INDIAN CURRIED BARLEY PILAF
This is a delicious and savory curried barley dish. It is fabulous as a main dish, or as a side dish with fish or grilled chicken breast. It is quite simple to make and sure to impress!

- Melt butter in a large skillet placed over medium-high heat. Add the onion and barley; cook, stirring frequently, until the onion begins to soften, about 5 minutes. Stir in the allspice, turmeric, curry powder, salt, and black pepper. Pour in the chicken broth, and bring to a simmer.
- Cover skillet with lid, and reduce heat to low; simmer until the barley is tender, about 30 to 40 minutes. Fluff the pilaf with a fork, and gently stir in the slivered almonds and raisins.

STICKY COCONUT CHICKEN AND RICE
This comforting one-pot chicken dish features fragrant coconut rice infused with aromatic ginger, garlic and scallion, and studded with toasty cashews. The cashews soften as the rice steams, adding subtle nuttiness to the dish. Chicken thighs absorb the coconut milk as they cook, which keeps the meat tender and juicy. Fresh chopped cilantro brightens the dish, while hot sauce adds nice heat and tang to balance the creamy, rich and slightly sweet rice.

- Heat oven to 375 degrees. Rub chicken with 1 tablespoon of oil, and season with 1 teaspoon of salt and ¼ teaspoon of pepper.
- In a large Dutch oven, heat 2 tablespoons of the oil over medium. Working in two batches, brown chicken, turning halfway, until no longer pink, around 5 minutes per batch. Transfer to a plate.
- Add the remaining 1 tablespoon oil, the ginger and the garlic to the empty pot, and stir until fragrant, 30 seconds. Add rice and stir until evenly coated in the oil. Add broth, coconut milk, bell pepper, cashews, scallions and the remaining 1 teaspoon salt and ¼ teaspoon pepper. Stir to lift up any browned bits on the bottom of the pot. Arrange chicken on top, add any accumulated juices from the plate and bring to a boil over high.
- Cover and bake until all of the liquid is absorbed, rice is tender and chicken is cooked through, 25 minutes. Scatter cilantro over the chicken and rice, then divide among bowls. Serve with hot sauce.
CHICKEN CURRY WITH CASHEWS & COCONUT MILK
This is probably the best curry I've made. Great taste and texture, very creamy and it has just the right amount of spices. Highly recommended, especially if you like cashews!!

- 1. -Heat butter and vegetable oil in a wide heavy pot over moderately low heat, then cook onions, garlic, and ginger, stirring until softened for about 5 minutes. -Add curry powder, salt, cumin, and cayenne and cook, stirring, 2 minutes. -Add chicken and cook, stirring to coat, 3 minutes.
- 2. -Add tomatoes, including juice, and cilantro or ground coriander and bring to a boil, then cover and simmer gently, stirring occasionally until chicken is cooked through, about 30 minutes. -Pulse cashews in a food processor or electric coffee/spice grinder until very finely ground, then add to curry along with coconut milk and simmer gently, uncovered, stirring until sauce is thickened for about 5 minutes. -Serve hot with basmati or jasmine rice.
- 3. **You can make the recipe without the chicken, just as a curry sauce or as a dip for naan or puri bread, amazing!
QUICK BARLEY PILAF
This is a dish I just threw together. It is quick and easy. Kind of a middle-eastern taste and quite healthy!

- Heat oil in saucepan over low-medium heat. Saute onion in oil.
- Add raisins, coconut and nuts. Let coconut and nuts toast a bit.
- Stir in Chicken broth and salt. Bring to a boil.
- Add barley and cook 10-12 minutes or until it has absorbed almost all of the liquid.
- Serve.

COCONUT BASMATI PILAF
Adapted from a recipe by the Indian chef, cooking teacher and cookbook author Julie Sahni, this pilaf is an excellent accompaniment to a vindaloo or other Indian main dish. In addition to the coconut milk, it's flavored with cardamom and ginger.

- Rinse the rice in a strainer under cold water until water runs clear. Drain well and transfer to a large saucepan with 1 1/2 cups cold water, cardamom, ginger, cilantro, salt and coconut milk. Let soak for 30 minutes or up to 2 hours.
- Place the saucepan over medium-high heat and bring to a boil. Stir a few times to keep rice grains from clumping. Cook uncovered, rapidly boiling, until most of the liquid is absorbed and the surface is covered with steamy holes, about 6 minutes. Reduce heat as low as possible and cook, covered, for 5 minutes. Remove and discard the cilantro sprig, cardamom and ginger.
