1 (15 ounce) can cream of coconut
1 (13.5 ounce) can coconut milk
1 cup unsweetened flaked coconut
2 (2 ounce) bars dark chocolate, chopped

Steps:

  • Whisk cream of coconut, coconut milk, and flaked coconut in a bowl. Cover and refrigerate for 8 hours or more.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency.
  • Melt the chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Slowly drizzle chocolate into ice cream what machine is churning. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

Got this recipe from my aunt and just tried it to put on my candy tray i give my neighbors for Christmas. This is so rich buttery coconut flavor i hated to give it away. Its fast and easy to make with few ingredients you have in your kitchen.

2 Tbsp butter
1 1/2 c sugar
1/2 c whole milk
3/4 c sweeten coconut
1 tsp vanilla

Steps:

  • 1. In a heavy sauce pan, slowly bring to a low boil the sugar, milk, and butter. stirring often boil on med to low (you do not want a rapid boil) a slow boil for 9 1/2 to 10 minutes (no MORE), take off heat and add vanilla and coconut and beat with a mixer till creamy then pour into a 8x8 butter dish and let cool completely cut and serve..enjoy!!

1 3/4 cups evaporated milk
2 tablespoons white corn syrup
1 teaspoon salt
1 teaspoon vanilla
1 lb powdered sugar
shredded coconut

Steps:

  • Combine all ingredients in a saucepan and heat to 238 degrees F on low heat until thick (about 45 minutes).
  • Remove from heat and add vanilla.
  • Place cooled mixture into bowl and knead in powdered sugar.
  • Shape into small balls and roll in shredded coconut.
