1 cup applesauce (such as Mott's® Natural Applesauce)
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup buttermilk
1 cup flaked coconut
1 cup chopped walnuts
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine applesauce, white sugar, brown sugar, eggs, and vanilla extract together in a bowl. Whisk flour, baking soda, salt, and cinnamon together in a separate bowl. Add flour mixture to the egg mixture, alternating with buttermilk just until batter is moistened. Fold coconut and walnuts into batter; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, 45 to 55 minutes. Cool on a wire rack. Dust coffeecake with confectioners' sugar.

2 1/4 cups all-purpose flour, divided
1 1/2 cups sweetened flaked coconut, divided
3/4 cup light brown sugar, divided
1 1/2 tablespoons cinnamon
6 tablespoons unsalted butter, melted
3/4 cup unsalted butter, softened
1 teaspoon baking powder
1/2 teaspoon salt
5 large egg yolks
1/3 cup sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup sour cream

Steps:

  • Coffee-cake topping:
  • Combine 1/2 cup flour, coconut, 1/2 cup brown sugar, and cinnamon in a bowl. Toss in melted butter and set aside.
  • Batter:
  • Preheat the oven to 325°F Lightly coat a 9-inch round springform pan with a little of the softened butter and set aside. Combine the remaining flour, baking powder, and salt in a bowl and set aside. Beat the egg yolks, remaining brown sugar, granulated sugar, and vanilla using an electric mixer set on high speed until the mixture is thick and pale yellow, about 2 minutes. Mix in the remaining butter and the sour cream. Reduce mixer speed to low, add flour mixture, and mix.
  • Cake:
  • Pour batter into the prepared pan, sprinkle with topping, and bake on the middle rack of the oven until a toothpick inserted into the center of the cake comes out clean, 55-60 minutes. Cool in pan on a wire rack for 1 hour. Release the cake from the pan. Serve warm. Enjoy!

TOPPING:

Adapted from Quick Cooking. I tried this delicious recipe and wrote in capital letters across the page "Excellent!" I rediscovered this yummy recipe again today as I was digging through my recipe box searching for fall favorites. The recipe originally called for shortening, but I prefer the rich flavor or real unsalted butter. Since this recipe makes 2 cakes, you can leave the coconut off the second if you want one plain. I often freeze the second cake after baking.

Steps:

  • Combine flour, sugar, baking powder, salt.
  • Using a pastry blender, cut in butter until mixture is crumbly.
  • In another bowl, whisk together eggs and milk, then add to the flour mixture, stirring just enough to moisten the ingredients (overmixing will make a tough cake).
  • Gently fold in the blueberries.
  • Pour batter into two greased round 9" baking pans.
  • Sprinkle evenly with coconut.

  • Butter and flour an 8-inch square or round baking pan (a bundt pan also works well).
  • Preheat oven to 350°F.
  • For the streusel: In a small skillet or saucepan melt the butter over medium-low heat and add dessicated coconut and walnuts. Cook, stirring occasionally for 8-10 minutes, or until coconut and walnuts start to get toasty and smell fragrant. Be careful not to burn. Remove from heat and stir in brown sugar and cinnamon and empty half this mixture into the bottom of your prepared baking pan. Reserve other half.
  • For the cake: In a small bowl, whisk together eggs, coconut milk, liqueur and orange zest. Set aside.
  • In a large mixer bowl, cream butter with sugar for 5 minutes, or until light in color and fluffy. You may need to scrape down the sides and bottom of bowl a couple of times with a spatula. Add baking powder, baking soda, vanilla extract, salt, cinnamon, ginger, cardamom, nutmeg and cloves.
  • Add flour, alternately with wet ingredients (egg, etc.) until blended through. You may need to scrape down the sides and bottom of bowl a couple of times with a spatula.
  • Pour 3/4 s of the batter into your prepared pan and layer with reserved streusel mixture. Pour remaining batter over top and run knife through pan, marbling streusel into the batter.

coconut pecan topping, recipe follows

Steps:

  • 1. preheat oven to 325°. Grease and flour a 10 inch fluted tube pan; set aside. In a large mixing bowl beat butter with an electric mixer on medium speed for 30 seconds. Add the sugar, baking powder, baking soda, and salt. Beat until well combined scraping sides of bowl occasionally.
  • 2. Add eggs one at a time beating well after each addition. Beat in vanilla. Alternately add flour and sour cream, beating on low speed after each addition just until mixed.
  • 3. Sprinkle half of the coconut pecan topping in the prepared pan. Spoon half of the batter in mounds over the coconut mixture; carefully spread evenly. Sprinkle with remaining batter spreading evenly.
  • 4. Bake for 55 to 65 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove cake from pan; cool completely on wire rack. Makes 12 servings.
  • 5. Coconut pecan topping: in a medium bowl, stir together 1 cup flour, 1 cup packed Brown sugar, and 1 teaspoon ground cinnamon. 3/4 cup chocolate wafer crumbs (from about 15 cookies such as Nabisco Famous Chocolate Wafers)
1 teaspoon instant-espresso powder
2 tablespoons unsalted butter, melted
For ice cream layer
1 pt premium coffee ice cream, softened slightly
1 pt premium coconut sorbet, softened slightly
For fudge sauce
3 tablespoons heavy cream
1 tablespoon light corn syrup
1 tablespoon packed dark brown sugar
1 teaspoon unsweetened Dutch-process cocoa powder
1/8 teaspoon salt
2 oz fine-quality bittersweet chocolate (not unsweetened), finely chopped
1 tablespoon unsalted butter
1 teaspoon vanilla
Special Equipment
a 1 1/2-qt rectangular mold such as a 12- by 3 1/4- by 2 3/4-inch pté mold; parchment paper; an offset metal spatula

Steps:

  • Make crust:
  • Put oven rack in middle position and preheat oven to 375°F.
  • Line mold with a double layer of parchment paper, allowinga few inches of overhang along each side.
  • Stir together crumbs, espresso powder, and butter and press over bottom of mold. Bake until crisp, about 10 minutes, then cool completely in mold on a rack, about 20 minutes.

  • Pour warm sauce over ice cream layer and freeze again, uncovered, until firm, about 15 minutes. Remove cake by grasping both ends of parchment, and transfer it to a platter. Using a spatula to stabilize end of cake, carefully slide parchment out from under cake.

1 (18 1/4 ounce) box yellow cake mix
1 (11 ounce) can condensed cheddar cheese soup
1/2 cup water
2 eggs
1 tablespoon grated lemon rind
1 cup shredded coconut
1/2 cup crushed pineapple, drained
1/2 cup chopped nuts
3 tablespoons butter, softened
1/2 cup unsifted all-purpose flour
1/4 cup brown sugar, firmly packed
1/2 cup shredded coconut

Steps:

  • In a large mixing bowl combine the cake mix, soup, water, eggs, and lemon rind. Beat until blended.
  • Stir in 1 cup of coconut, pineapple, and nuts. Spread the batter evenly in a greased and floured 9x13-inch pan.
  • In another bowl, cut butter into the flour until crumbly. Stir in sugar and the remaining coconut. Sprinkle over the batter.
  • Bake in a 350 oven for 50 minutes or until done.

1 box duncan hines french vanilla cake mix
2 small jello instant coconut cream pudding mixes
1 c water
1/2 c vegetable oil
4 eggs
1/2 c sour cream
TOPPING
3/4 c brown sugar
1 c pecans, chopped
3/4 c chocolate morsels
1 tsp cinnamon, ground

Steps:

  • 1. Preheat oven to 350. Combine cake mix and pudding mixes in a bowl and set aside.
  • 2. Combine water, oil and eggs mix well. then add wet ingredients to dry ingredients and add sour cream and blend until smooth. Set aside.
  • 3. Combine all topping ingredients. Then pour 1/2 of cake batter into a 10x8 dish or 9x13 can also be used. Sprinkle with 1/2 of topping. pour rest of batter spread to edges and finish with rest of topping.
  • 4. Bake at 350 for 60 minutes of until center is set and toothpick comes out clean from center of cake. Cool 30 minutes before serving.

Steps:
