- 1/3 cup unsweetened pineapple juice
- 2 ounces coconut flavored rum
- 1 tablespoon fresh lime juice
- 1 1/2 teaspoons superfine sugar
- club soda
- a wedge of lime

Steps:

  • in a tall glass, mix the pineapple juice, rum, lime juice, and sugar. Stir to dissolve the sugar. Fill the glass three quarters full with ice and stir to blend. Top with a splash of soda, but don't drown it. Squeeze the lime wedge into the drink, discard and serve at once. Makes one cocktail.
