Sweet and yummy!! I often add a teaspoon of orange or lemon zest for a variation, but they are delicious as is.

1/4 cup butter
1 cup brown sugar, lightly packed
1 egg
1 1/2 teaspoons pure vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 cup raisins
1/4 cup shredded coconut

Steps:

  • Preheat oven to 350°F Lightly grease a 8-inch (20 cm) square pan.
  • In large saucepan, melt margarine. Remove from heat.
  • Stir in brown sugar, egg and vanilla until smooth. Add remaining ingredients. Mix well.
  • Spread batter into prepared pan.
  • Bake 20-25 minutes, or until light golden and sides begin to pull away from cake pan. Cool. Cut into squares.
  • ENJOY!

Velvety shortbread cookies with coconut and raisins. Pecans also taste great in these cookies.

1 cup butter, softened
1 cup white sugar
1 egg yolk
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
2 ¼ cups flaked coconut
½ cup raisins
¼ cup finely chopped pecans

Steps:

  • In a medium bowl, cream together the butter, white sugar, egg yolk and vanilla until smooth. Stir in the flour until well blended, then mix in coconut raisins and pecans (if desired). Chill for at least 4 hours or overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets. Roll tablespoonfuls of dough into balls or logs and place them 2 inches apart onto the prepared cookie sheets.
  • Bake for 25 to 30 minutes in the preheated oven, or until lightly browned. Remove from cookie sheets to cool on wire racks.

Although I haven't tried this yet, the recipe looks too good not to pass along. I found it on the back of a Baker's Angel Flake Coconut package.

1/2 cup butter
1/2 cup powdered sugar
1 cup flour
2 tablespoons flour
2 2/3 cups coconut, divided
2 eggs
1 teaspoon vanilla
1 cup brown sugar, firmly packed
1 teaspoon baking powder
2/3 cup raisins
1/2 cup semi-sweet chocolate chips

Steps:

  • Beat butter till light and fluffy. Gradually beat in powdered sugar. Stir in 1 cup flour and 2/3 cup of the coconut.
  • Press into ungreased 9 inch square pan and bake at 350F for 20 minutes, or till golden brown.
  • Beat eggs and vanilla. Gradually beat in brown sugar. Stir in 2 tbsp flour and the baking powder. Stir in raisins and 1 c of the coconut.
  • Pour over crust in pan and bake @ 15 minutes longer. Sprinkle with chips.
  • Cover with foil 2-3 minutes until chips soften. Carefully spread to frost.
  • Sprinkle with remaining coconut.
  • Cool and cut into bars. Garnish with additional raisins.
