finely chopped ginger
Fresh red chile, sliced, for garnish (optional)

Steps:

  • Place rice in a fine strainer, and rinse with cold water until water runs clear. Transfer to a medium saucepan. Add 1 cup water, coconut milk, chicken broth and salt. Cover, and place over medium-high heat. Bring liquid to a boil, then reduce and simmer until liquid has been absorbed and rice is tender, about 15 minutes.
  • Remove from heat, and stir in scallions and ginger. Add a little more coconut milk if rice is too dry. Season to taste with salt. Serve.

Coconut milk lends rice both fat and sweetness, making it a richer, more mellow side than plain rice. To make it, simply replace half of the cooking water with coconut milk. It becomes a meal if you serve it with a fried egg, finely sliced pickled chiles with a little of their pickling liquid and some crushed peanuts. And if you wanted to turn it into dessert, serving it with ripe fruit like cut mango on top, you could stick to the recipe below, but bump the sugar up to 2 tablespoons.

1 cup long-grain white rice, such as jasmine
3/4 cup coconut milk
1 scant tablespoon sugar
1/2 teaspoon kosher salt, plus more to taste

  • Rinse the rice a few times, until the water that drains away runs almost completely clear.

6 green onions, chopped
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced

5-1/2 cups vegetable stock

  • Remove pan from heat and sprinkle rice with scallions and coriander. Let rice stand 5 minutes and fluff with a fork. Discard bay leaf.
